Pecorino Toscano is an origin-protected cheese that is made from the milk of sheep that graze a diverse terrain, allowing them to produce a thick, rich milk. Though not as salty and sharp as Pecorino Romano, it is aged to the point at which its creamy flavor and smooth consistency give way to a sharper, more complex mix of flavor and a denser texture (aged minimum of 6 months). Delicious with a variety of Tuscan recipes, especially when grated on most pasta dishes and risottos.  Also delicious to grate a few shavings on soups and fresh salads.  Most importantly, it pairs beautifully with Mitica’s Honeycomb selection (see below).

Brothers Fabrizio and Pierpaola have been tending bees and collecting honey for over 20 years. They designed innovative, rectangular forms to fit within the hive, into which the bees build the honeycomb directly. It is a wonderful way to experience this light and floral honey in its pure form, without any processing.

 

HOW TO EAT HONEYCOMB:
Enjoying honeycomb is an adventure in texture and taste, offering a pure, unprocessed glimpse into the wonders of nature’s sweetness. Both the honey and the wax of the honeycomb are entirely edible, in fact, the wax is packed with a ton of beneficial nutrients. To begin, cut a small piece from the comb—about the size of a teaspoon is perfect for starters. You can eat it directly, chew it like gum to savor the sweet honey, and then swallow the wax or discreetly discard it if you prefer. Honeycomb pairs excellently with a variety of foods; try spreading it over warm toast, allowing the honey to melt for a rich, indulgent treat, or pair it with cheese, such this month’s Pecorino Toscano Cheese Club selection (above).

Morning Harvest is an American original cheese. Made with pasteurized cow’s milk, it is slightly sweet with a nice hint of caramel and almond to finish. This softer body cheese melts like a dream!

The Musser Family has solely owned and operated Milton Creamery since 2006.  Originally from Pennsylvania, Rufus and Jane Musser made the move to Southern Iowa for the opportunity to sell produce to dairy farming, which eventually led to their desire to make speciality cheeses. This raw, wild lavender infused honey from Spain is smooth in texture with a beautiful amber color. It is light, floral, sweet and aromatic. 

Pairing: Serve on a cheese board paired with this month’s cheese club selection, drizzle over desserts and pastries, or even add to your favorite tea.

April Cheese Club: Iowa

Mahón Semi-Cured Cheese

Named after the port of Mahón on the Minorca (or Menorca) Island in Spain, this cow’s milk cheese is produced by various small farmers organized in a cooperative. This semi-hard artisan cheese is pale yellow in color and has a nutty and sweet aroma. It is buttery, fruity, sharp and salty in taste. During maturation, the cheese is hand rubbed with butter, paprika and olive oil to give it its traditional orange exterior. The Mahón cheese is sold at different ages ranging from 2 months to 10 months. This cheese was awarded with Bronze and Silver medals at the 2014 and 2011 World Cheese Awards.

WINE & CRAFT BEER PAIRINGS:
Pairs well with this month’s Wine Club wines, or enjoy with a FRUITY Tempranillo or Rioja; or a SILKY Albariño wine. Enjoy with craft beers that are crisp, such as a Pale Ale or a Cider.

SERVING RECOMMENDATION:
Spaniards call this a table cheese because it is versatile with almost all foods. It can be served alone as an appetizer or dessert, or with fresh fruit and nuts on a cheese board. It also can be melted beautifully to give life to sandwiches or burgers.

Idiazabal Smoked Cheese
Northern Spain

Named after the village of Idiazabal, this Smoked Cheese is a traditional farmhouse hard cheese made from raw sheep’s milk in the Basque and Navarra regions or Northern Spain. In the old days, the Basque shepherds lived in small mountain huts, and could only age their cheeses within their stone chimneys – giving the cheese its traditional smokey flavor. Today, the cheese is produced in more modern ways, however, the process is still all-natural to give the cheese it’s smokiness – usually slowly ripened and naturally smoked with beech or cherry wood. Its compact texture and smokey flavor are reminiscent of burnt caramel and bacon. The cheese has a vibrant bouquet of aromas with rich, buttery flavors on the palate.

Grafton’s signature Cheddar is wrapped in cheesecloth and cave-aged for 6-8 months, a traditional method used for centuries allowing the cheese to take on a deeper variety of flavors. ABOUT GRAFTON VILLAGE CHEESE:
The Grafton Cooperative Cheese Company was founded in 1892 by dairy farmers in rural agricultural communities who gathered together to make their surplus raw milk into cheese. This helped the community as they were able to take an abundance of creamy milk and turn it into a food that could be stored for a longer period of time. In 1912, a fire destroyed the original factory; it wasn’t until several decades later, in the mid 1960s, the nonprofit Windham Foundation restored the company, and a new era for the town was born. Today, quality and taste are the hallmarks of their company’s award-winning cheeses. Learn more about their story here.

Quicke’s is handcrafted using milk from grass-fed cows, clothbound and naturally matured, typically for 6 months. This vibrant, full-flavored cheese has a distinctive taste on a classic Red Leicester, with crumbly texture, fresh, nutty flavors and a lemony creaminess. Best to be eaten within 7 days of opening. Once opened, wrap in greaseproof paper and store in air-tight container in the fridge.
