Pecorino Toscano is an origin-protected cheese that is made from the milk of sheep that graze a diverse terrain, allowing them to produce a thick, rich milk. Though not as salty and sharp as Pecorino Romano, it is aged to the point at which its creamy flavor and smooth consistency give way to a sharper, more complex mix of flavor and a denser texture (aged minimum of 6 months). Delicious with a variety of Tuscan recipes, especially when grated on most pasta dishes and risottos.  Also delicious to grate a few shavings on soups and fresh salads.  Most importantly, it pairs beautifully with Mitica’s Honeycomb selection (see below).

What grows together, goes together! For wine, pair with any of our 2024 April Wine Club Selections. For beer, grab a Pale Ale to cleanse your palate or a Saison – with fruity & spicy notes – to complement the subtle sheep’s milk flavors without overwhelming them.

Brothers Fabrizio and Pierpaola have been tending bees and collecting honey for over 20 years. They designed innovative, rectangular forms to fit within the hive, into which the bees build the honeycomb directly. It is a wonderful way to experience this light and floral honey in its pure form, without any processing.

 

HOW TO EAT HONEYCOMB:
Enjoying honeycomb is an adventure in texture and taste, offering a pure, unprocessed glimpse into the wonders of nature’s sweetness. Both the honey and the wax of the honeycomb are entirely edible, in fact, the wax is packed with a ton of beneficial nutrients. To begin, cut a small piece from the comb—about the size of a teaspoon is perfect for starters. You can eat it directly, chew it like gum to savor the sweet honey, and then swallow the wax or discreetly discard it if you prefer. Honeycomb pairs excellently with a variety of foods; try spreading it over warm toast, allowing the honey to melt for a rich, indulgent treat, or pair it with cheese, such this month’s Pecorino Toscano Cheese Club selection (above).

This cheese is unlike your typical parmesan. It’s smooth, creamy, lush, sweet, buttery, aromatic, fruity and mouthwatering. Because it is so unique, this cheese is recommended to served alone, or as the star of your cheese board – not to be grated atop your dishes.  

WINE & CRAFT BEER PAIRINGS:
This cheese pairs beautifully with a glass of Prosecco. It will also pair well with any of the wines from our November Wine Club Selections. For beer, look for a light Pilsner or Lager.

ABOUT G. CRAVERO:
Founded in 1855 by Giorgio Cravero, the Cravero family have been carefully selecting and maturing the very best Parmigiano Reggiano in their own cheese caves in Bra, Piedmont, Italy. For the past five generations, the traditions have been passed down from father to son, each perfecting the craft of cheese aging. Today, their cheese is packed up and shipped out to more than 20 different countries across the globe.

The Cravero family works with a select group of small-scale producers in the Tuscan Emilian Apennine region to buy their cheese; it’s this local pasture and forage that lends the milk to be so creamy, soft and subtly sweet.  After the selected cheeses have been aged for about 12 months, they are brought to the Cravero maturing rooms in Bra, where the magic really starts to happen. From here, the team pays close attention to the changing seasons for the next 24 months to guarantee the unique nature of their product.

In June of 2022, we (owners, Bryan and Andrea McGinness, a few of our WineStyles guests, and myself) had the opportunity to tour Cravero’s facility during our trip to Northern Italy with Cheese Journeys. We met with the current owner, Giorgio Cravero (the third Giorgio since 1855), who showed us around, what he considered to be, his small family business. Their twenty-foot high aging rooms (or caves), house around 5,000 wheels of cheese – a capacity that seemed daunting to us, however, Cravero explained to be “tiny” in comparison to other affineurs (someone who practices the art of caring for, ripening and aging the cheese). The Rocchetta is a blend of three different milks, pasteurized cow’s milk, pasteurized sheep’s milk and pasteurized goat’s milk. It is a slightly ripened soft cheese, without holes, and an edible white/straw yellow rind. Short and careful aging create a creamy balance, allowing the sweetness and acidity to melt together. The palate highlights flavors of butter and crème fraiche.

FOOD PAIRING: This cheese eats well on its own, or served alongside cured meats and jams, or in a salad.

WINE & CRAFT BEER PAIRING: The Caseificio dell’Alta Langa Rocchetta cheese pairs well with Italian wines, such as our June Primary White Wine Club wine, or a crisp Pinot Grigio. For beer, reach for a Weiss Beer or any pilsner
