An adorable mini version of a Jasper Hill original, this cheese gets its name from Anne Harbison, affectionately known as the grandmother of Greensboro as she’s active in the community, running a bed and breakfast and working in the public library. Although tiny, Harbison’s thick, but spoonable paste balances rich, sweet-cream flavors with vegetal complexity. Each wheel is cinched with spruce cambium—the interior bark layer—harvested from Jasper Hill’s woodlot, providing structure for its gooey texture, while also adding a woodsy nuance to the ripening cheese.

When a bit younger, the bark can be peeled away for sliced portioning. If the bark has fused with a more loosened paste, then its best to leave the bark intact and spoon out portions from the top. Serve with a fruit mostarda and crusty bread. (please don’t eat the bark)

Another adorable mini that should NOT be slept on. The Moses Sleeper Mini is inspired by a classic French Brie. It’s approachable and nuanced; beneath its thin bloomy rind lies a gooey, milky core showcasing a complex array of flavors at peak ripeness: cauliflower, crème fraîche, and toasted nuts. A bright, clean finish with a hint of button mushroom aroma follows the rich flavors of the paste.

Perfect for a festive cheese board or for baking en croute as an elegant dessert. At room temperature, this cheese is pliable and decadent without being runny. Pair with country pâte, pickled carrots, and a crusty baguette to bring together a rustic and satisfying ploughman’s platter.
