The barrels were chosen due to their very special soft roast quality and noble vanilla flavors. First release in 2017. Cask Strength, limited to 3000 bottles.

De Struise Brouwers is an independent and active microbrewery based in Oostvleteren, Belgium. De Struise Brouwers also incorporated barrel-aging since 2005 in their brewing process. De Struise Brouwers have an extended chart of collaboration ales made with global renowned breweries. Not your typical “Jelly of the Month Club” beer. Dark roasted malt and bittersweet cocoa, coffee flavor and aroma burst from this pitch black milk stout. The full body and sweetness are derived from the addition of lactose (aka milk sugar) which is not fermentable by beer yeast. A healthy dose of English Kent Goldings hops provide a counterpoint to this ale’s rich and complex maltiness.

The brown ale to end all brown ales. Enjoy it, because there is no longer any reason to drink another. You’ve reached the pinnacle. A healthy blend of traditional British malts give this popular style a semi-sweet, biscuity, slightly roasted flavor. Oats thicken the mouthfeel, and a handful of specialty malts add complex chocolate, toffee, and caramel notes. The hops are mostly traditional, earthy British hops, but they cocked it up a bit with some Cascade late in the boil, “just to show those snooty Brits that we don’t approve of that Constitutional Monarchy crap.” – Against the Grain team.

Similar in appearance to a brie cheese, both the white rind and the creamy interior of Le Fromager are milder in flavor. Made by ultra-filtration, a relatively modern process that claims a very high percentage of nutrients and butterfat from the milk during the making of the cheese. The ultra-filtration gives the cheese a silky-satin texture that many connoisseurs really enjoy. In addition, the cheese has a clean, rich and creamy taste.  It’s a crowd pleaser for sure!

Best enjoyed when the rind starts to bulge, and the center is oozing with rich, buttery aromas. It matches beautifully with crispy, crunchy Lavosh crackers and a bit of quince paste, or fig, prune and walnut log. Its oozy, spreadable texture will make an awesome grilled cheese indulgence.

PAIRING RECOMMENDATIONS:
Bubbles are a must to pair with this cheese. It can be as simple as sparkling water or wine, or go all out with Champagne! It will also pair beautifully with this month’s Riesling as well as any crisp and clean beer.

Equilibrium Brewery scaled down on the Fractal’s grain bill, water treatment and fermentation; and intensified the hop bill of citra and galaxy making an extremely drinkable and balanced DIPA.

Super Fractal Kangaroo Set was inspired by brewmaster and owner, Pete, and a trip he took to Australia. This Triple IPA starts off with a fractal grain bill, then Galaxy hops lead their way on the dry hop with support from Sabro and Citra. It is hazy intense yellow in color with tropical fruit, coconut and citrus aromas. On the palate, there are flavors of orange, melon, pineapple and coconut.

When beer meets barrel, incredible things happen. The passage of time and the influence of wood combine to create a final product much greater than the sum of its individual parts. Sierra Nevada’s ‘Trip in the Woods’ series is designed to highlight the complex interplay between beer and barrel. Each beer has matured in a wooden cask, originally used to age mellow spirits, the time in slumber creates rich and layered flavors unique to this difficult and hands-on process.

This classic Quad in rum barrels is a nod to the great Trappist brewers of Belgium. Deep ruby-brown in color, the beer is rich and full-bodied with the style’s familiar to dark fruit flavors, while the yeast creates a hint of spice. Rum barrels impart delicate sweetness and complexity to this beer, that can be enjoyed today or cellared for years to come.

Starting their operations in 2018, Adventurous Brewing has been a very well received brewery operating on a small scale. Just recently, in June of 2020, they upgraded their 1/2 barrel system to a 7 barrel system, allowing for a greater level in their overall production. As Adventurous continues to scale up, they plan to focus their efforts on creating New England Style IPAs, high ABV Pastry Sours, and Imperial Stouts.  Adventurous Brewing is excited to begin the build of their taproom in Bettendorf, Iowa soon.
