THE B.NEKTAR STORY:
B. Nektar Meadery was founded in 2006 by Brad and Kerri Dahlhofer. Brad has been an avid homebrewer since 1998, making beers, meads, ciders, and wine for his own enjoyment. When Brad and Kerri got married in 2005, he made a mead to toast with at their wedding and received great reviews from the guests. Jokingly, he said that he’d someday open a meadery. They soon began making meads in their basement and those meads quickly began winning awards at homebrewing competitions.
In the summer of 2006, Kerri was laid-off from her job. While sipping a glass of vanilla cinnamon mead made by Brad, she thought, “Why not try to sell this?” It was then that they decided to take their mead making to the next level. In the spring of 2008, Brad too fell victim to layoffs, and the they worked night and day to prepare for their opening. After nearly two years since its inception, B. Nektar finally opened its doors on August 2, 2008 (National Mead Day).

B. Nektar’s session meads and hard ciders are now shaping the craft revolution.  To say it’s been a long road from the home-brewing days would be a tremendous understatement, but B. A healthy dose of English Kent Goldings hops provide a counterpoint to this ale’s rich and complex maltiness.

Oats thicken the mouthfeel, and a handful of specialty malts add complex chocolate, toffee, and caramel notes. The hops are mostly traditional, earthy British hops, but they cocked it up a bit with some Cascade late in the boil, “just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.” – Against the Grain team.

Competitions often yielded wins in the more esoteric categories and his intricate use of herbs, spices, wild yeasts, and anything else he could get his hands on often came to judges with both intrigue and enjoyment. In 2010, after about 5 years of backyard brewing, Brian has taken Stillwater Artisanal Ales to the public. After graduating Iowa State, Lucas and Brenna moved to Oconomowoc, Wisconsin where Lucas attended Barley to Barrel – a program specifically catered to aspiring brewery owners. Lucas says his biggest takeaway was that he needed a partner. Shortly there after, the couple moved to Independence, Iowa where Lucas teamed up with Brandon Miken and Pete Gaumer to create Allerton Brewing Company. In the late 18th and early 19th centuries there was a considerable trade in beer to India. Highly hopped pale beers brewed to withstand the trip became known as “IPA,” India Pale Ale.

Green chili and lime pickle, mulligatawny soup, pork with vinegar and garlic, chicken with a roasted coconut sauce, fish on a bed of potatoes, onions and tomato masala, prawns curry and duck risotto. Serve in nonik pint glasses.

History:
Throughout history, beer of somewhat higher alcohol and richness has been enjoyed for the winter holidays, when old friends get together to enjoy the season. Wassail is a festival to celebrate winter and the beer that goes with it. Winter Welcome is vintage-dated with a special label each year, and was first shipped to the US in 1990 – it was the first imported winter seasonal beer.

Serving Suggestion:
Roast goose, smoked turkey with oyster dressing, rack of lamb, candied yams, Smithfield hams, fresh pears and apples, or Christmas cake. Serve in crystal tumblers, or traditional Yorkshire tulip or nonik pint glasses.

History:
Innovators in Certified Organic beers, Samuel Smith began to ship the first organic beers to the US in the mid-1990s. Organic cider and organic fruit beers followed starting in 2007, and after many months of test brews & intensive tasting Organic Chocolate Stout was released in September, 2012. UK Soil Association and USDA Certified Organic.

A note about the label: the term “Theobroma cacao” that appears on the label is the scientific name for the cacao tree, and the illustration is of the pod from this tree, source of chocolate.

Serving Suggestion:
Great with a bowl of mixed nuts, with sharp cheeses, or with a classic molé sauce entrée. For dessert, try with complementary white, milk or dark chocolate, hazelnut biscotti, or chocolate mousse. Contrast with citrus crème, caramel or vanilla ice cream. A glass of Organic Chocolate Stout is a treat with an addition of 10% Lindeman’s Framboise lambic. Serve at 50°F.


ABOUT SAMUEL SMITH’S BREWERY:
Yorkshire’s oldest brewery, established in 1758, Samuel Smith’s brews a wide range of high quality beer, solely from authentic natural ingredients. The brewery still uses ‘stone Yorkshire squares’ made of solid blocks of slate, to ferment all its ales and stouts and the same yeast strain since the 1800s. They also use oak casks for all their naturally conditioned ales. Innovators in Certified Organic beers, Samuel Smith’s began to ship the first organic beers to the United States in the mid-1990s. Red and slightly cloudy in color. This deliciously fruity lambic highlights notes of freshly picked cherries. Its sharp and full-bodied flavor gives way to a perfect balance between sweet and sour. Like other Lindemans beers, this filtered kriek is made from a lambic base. The difference, however, lies in the maceration of 25% juice of fresh sour cherries before the beer is filtered and pasteurized.

“We’ve already told you that our family never does anything the way other people do. Lindemans Kriek is a good example of that. In order to obtain a beer like no other, we have been adding whole sour cherries to our lambic for generations. Our meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced us to export our old kriek to the United States by boat. What we had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. It was like something out of The Adventures of Tintin. To prevent that from happening, we therefore developed an alternative production method for our kriek. We use fresh, not from concentrate, unsweetened cherry juice which we blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch. So the corks don’t pop. Due to the use of juice and pasteurisation, this kriek is sweeter and fruitier than Oude Kriek Cuvée René, which undergoes a second fermentation process in the bottle. Thanks to its innovative flavour, it was a resounding success both here in Belgium as well as around the world. Nowadays, it is undoubtedly the reference kriek for consumers.” – Rene Lindemans

This apple lambic is the youngest of their range of lambic beers. A mixture of several selected varieties of apples, this young lambic is a fruit beer with a nice balance between the sweetness of red apples, the freshness of green apples and the sour-sweet character of lambic. The first taste is sharp and full-bodied, but then the sweet cider notes give way to a balance between a slightly sweet-sour taste..

An exceptional quadruple amber. The particular rich and complex taste palette and the full head are also found in the Gulden Graak 9000 Quadruple. The sweet notes of caramel are, however, reserved for the Gulden Draak Classic.

The brewery’s new recipe, based on 4 different mat varieties, gives the Gulden Draak 9000 Quadruple a deep golden-amber color and a slightly fruity aroma. Together with the soft and slightly sweet taste, this provides a beautifully rounded bouquet with notes of dried fruit.

This beer is a high fermentation beer with secondary fermentation. For the secondary fermentation use is made of a wine yeast that not only contributes to the unparalleled taste, but also ensures a long-term shelf life with taste evolution.

The legend of the Gulden Draak (gilded dragon) is centuries old.  The odyssey of this mystic beast begins in northern Scandinavia on the prow of a Viking ship, and after a long and winding journey, ends at the top of the Ghent Belfry. After graduating Iowa State, Lucas and Brenna moved to Oconomowoc, Wisconsin where Lucas attended Barley to Barrel – a program specifically catered to aspiring brewery owners. Lucas says his biggest takeaway was that he needed a partner. Shortly there after, the couple moved to Independence, Iowa where Lucas teamed up with Brandon Miken and Pete Gaumer to create Allerton Brewing Company.
