The taste is very tart, similar to a sour beer. On the palate, lime is the predominant flavor, complemented by notes of orange sherbet and grape. There are subtle oak undertones with a touch of yeast and a hint of salt that appear on the finish. The mouthfeel is exceptionally smooth, slightly acidic, and dry on the finish. Overall, this is a delicious beer with a balanced tartness and sweetness that ebb and flow beautifully.

ABOUT THE BREWERIES:

Une Année:
Une Année is an independent craft brewery, born in 2013 near the west side of Chicago, with the quest of making fine Belgian inspired ales for all beer lovers.

Founded by architect, former Marine, and Chicago native, Jerry Nelson, the brewery has since become a family operation when Jerry’s brother, Dave joined in. The name was inspired by Jerry’s architecture abroad program in Versailles, France. Une Année, meaning “One Year” in French, began with a seasonal rotation of annual Belgian beers, which have since become weekly and bi-weekly releases. 

Une Année has expanded its offerings over the years with an emphasis on fruited and unfruited American Wild Ales (read: Sour Beers) and Barrel Aged Stouts. In 2017, the brewery moved to a neighboring Chicago suburb, Niles, IL, and expanded to include a taproom. The new brewery allows everyone to get home more frequently for quality time with the kids. Hubbard’s Cave:
In 2015, Hubbard’s Cave was developed as an alternative to Une Année’s Belgian style ales. Producing American style ales, primarily imperial stouts and Hubbard’s Cave signature Fresh IPAs, Hubbard’s Cave is a refreshing addition to the Une Année family. Named after the Chicago Hubbard Street traffic tunnel on Interstate 90/94, next to where the brewery was born, Hubbard’s Cave has quickly grown to produce some of their most popular offerings. THE B.NEKTAR STORY:
B. Nektar Meadery was founded in 2006 by Brad and Kerri Dahlhofer. Brad has been an avid homebrewer since 1998, making beers, meads, ciders, and wine for his own enjoyment. When Brad and Kerri got married in 2005, he made a mead to toast with at their wedding and received great reviews from the guests. Jokingly, he said that he’d someday open a meadery. They soon began making meads in their basement and those meads quickly began winning awards at homebrewing competitions.
In the summer of 2006, Kerri was laid-off from her job. While sipping a glass of vanilla cinnamon mead made by Brad, she thought, “Why not try to sell this?” It was then that they decided to take their mead making to the next level. In the spring of 2008, Brad too fell victim to layoffs, and the they worked night and day to prepare for their opening. After nearly two years since its inception, B. Nektar finally opened its doors on August 2, 2008 (National Mead Day).

B. Nektar’s session meads and hard ciders are now shaping the craft revolution.  To say it’s been a long road from the home-brewing days would be a tremendous understatement, but B. Oats thicken the mouthfeel, and a handful of specialty malts add complex chocolate, toffee, and caramel notes. The hops are mostly traditional, earthy British hops, but they cocked it up a bit with some Cascade late in the boil, “just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.” – Against the Grain team.

Stillwater Artisanal is the nomadic ‘gypsy’ brewing venture headed by Baltimore native, Brian “Stillwater” Strumke. A former internationally renowned techno DJ and producer who rather quickly made his mark in the home-brewing community for his often odd concoctions and unconventional brewing methods. Competitions often yielded wins in the more esoteric categories and his intricate use of herbs, spices, wild yeasts, and anything else he could get his hands on often came to judges with both intrigue and enjoyment. In 2010, after about 5 years of backyard brewing, Brian has taken Stillwater Artisanal Ales to the public. After graduating Iowa State, Lucas and Brenna moved to Oconomowoc, Wisconsin where Lucas attended Barley to Barrel – a program specifically catered to aspiring brewery owners. Lucas says his biggest takeaway was that he needed a partner. Shortly there after, the couple moved to Independence, Iowa where Lucas teamed up with Brandon Miken and Pete Gaumer to create Allerton Brewing Company. ABOUT RIDGEWAY BREWING:
Located in South Oxfordshire, Ridgeway Brewing was founded in 2002 by Peter Scholey, former head brewer at Brakspear and his wife, Vanda. The brewery takes its name from the ancient, long-distance footpath and trade route that passes just a few hundred yards from their front door in South Stoke. With their beers, they hope to create lasting experiences with “cutting edge tradition” – a match between heritage and modern tastes and technologies. The Clown Shoes team takes their Undead Party Crasher American Imperial Stout and ages it in bourbon barrels (that are aged in premium maple syrup) to create Snow on the Maple Tree. This beer has a strong and sweet taste of maple that flows throughout, with dark malts providing a rich and full-bodied flavor.

ABV: 11% alcohol / volume
IBU: 45

A restrained maltiness and an emphasis on the aroma and flavor of hops from England’s finest farms: floral, herbal hops show in the aroma and finish, but bitterness is balanced, refined and elegant.

History:
In the late 18th and early 19th centuries there was a considerable trade in beer to India. Leaving the India docks in London, ships would sail around the Cape of Good Hope through the Indian Ocean to Bombay and beyond, a three-to four-month trip. Highly hopped pale beers brewed to withstand the trip became known as “IPA,” India Pale Ale.

Serving Suggestion:
Green chili and lime pickle, mulligatawny soup, pork with vinegar and garlic, chicken with a roasted coconut sauce, fish on a bed of potatoes, onions and tomato masala, prawns curry and duck risotto. Serve in nonik pint glasses.

Honey-amber colored, creamy head of small bubbles, floral aroma and delicious caramel malt flavor with great finesse. Fine hop aroma finish and a fruity note from fermentation in open-topped stone “Yorkshire Squares”.

History:
Throughout history, beer of somewhat higher alcohol and richness has been enjoyed for the winter holidays, when old friends get together to enjoy the season. Wassail is a festival to celebrate winter and the beer that goes with it. Winter Welcome is vintage-dated with a special label each year, and was first shipped to the US in 1990 – it was the first imported winter seasonal beer.

Serving Suggestion:
Roast goose, smoked turkey with oyster dressing, rack of lamb, candied yams, Smithfield hams, fresh pears and apples, or Christmas cake. Serve in crystal tumblers, or traditional Yorkshire tulip or nonik pint glasses.

History:
Innovators in Certified Organic beers, Samuel Smith began to ship the first organic beers to the US in the mid-1990s. Organic cider and organic fruit beers followed starting in 2007, and after many months of test brews & intensive tasting Organic Chocolate Stout was released in September, 2012. UK Soil Association and USDA Certified Organic.

A note about the label: the term “Theobroma cacao” that appears on the label is the scientific name for the cacao tree, and the illustration is of the pod from this tree, source of chocolate.

Serving Suggestion:
Great with a bowl of mixed nuts, with sharp cheeses, or with a classic molé sauce entrée. For dessert, try with complementary white, milk or dark chocolate, hazelnut biscotti, or chocolate mousse. Contrast with citrus crème, caramel or vanilla ice cream. A glass of Organic Chocolate Stout is a treat with an addition of 10% Lindeman’s Framboise lambic. Serve at 50°F.

Yorkshire’s oldest brewery, established in 1758, Samuel Smith’s brews a wide range of high quality beer, solely from authentic natural ingredients. The brewery still uses ‘stone Yorkshire squares’ made of solid blocks of slate, to ferment all its ales and stouts and the same yeast strain since the 1800s. They also use oak casks for all their naturally conditioned ales. Innovators in Certified Organic beers, Samuel Smith’s began to ship the first organic beers to the United States in the mid-1990s.
