Arrosticini (skewers)
INGREDIENTS:
- 1.5 lbs. diced lamb
- 3 tbsp. olive oil
- 4 rosemary sprigs
- sea salt
- freshly ground black pepper
DIRECTIONS:

Combine the lamb, oil and seasoning and rosemary in a bowl, turning over with your hands. Leave to marinate for 1 hour.
- Thread the lamb onto skewers (if using wood skewers soak them in water first, 10-30 minutes, so not to catch fire), and grill on the barbecue for about 5–10 mins until cooked and browned.
