Made in collaboration with Barrel Theory Brewing, who are well-known for making hazy IPAs, Mister Falcon is DDH Hazy IPA with Strata, Citra and Simcoe Cryo hops. A nice balance of fruity and dank, sweet but not overbearing, low bitterness.

Fair State Brewing Cooperative started on the rugby pitch, where founders Evan Sallee, Niko Tonks, and Matt Hauck first met while playing for rival teams. Later, they formed a friendship and took their love of home-brewing to a greater goal of founding a brewery. The friends believed there was too large of a gap between home-brewer and owning a brewery, and thus decided to build a co-op model to allow consumers to be more involved in operations. Power Hour is a Hazy Double IPA brewed in collaboration with Southern Wells Brewing Co. Ölōgy wanted to work with a new experimental curo hop blend along with “M” blend, named for its mango and tropical aroma and palate. Ölōgy blended this with Citra and a small amount of Sabro to give this IPA a huge flavor of tropical fruits and citrus.

Made in collaboration with Pulpit Rock (IA), this stout is inspired by their love of rum cocktails. Infused with tons of coconut and the brewery’s take on Orgeat syrup (a classic cocktail ingredient with almonds and citrus), there is a subtle tropical twist in this gigantic winter stout. There are flavors of coconut, rum drinks, pithy orange, and nutty dark malts that are sweet, thick and intense.

Brewed in collaboration with San Diego’s Modern Times Beer, Spirit Foul is Fair State’s first ever hazy IPA. Super juicy, tropical, dank, and low bitterness, the breweries use the freshest Strata, Citra and Mosaic hops for its passion fruit aroma. The beer’s soft and signature haze is created using pilsner malt, pale wheat, flaked oats and flaked barley.

ABOUT WELDWERKS BREWING CO.:
Like many other great businesses do, WeldWerks started as a hobby in a garage. In 2009, Co-founder and head brewer, Neil Fisher, began home-brewing with his friends. Once a month, everyone would get together to brew, learn and enjoy each other’s company. By 2014, Neil had entered into the Big Beers, Belgians and Barleywines festival; prior to this competition, friend, and no-CEO and co-founder, Colin Jones, made an agreement with Neil, promising to consider opening a brewery if Neil were to bring back a medal. 11 months and two medals later, the first beers were poured at WeldWerks Brewing. Today, all of WeldWerks beers are produced in their downtown Greeley location on their 15 bbl 3-vessel steam brewhouse. This is an American Wild Ale with Boysenberries. Violet light pour, with light white lacing around the rim. Very light aroma. Slightly tart with a dry finish. The juicy berries are nicely balanced, but not too sweet. Lightly carbonated mouthfeel with a clean crisp finish.

This Imperial Stout pours dark brown, almost black in color. The nose and taste are similar – malty, with flavors of sweet blackberries and smooth, dark chocolate. Showcasing a rich and full bodied mouthfeel.

ABOUT THE BREWERY:

UNE ANNÉE

An Independent Craft Brewery, born in 2013 near west side of Chicago, with the quest of making fine Belgian inspired ales for all beer lovers.

Founded by architect, former Marine, and Chicago native, Jerry Nelson, the brewery has since become a family operation when Jerry’s brother, Dave joined in. The name was inspired by Jerry’s architecture abroad program in Versailles, France. Une Année, meaning “One Year” in French, began with a seasonal rotation of annual Belgian beers, which have since become weekly and bi-weekly releases. 

Une Année has expanded its offerings over the years with an emphasis on fruited and unfruited American Wild Ales (read: Sour Beers) and Barrel Aged Stouts. In 2017, the brewery moved to neighboring Chicago suburb, Niles, IL, and expanded to include a taproom. The new brewery allows everyone to get home more frequently for quality time with the kids.

HUBBARD’S CAVE

In 2015, Hubbard’s Cave was developed as an alternative to Une Année’s Belgian Style Ales. Producing American Style ales, primarily imperial stouts and Hubbard’s Cave signature Fresh IIPAs, Hubbard’s Cave is a refreshing addition to the Une Année Family. Named after the Chicago Hubbard Street traffic tunnel on Interstate 90/94, next to where the brewery was born, Hubbard’s Cave has quickly grown to produce some of their most popular offerings.

Dr-Bill-Bio-BubbleBill Sysak, or as he’s more often referred to, “Dr. Bill,” is the Craft Beer Ambassador for Stone Brewing Co. “Dr.” Bill is a Certified Cicerone® and has proven expertise in selecting, acquiring and serving craft beers. He received his nickname through his work as a medic in the military Army National Guard, and the moniker has stuck with him throughout his career in the craft beer industry. At Stone, he’s responsible for setting the beverage standard and ensuring the beverage philosophy is followed at all Stone Brewing Co. venues. “Dr.” Bill is widely considered one of the foremost experts in 24carrotgolden_Bottle_Thumbthe field of pairing beer with food. He suggests the beer, wine and food pairings for the menus at our restaurants, and also coordinates and hosts many Stone Brewing World Bistro & Gardens events including: Beer & Cigar Dinners, Master Pairing events, Sour Fest, Oakquinox, Stone Pour it Black, and Rare Beer Breakfast. Sysak has been featured in such publications as New York Times, Draft magazine, Imbibe, Los Angeles Times, and Food & Wine.

He is on the San Diego State University “Business of Craft Beer” Advisory Board and is the instructor for the “Exploring Craft Beer” course.
