Cantar de Covadonga

Cantar de Covadonga is a white, crumbly, yet creamy blue veined soft-cheese named after the region in which it originates in Northern Spain. Covadonga is located just Northwest of the Picos de Europa, a mountain range in the Heart of Asturias, Spain. Originally coming from the Latin name, “Cova Domenica”, meaning the “Cave of the Lady”, the term became abbreviated to simply, Covadonga. This region in Spain is known for its wide range of cheeses, especially their blue ones. The Cantar de Covadonga is made from a blend of carefully selected cow’s and sheep’s milk and is aged for 3 to 4 months until it obtains its outstanding flavor. 

FOOD PAIRING: The Cantar de Covadonga makes for a great addition to any cheese board; or it can be enjoyed with burgers, mushrooms, chicken or on a salad.

This rosemary coated Manchego-style cheese is made with Manchega sheep’s milk from the La Mancha region of Spain. The center is reminiscent of a dense fudge that softens on the palate while the exterior has spicy, herbal notes. The rosemary infuses into the cheese and is balanced by the sweet walnut tones of the cheese’s center. This Queso Oveja al Romero exceeds the expectations of any cheese lover.

WINE & CRAFT BEER PAIRING: The Queso Oveja al Romero will pair beautifully with a Cava, or with this month’s Red Wine Club Selections – Alella Vinícola Ivori Aged Red Wine and Alella Vinícola Costa del Maresme. For beer, look for a lighter style such as a Lager or an Ale.

HISTORY OF QUESO OVEJA AL ROMERO:
Produced in the same region as Manchego, this style of cheese has been around just as long as Manchego itself. Creameries and families follow traditions of rubbing the cheese with Iberic lard and rosemary while the cheese matures. As the flavors continue to be absorbed, the cheese is brushed off, and more herbs are rubbed on until the process is complete.

The San Joaquin Gold is a handcrafted Parmesan-style cheese made with raw cow’s milk on Fiscalini’s sustainable farm. Named after the valley where it is made, this is an original cheese recipe created by and made only at Fiscalini Farmstead. It is an Italian-style cheese with a natural thin rind and a buttery color. It is mildly sweet and mellow when young, but develops into a darker golden hue and deeper, nuttier flavor as it ages. The San Joaquin Gold is made into 30-pound wheels and aged for a minimum of 12 months.

A traditional cheese of Cyprus, Greece, the Kynthos Halloumi will have you feeling like you’re surrounded by the turquoise waters and white sandy beaches of Greece. Made of cow’s milk, sheep’s milk and goat’s milk, this cheese has a very low acid content, making it the perfect grilling or frying cheese. Halloumi often resembles a much firmer and saltier block of clean, light mozzarella. 

FOOD PAIRING: This is cheese is a great blank slate to all sorts of dishes. Try grilled, fried, baked, sautéed, or simply on its own. Kefaloytre is a classic cheese of Greece. It is a hard, aged cheese made up of pasteurized sheep and goat’s milk. The Kourellas family keep things traditional by salting the cheese by hand as it matures. Dating back to the Byzantine era, Kefalotyri is believed to be the ancestor of most hard Greek cheeses.

FOOD PAIRING: This cheese is an essential ingredient in classic Greek dishes, such as moussaka, pastitsio, or spanakopita. Grate over pasta, serve shavings with pears and grapes, or fry a couple slices with your eggs.

In the 1970’s, when pre-packed TV dinners and processed, rubber cheese were popular, a self-proclaimed “serious hippie” named Mary Keehn was on the hunt for something different. A mother a four, she wanted to find healthier milk for her children. Mary noticed her neighbor owned goats for brush control and asked if she could purchase two, at which the neighbor replied, “if you can catch ’em, you can have ’em”. Each day, Mary went out with grain until eventually she lured in her first two goats: Esmeralda and Hazel. These goats turned into four, and many more from there. ABOUT GRAFTON VILLAGE CHEESE:
The Grafton Cooperative Cheese Company was founded in 1892 by dairy farmers in rural agricultural communities who gathered together to make their surplus raw milk into cheese. This helped the community as they were able to take an abundance of creamy milk and turn it into a food that could be stored for a longer period of time. In 1912, a fire destroyed the original factory; it wasn’t until several decades later, in the mid 1960s, the nonprofit Windham Foundation restored the company, and a new era for the town was born. As you near the rind, the spiciness of the bourbon becomes more pronounced. This beauty will be enjoyed by bourbon and cheese enthusiasts alike.

Basil Hayden Sr. began distilling his Kentucky Straight Bourbon Whiskey in 1796 using his own mash based on what he had on hand. This Utah Cheddar is rubbed with espresso and lavender, and is a winner of 20 major awards. Barely Buzzed is the perfect party cheese. It’s easy to pair, stunning to look at, and always the center of attention on the cheese board. The espresso and lavender rub imparts notes of butterscotch and caramel, which are prevalent near the rind, but find their way to the center of the cheese. This is a full-bodied cheese with a nutty flavor and smooth texture. Hours after it’s made, the special grind is rubbed on the rind. The 20-pound wheel ages for 6-8 months. In 2005, Tim Welsh and his brother-in-law, Pat Ford, had a vision of opening a creamery in the mountains of Northern Utah. With no more than eight days of cheesemaking experience between the two of them when they first began, the two broke tradition without even realizing it. Pat Ford has grown Beehive Cheese into an industry leading maker through his relentless positivity and enthusiasm for customer service. His career in sales has spanned over several decades to include real estate development, business to business software sales, and a brief stint in fire truck sales. Service is very important to Pat. He’s been an active member of the American Cheese Society (ACS) for the last 15 years and served on the Board of Directors for six years. During his tenure on the ACS board, he played an important role in Pat Ford 19 the creation of the Certified Cheese Professional (CCP) program. When he isn’t busy traveling the world with his wife, Jeanette, you can usually find him driving a tractor (or mule) on his ranch. He’s a proud father of five and a grandpa to nine spunky, cheese loving grandkids.

Before starting Beehive Cheese he worked in the fast-paced world of software and technology. He founded Beehive Cheese with his brother-in-law, Pat Ford. Tim poured every ounce of passion into making exceptional, award-winning cheese. Supporting local arts is very important to Tim. Tim has served on the Advisory Board at Red Butte Garden / University of Utah in Salt Lake City. He also serves on the Board of the California Artisan Cheese Guild. His charitable interests include the Ogden Friends of Acoustic Music Festival and their year-round events. Tim has traveled the world with his wife, Kari, and three sons—all of whom work at Beehive. He enjoys cooking, taking in a concert at Red Butte Garden, and snuggles with his two pups, Noodle and Gypsy
