Cacao Raspberry Collins Cocktail Recipe

INGREDIENTS:

  • 2 oz. Castello del Poggio Sweet Red
  • ½ oz Tempus Frugit Cacao
  • ½ oz raspberry liqueur
  • ¾ oz lemon juice
  • fill to top club soda
  • garnish with raspberries

DIRECTIONS:

Add all the ingredients except the club soda into a shaker, add ice and shake. Strain into a highball, top with a club soda, gentle stir and garnish.  Or try their cocktail recipe for Sweet Coupe DeVille, with a few dashes of chocolate bitters.

Amber tawny in color with an olive green hue, exhibiting aromas of rich toffee and caramels, sweet figs, chocolate, caramel and licorice spices with elegant brandy spirit and hints of nutty wood aged complexity. The palate is richly flavored featuring caramel crème brûlée with fine spirit characters and lingering flavors of dried fruits and nuts. The texture is sweet and smooth with roundness from the wood maturation and brandy spirit filling out the middle palate, providing the firm, drying finish. This is an outstanding dessert wine.

Winery’s Notes:
This velvety wine is blended from antique barrels of Yulmba’s very best tawny, and laid down in their historic cellars over many years. The aging process evaporates a tiny angel’s share every year leaving a rich, concentrated wine with a nutty character. Made over five decades ago, the original wines were blended from old-vine varieties such as Shiraz, Grenache, Mourvèdre and Muscadelle.

Since 1985, the use of Portuguese fortified varieties Touriga, Tinta Cao and Tinta Molle have added complexity to the blend, bringing finesse and elegance to this wine. The grapes are crushed and fermented on skins for several days to extract the fruit flavors and to build palate texture. After draining and pressing off skins, the fermentation is arrested by fortification with brandy spirit. The vintage wines are then put aside into small oak barrels to mature over time, developing the classic tawny characters of chocolate, caramel and wood aged nuttiness. After many years of maturation, a selection of older and younger wines are judiciously blended to produce wines of complexity, balance of fruit and aged characteristics.

About the Winery:
Few winemakers have a story quite like Charles Smith. Although he was born and raised an hour from Napa Valley, California, Charles didn’t discover his love for wine until he moved to Europe. While living abroad, he managed a number of rock bands, including the famed Danish duo The Raveonettes. It was the wining and dining of a rock n’roll life on the road that sparked Charles’ passion for great wine. In 1999, while on a road trip to Walla Walla, Washington, Charles met a winemaker who convinced him to start making his own wine, true to his own story and vision. The “budwood” of Willamette Valley Vineyards began long before its founding in 1983 by vintner Jim Bernau. His Dad, a Roseburg attorney, was hired by California winemaker Richard Sommer to secure one of the first winery licenses in Oregon since Prohibition. Jim’s Dad allowed small tastes of Richard’s wine at the dinner table, lighting a path that led Jim from home winemaking to studies at UC Davis and eventually Beaune, France. In 1983, with the encouragement from winemakers making their move from California, Jim cleared an old pioneer plum orchard in the Salem Hills, hidden underneath scotch broom and blackberry vines to plant Pinot Noir. This Moscato comes from a grape variety with quite possibly the highest level of complex aromas of any Piedmont grape. This wine has the distinctive Moscato aroma and flavor, with a unique added complexity from the cranberries from the Italian Alps. The Moscato grape’s sweetness is perfectly balanced by the tartness, acidity and slight spice from the ripe cranberries.

WINEMAKER NOTES:
The Moscato grapes for this wine come from vineyards located in the Santo Stefano Belbo villages, at 200 to 300 ft. above sea level. Vinification is via autoclave, according to the Charmat Method, until it reaches 5.0% alcohol. Then, wine undergoes cold fermentation and ageing in stainless steel vats for one month, after which time it is blended with the cranberry pulp and bottled.

The Farm Pizzolato Settimo & Gino was founded in 1981, farming livestock and growing grapes, kiwi, peaches, strawberries, apples and pears. During this time, grapes and wine were the top products of the farm, however, it wasn’t until 1987 when the winery decided to finally bottle all the types of wine that were produced. In 1991, the farm and winery officially gained organic certification, and today the winery continues to grow, producing organic, vegan and sustainably grown wines. NECTAR WINE STYLE

Moscato d’Asti is an indigenous aromatic wine characterized by orange, peach and lime notes, with a sweet taste rich in minerals. In color, it is straw yellow with greenish hues, fine perlage, and a slow fermentation index. On the nose it has intense orange blossom, peach and thyme flavors. The taste is intense, elegant, and lingering. The sweet sensations are well balanced with a pleasant acidity with fruity aromas — typical of Muscat grapes.

Food Pairing Recommendations: Ideal with pastries, cakes, fruit tarts, ice cream, biscuits. Also delicious with cheeses such as gorgonzola and in cocktails.

Vinification:
After harvesting, the bunches are gently pressed to extract the most flavorful juice from the outermost part of the grapes. The must is kept in stainless steel containers at -3°C, where it can be kept for months. When there is market demand, it is then transferred into autoclaves for temperature-controlled fermentation, micro-filtered for purity and then bottled to keep the freshness and flavors intact.

VINEYARDS:
A real winemaker knows how to identify plots of land in the best areas. Over the years the Paolo Saracco winery has bought vineyards in the areas around Castiglione Tinella, Santo Stefano Belbo, Castagnole Lanze and Calosso. On their 50 hectares, grapes are grown sustainably in harmony with nature and with attention to changes in the climate throughout the year. Moscato grapes are full of aroma: all processing steps in the winery are done to maintain and preserve their flavors.

ABOUT THE WINERY:
In the heart of the Moscato d’Asti, the Saracco family has produced this aromatic wine in this area since the early 1900s and cultivated their own vineyards, which is an important part of the process, creating a link with the ideal terrain for growing Moscato grapes. With the support of their founder Luigi Saracco, a family of winemakers put their aromatic Moscato wine on the market, selling wine in bulk in the spring to companies producing Vermouth. Today, the passion and professionalism shown in previous decades are continued by Paolo Saracco, Giovanni’s son and current owner, who decided to start bottling Moscato after studying oenology. And so, the ‘Paolo Saracco’ label was born. This idea has allowed wine lovers in Italy and across the globe to discover a hugely aromatic, balanced Moscato d’Asti. Vinification: Each varietal is manually harvested at the perfect ripeness to preserve aromas and freshness. Following de-stemming, the juice is kept in contact with the grape skin for several days at low temperatures (cold maceration) to extract the fruit’s aroma and color. Then a partial fermentation is done at low temperature to preserve the natural sweetness, the fruity character and the fizzy style.
