THE B.NEKTAR STORY:
B. Nektar Meadery was founded in 2006 by Brad and Kerri Dahlhofer. Brad has been an avid homebrewer since 1998, making beers, meads, ciders, and wine for his own enjoyment. When Brad and Kerri got married in 2005, he made a mead to toast with at their wedding and received great reviews from the guests. Jokingly, he said that he’d someday open a meadery. They soon began making meads in their basement and those meads quickly began winning awards at homebrewing competitions.
In the summer of 2006, Kerri was laid-off from her job. While sipping a glass of vanilla cinnamon mead made by Brad, she thought, “Why not try to sell this?” It was then that they decided to take their mead making to the next level. In the spring of 2008, Brad too fell victim to layoffs, and the they worked night and day to prepare for their opening. After nearly two years since its inception, B. Nektar finally opened its doors on August 2, 2008 (National Mead Day).

B. Nektar’s session meads and hard ciders are now shaping the craft revolution.  To say it’s been a long road from the home-brewing days would be a tremendous understatement, but B. Serving Recommendation: Serve at 39.2ºF-50ºF in a room temperature glass. When pouring your beer, tilt your glass to a 45º angle and pour in 2/3 of the beer. With the glass upright, pour in the rest to get a wonderfully thick and creamy head. Enjoy!
Food Pairings: Tomatoes, red peppers, red cabbage, cauliflower, fennel, oysters, duck breast, stewed game dishes, almonds, raspberries, cherries and strawberries

ABOUT BRASSERIE D’ACHOUFEE BREWERY:
Initially considered a hobby, the Achouffe Brewery developed when brother-in-laws decided to purchase the farm in which they had been brewing for 4 years. As the brewery grew, so did its family of gnomes, each representing one of the beers in the range, and each having their own story and characteristics. Try pairing your Cherry CHOUFFE with a Chouffe-Style Cauliflower!

CHOUFFE-STYLE CAULIFLOWER:
Preparation Time: 30 minutes
Serves 4

Ingredients:

  • ½ cup water
  • ½ cup flour
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 pinch chili powder
  • 2 tablespoons butter (or margarine)
  • 1 drop of chili sauce
  • 1 cauliflower
  • salt
  • 4 tablespoons ketchup
  • 2 tablespoons chili sauce
  • 1 tablespoon honey
  • black sesame seeds
  • 2 tablespoons sour cream
  • 2 oz. of gorgonzola
  • 2 tablespoons mayonnaise
  • 1 tablespoon finely chopped tarragon

Directions:

  1. Preheat the oven to 425ºF degrees.
  2. Combine the water, flour, paprika, cumin, cilantro and chili into a smooth paste.
  3. Melt the butter with the drop of chili sauce and a little salt. Add to the paste.
  4. Cut the cauliflower into florets. Dip them into paste and place them on a sheet of baking paper on a baking tray.
  5. Roast the cauliflower in the oven for 10 minutes.
  6. Meanwhile, mix the ketchup, the honey, and the hot sauce. Brush the florets with the spicy sauce and return them to the oven for 3 more minutes.
  7. Mix the mayonnaise with the sour cream, the tarragon, and the gorgonzola.
  8. Before serving, top the cauliflower with the cheese sauce.
  9. Finish by sprinkling the whole thing with sesame seeds.

After graduating Iowa State, Lucas and Brenna moved to Oconomowoc, Wisconsin where Lucas attended Barley to Barrel – a program specifically catered to aspiring brewery owners. Lucas says his biggest takeaway was that he needed a partner. Shortly there after, the couple moved to Independence, Iowa where Lucas teamed up with Brandon Miken and Pete Gaumer to create Allerton Brewing Company. “We’ve done a lot of sour beer here at Dugges. We’ve done some many taste variants with fruit and spices that we’ve lost count. And, we’ve played around with malt bills, yeasts, levels of alcohol and acidity to the point that we almost though we’d tried everything.
One thing we hadn’t done though, weirdly enough, was to focus on one single fruit; to methodically go through fruit by fruit to see how they work and would taste in a sour beer. This is a big and bold Imperial Stout. Dugges Brewery has made this Stout bolder than most by brewing it with licorice, then aging it in bourbon barrels.

“Idjit is one of those beers that we’ve done forever. A beer that started out as a horrible experiment. Then became our staple 9.5% ABV Imperial Stout. After a while we remade it up to 12% ABV, renaming it Big Idjit, jokingly calling it a ’Scandinavian Session Stout’. Big idjit is the perfect beer for barrel aging and refining. In fact, several barrel aged versions have carried the name Perfect Idjit. This version is taking it a step further, refining the beer after barrel aging. In this case by adding just the right amount of licorice to the beautiful bourbon barrel aged beer. What’s more perfect than perfect? Perfecter (it’s a word) Idjit. Good night!” – Dugges Bryggeri

ABOUT THE BREWERY:
In 2002 Mikael Dugge Engström, the founder, CEO and Brew Master of Dugges Bryggeri, had a meeting with an Englishman. What was said in that meeting has since been forgotten, but was said to be the reason Dugges Bryggeri is around today. The Englishman sold filters for brewing beer, as well as second hand breweries – this got Mikael to thinking about how awesome it would be to own his own brewery. After years of research, visits to other breweries, making friends and asking all the right questions, Mikael starting buying parts needed to build is own small brewery. In 2005, he opened the doors to Dugges in Mölndal. Learn more about his story here.
