A rich, dark elixir with cascading layers of malt complexity balanced by elegant hops. There are notes of toffee, caramel, graceful dark-malty roasts, and the essence of barley. Lager fermentation leads to clean flavors and pinpoint conditioning. Semi-dry finish.

ABV: 6.7% alcohol / volume
Style: Doppelbock Lager
OG: 1.074

Serving Suggestion: Serve in a stemmed tumbler at 50ºF. Pair with pastries and desserts, cured ham, smoked duck, wild turkey, filet with Dijon sauce, chanterelles, Tournedos Rossini, Châteubriand.

HISTORY:
Doppelbocks (“double bocks”) were probably first brewed in the 17th century by monks in Bavaria – a stronger version of bock beers that originated in Einbeck, Germany. Doppelbocks are usually rich, malty lagers; usually dark-colored; the names often end with the suffix “-ator.” Ayinger Celebrator has probably changed little from the doppelbock first brewed at Ayinger in 1878; Ayinger’s doppelbock was once called “Fortunator” but this global classic is called “Celebrator” around the world now. – Ayinger Brewery

This beer has a classic Bavarian weissebeer aroma with notes of spice and cloves. It has a smooth body from the wheat that is extravagant, with pinpoint conditioning. The flavor offers the essence of the wheat harvest, and fresh-baked bread. The finish has hints of tropical fruit, cloves and banana.

Style: Wheat Bock
OG: 1.067

Beer Style at WineStyles: Fruity & Spicy
Rating: 97 points on Rate Beer
Serving Suggestion: Serve in the classic Ayinger 17-ounce “weizen swirl” glass, or an oversized wine glass. Pair with hearty German cuisine such as smoked pork chops, sauerkraut and sausages, and full-flavored game or duck. Additionally, this Weizenbock can pair beautifully with spicy Mexican or Indian cuisine, or something sweet such as an apple strudel for dessert.

HISTORY:
The weizen-bock style is relatively uncommon, even in Bavaria: they are wheat ales (weissebeer or weizen beer) that are brewed to be as strong as a bock – with corresponding fuller body, and enhanced flavors. They can be pale (“helles”) or dark (“dunkles”), but Ayinger Weizenbock is pale in color. – Ayinger Brewery

Made in collaboration with Pulpit Rock (IA), this stout is inspired by their love of rum cocktails. Infused with tons of coconut and the brewery’s take on Orgeat syrup (a classic cocktail ingredient with almonds and citrus), there is a subtle tropical twist in this gigantic winter stout. There are flavors of coconut, rum drinks, pithy orange, and nutty dark malts that are sweet, thick and intense.

Double Dry-Hopped Hazy IPA
Minneapolis, Minnesota

Brewed in collaboration with San Diego’s Modern Times Beer, Spirit Foul is Fair State’s first ever hazy IPA. Super juicy, tropical, dank, and low bitterness, the breweries use the freshest Strata, Citra and Mosaic hops for its passion fruit aroma. The beer’s soft and signature haze is created using pilsner malt, pale wheat, flaked oats and flaked barley.

ABOUT FAIR STATE BREWING COOPERATIVE:
Fair State Brewing Cooperative started on the rugby pitch, where founders Evan Sallee, Niko Tonks, and Matt Hauck first met while playing for rival teams. Later, they formed a friendship and took their love of home-brewing to a greater goal of founding a brewery. The friends believed there was too large of a gap between home-brewer and owning a brewery, and thus decided to build a co-op model to allow consumers to be more involved in operations. This hazy Double IPA is brewed with Citra, Mosaic and El Dorado hops. It is then Double dry hopped with Extra Extra Nelson Sauvin.

ABOUT WELDWERKS BREWING CO.:
Like many other great businesses do, WeldWerks started as a hobby in a garage. In 2009, Co-founder and head brewer, Neil Fisher, began home-brewing with his friends. Once a month, everyone would get together to brew, learn and enjoy each other’s company. By 2014, Neil had entered into the Big Beers, Belgians and Barleywines festival; prior to this competition, friend, and no-CEO and co-founder, Colin Jones, made an agreement with Neil, promising to consider opening a brewery if Neil were to bring back a medal. 11 months and two medals later, the first beers were poured at WeldWerks Brewing. Today, all of WeldWerks beers are produced in their downtown Greeley location on their 15 bbl 3-vessel steam brewhouse. ABOUT THE BREWERY:

Stillwater Sparkling is a subsidiary of Stillwater Artisanal. Stillwater Artisanal is the nomadic ‘gypsy’ brewing venture headed by Baltimore native, Brian “Stillwater” Strumke. A former internationally renowned techno DJ and producer who rather quickly made his mark in the home-brewing community for his often odd concoctions and unconventional brewing methods. Competitions often yielded wins in the more esoteric categories and his intricate use of herbs, spices, wild yeasts, and anything else he could get his hands on often came to judges with both intrigue and enjoyment. In 2010, after about 5 years of backyard brewing, Brian has taken Stillwater Artisanal Ales to the public. Traveling the world to collaborate with various breweries hand-crafting small-batch, authentic ales.
