Beurre de Baratte
Normandy,
France

Beurre de Baratte is made exclusively from the best milk from Normandy, which is distinguished by its exceptional richness in fat, protein and vitamins. Exhaling sweet notes of hazelnut and milk, Isigny’s butter comes from an old-fashioned and traditional churning process. It is the slow maturation that allows the cream to develop.

WINE & CRAFT BEER PAIRINGS:
A crisp, minerally white wine like a Chablis or Muscadet works beautifully. Their acidity cuts through the butter’s richness without overwhelming its delicate flavor. Champagne or other quality dry sparkling wines are also excellent—with their fine bubbles and bright acidity, they provide a clean contrast and enhance the buttery texture. For beer, a light, effervescent beer such as a Belgian Saison or a Pilsner balances the butter’s richness with gentle spice, dryness, and carbonation.

About the Cooperative:
The Isigny Sainte-Mère Cooperative traces its origins to the establishment of a dairy in Chef-du-Pont near Sainte-Mère-Église, where by 1910 it was receiving 11,000 litres of milk from 90 farms. Just a year later, production had grown to 6 million litres with 200 members contributing. In 1932, 42 milk producers around Isigny-sur-Mer united to market Isigny butter, cream, and Normandy cheeses, forming the Isigny-sur-Mer Dairy Cooperative. The idea of merging the Isigny-sur-Mer and Sainte-Mère-Église cooperatives emerged in 1979 and was realized in 1980, creating the Isigny Sainte-Mère Cooperative. This united organization expanded its collection areas and built on a shared commitment to producing high-quality dairy products. Over time, it has adapted to challenges while preserving its cooperative model and values of dedication, quality, and collective purpose, maintaining its focus on transforming exceptional raw materials into renowned products that showcase the region’s unique terroir to customers around the world. Feta Voras
Florina, Greece

Feta Voras is made in the far Northwestern corner of Greece, in the province of Florina. This is mountainous land, covered in wildflowers and herbs. It’s about as far away from the island of Lesbos and M. Tastanis’s feta as you can get and still be in Greece, but the cheese is still proper feta, recognized with the PDO protected status for traditional feta. The small third generation firm, run by brothers Andreas and Sokratis, makes a creamy, crumbly cheese that you’ll want as a staple in your home. Essex St. Cheese is the exclusive importer.

WINE & CRAFT BEER PAIRINGS:
Reach for a Sauvignon Blanc (especially from Loire or New Zealand) as their crisp acidity and minerality will cut through the feta’s saltiness while highlighting its tangy, fresh flavor. For beer, a Belgian-style wheat beer (Witbier) will work well. Its soft, citrus, light spice and subtle yeastiness with complement the feta without overwhelming it.

About Essex Cheese:
Essex Street Cheese, founded in New York City in 2006, imports a small selection of iconic European cheeses. From the beginning, the company has focused on working directly with cheesemakers and agers to choose consistently flavorful wheels, starting with Comté from Fort St. Antoine at the Essex Street Market on Delancey Street. Today, it maintains that same focused approach, bringing in only a few classic cheeses and shipping them from the source to New York with minimal time spent in warehouses. Learn more here.

The rich texture and buttery flavor that make Toma a true American original provides a perfect base for a line of cheeses that are as unique as they are delicious. This pasteurized, cow’s milk cheese has a full, savory, Mediterranean flavor. Herbs de Provence – a blend that includes rosemary, basil, marjoram, savory and wild thyme – have been added to complement the creamy butter notes of Toma (thus the name, Toma Provence). Great as a snacking cheese, or pair with olives, a fresh baguette and an abundant charcuterie board and a buttery Chardonnay. Learn more about the history of the Giacomini family dairy farm and the new generation of sister cheesemakers at Point Reyes Farmstead Cheese.  Be sure to check out Jane Pauly’s feature segment below, that aired on NBC’s Today show in July 2013. Sainte Mere Abbaye_Cheese Image copyIsigny Ste-Mère Abbaye Ste-Mère St- Paulin Normandy, France

This pasteurized cow’s milk cheese is a member of the Port-du-Salut family. Originally made by the Trappist monks of Saint-Paulin, it can be recognized by its fine, moist rind, its yielding texture and its slightly salty taste. With its semi-soft texture, this French cheese has a smooth, fruity taste with a slightly stronger finish. Its natural mildness gives way to both taste and character.   WINE & CRAFT BEER PAIRINGS: Enjoy this cheese with a Chenin Blanc or a Beaujolais. For beer, this cheese will pair beautifully with a Hefeweizen, Amber Ale, Belgium Ale (any Trappist Ale), or a Normandy Cider. Day 6 on the Seine began with another informative wine education presentation by Barry Wiss. We learned of the humble beginnings of the Trinchero family in Napa and its continued dedication to responsible agribusiness, producing wine using biodynamic practices to conserve energy, recycle, and re-purpose by-products. Barry also explained how to read French wine labels, from discerning AOC from AOP to which varietals are affiliated with Bordeaux and Bourgogne. Finally, we played “What’s Your Wine?”, and learned that the true parent grape of Zinfandel is not Primitivo from Italy but Crijenak Kastelanski from Croatia! Afterwards, Chef treated us to a Normandy Lunch, celebrating the various dairy, apple, and seafood products indigenous to the region. All week we have witnessed our Hotel Manager Markus return from the villages with a smile on his face and his arms full of fresh produce, shellfish, and baked goods! Bon Appetit!!

Our afternoon excursion took us to the cobblestone streets of Les Andelys, made up of Grand Andely and Petit Andely. In Grand Andely, we toured another Cathedral of Notre Dame, this one built for the queen in the 14th century. The stained glass in this cathedral is nothing short of spectacular! Les Andelys is a picturesque mosaic of early Norman architecture, idyllic natural scenery, and the sensory delights of a cozy French village.

High above the village lie the ancient ruins of Chateau Gaillard, a castle built by Richard the Lionheart in 1198 to protect Rouen and the rest of Normandy from King Phillip II and the French. Hewn from the chalk white limestone cliffs that adorn the river valley, Chateau Gaillard was the strongest fortress of its age. After Richard’s death, Phillip finally laid siege to the castle and captured it in 1204. It became a French historical monument in 1862.
