MELLOW WINE STYLE

Ripe red fruit drives this wine. Look for strawberry, raspberry, and mulberry, which lead into a mouth-filling experience, nicely balanced with finer oak and skin tannins. The wine went to oak in March and remained there for almost 20 months. The barrels (barriques) were predominantly 3rd and 4th use, allowing for gentle development without overpowering oak. On the palate, it appears softer, but the ripe tannins lend a lift to the extended flavors on the back end. This wine can be equally enjoyed on its own or at the dinner table.

Easy Chicken Tikka Masala
Easy Chicken Tikka Masala

INGREDIENTS:

  • 1 cup basmati rice
  • 1 ½ pounds boneless, skinless chicken thighs, cut into 1-inch chunks
  • kosher salt and freshly ground black pepper, to taste
  • 1 ½ tablespoons vegetable oil
  • ½ medium sweet onion, diced
  • 3 tablespoons tomato paste
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 ½ teaspoons garam masala
  • 1 ½ teaspoons chili powder
  • 1 ½ teaspoons ground turmeric
  • 1 (15-ounce) can tomato sauce
  • 1 cup chicken stock
  • ½ cup heavy cream
  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS:

  1. In a large saucepan with 2 cups water, cook rice according to package instructions; set aside.
  2. Season chicken with 1 teaspoon salt and ½ teaspoon pepper.
  3. Heat vegetable oil in a large stockpot or Dutch oven over medium heat. Add chicken and onion and cook until golden, about 4-5 minutes.
  4. Stir in tomato paste, garlic, ginger, garam masala, chili powder, and turmeric until fragrant, about 1 minute.
  5. Stir in tomato sauce and chicken stock; season with salt and pepper to taste. Bring to a boil, reduce heat, and simmer until reduced and slightly thickened, about 10 minutes.
  6. Stir in heavy cream until heated through, about 1 minute.
  7. Serve immediately with rice, garnished with cilantro, if desired.

SILKY WINE STYLE

The wine is austere at first, but as it opens up, the fruit flavors emerge beautifully. It has a smooth texture that adds weight to the mouthfeel without the expected high alcohol. At 12.01% alcohol, this variety balances ripeness without excessive warmth on the palate. Enjoy with similarly subtle weighted dishes that highlight its bright, fresh personality.

WINEMAKER NOTES:
Grenache Blanc is closely related to Grenache Noir, originating in Spain before migrating to France. Historically, it has been a blending component for Châteauneuf-du-Pape and Côtes du Rhône wines, but recently it has gained popularity as a stand-alone variety. The Grenache Blanc Block 2D-N (1.5 acres) was grafted onto original Merlot vines in the late ’90s. The vines are prolific, ripening later than some reds like Syrah and Grenache. The fruit is harvested at 22 Brix, gently pressed, and fermented at 58°F for 33 days. No malolactic fermentation or oak aging is used to preserve its delicate fruit characteristics. – Chris Cameron, Winemaker

Baked Brie with Apricot Preserves

INGREDIENTS:

  • 8 oz wheel double cream brie
  • ¼ cup apricot preserves
  • 2 tbsp chopped roasted salted almonds
  • ½ tsp brandy (optional)
  • ¼ tsp chopped fresh rosemary

DIRECTIONS:

  1. Preheat oven to 350°F. Place brie on an oven-safe dish or a parchment-lined baking sheet.
  2. Combine preserves, rosemary, brandy (if using), and almonds in a bowl.
  3. Top brie with the mixture and bake for 12-15 minutes, until soft.
  4. Let rest for 5 minutes, then serve with crackers.

This crop was a much anticipated one. It has a very robust style that retains elegance and finesse. It is quite firm on the palate but the masses of spicy fruit and balancing oak compliment the grip nicely. The color is deep and intense reflecting the wine’s brooding nature. Bright natural acidity will ensure this wine ages for many years. Only new oak is used and the average aging is 23 months.

The 2020 Studium is the only proprietary blend in the CV line. It is only produced in years where the grapes are of the highest quality. Studium is a medium-bodied wine with soft inviting tannins. The wine will pair beautifully with roasted duck and a nice steak.

Harvested late October 2020, the grapes for Studium were gently de-stemmed and immediately inoculated with yeast. Two pump-overs a day completed the fermentation, the wine was then pressed, the malolactic fermentation was initiated.” – Ben Mayo, Winemaker

Broken Earth Nero d’Avola

sausage-bbqGrilled Sausage and Peppers with Garlic Aioli

INGREDIENTS:

Sausage and Peppers

  • 1 package Never Any! Mild Italian Style Chicken Sausages (4 individual sausages)
  • 2 bell peppers, cut into slices
  • half of an onion, cut into slices
  • ½ tablespoon Stonemill roasted garlic herb grill seasoning
  • olive oil, lemon juice, and salt
  • 4 specially selected brioche hot dog buns

Garlic Aioli

  • ¼ cup mayonnaise
  • ½ teaspoon Simply Nature organic garlic stir in paste
  • ¼ teaspoon Simply Nature organic basil stir in paste (optional, or sub fresh herbs)
  • salt and lemon juice to taste

DIRECTIONS:

  1. Whisk aioli in a small bowl. Set aside.
  2. Toss peppers and onions with the garlic herb seasoning (or whatever other spices you want). Drizzle with enough oil so they won’t stick on the grill.
  3. Place sausages directly on the grill. Place peppers and onion slices in a grill basket or a cast iron pan on the grill. Grill both until you get nice grill marks and the veggies are soft. At the end of grilling time, add the brioche buns, cut side down, to get them toasty.
  4. Transfer peppers to a bowl and toss with lemon juice, more olive oil as needed, and salt and pepper to taste.
  5. Serve each grilled chicken sausage on a toasted bun with a scoop of grilled peppers and a swizzle of your aioli.

The abundance of black cherry and dark plum dominate this wine. The fruit is forward and subtly supported by some oak and bright acidity. The tannins are plush, but relatively soft, offering a wine for many occasions— which will pair with a wide array of foods as well as an enjoyable drink on its own. The variety has an outstanding future ahead of it in Paso Robles.

“The fruit was handpicked and delivered to the winery, crushed and inoculated that same day with Clos yeast. Pump overs were done twice a day throughout the ferment. Fermentation on skins was done at 22.5 Brix for 10 days at 65°F. Maturation took place in French and American hybrid oak barriques for 9 months. The wine stayed in barrel and then filtration was performed and the wine was bottled.

The decision was made to bottle the wine early after sensory evaluation. The wine had come together so well and retained all of the primary fruit characters associated with the variety that further aging was deemed unnecessary.” – Chris Cameron, Winemaker

Broken Earth Limited Release Anonymity

INGREDIENTS:

  • 2 cups balsamic vinegar
  • 10 oz cherry tomatoes
  • 8 oz Ciliegine (“cherry size”) mozzarella cheese
  • .8 oz clamshell fresh basil leaves
  • salt and pepper
  • toothpicks

DIRECTIONS:

  1. For the balsamic drizzle: Add balsamic vinegar to a small saucepan over high heat then bring to a boil. Turn heat down to medium then simmer until vinegar is the consistency of thin maple syrup, 20 minutes. You’ll know it’s done when you can see the bottom of the pan for a second or two after scraping a spatula across. Pour balsamic reduction into a small bowl and set aside to cool. Alternatively you could use store bought balsamic reduction.
  2. Thread a cheese ball onto a toothpick, followed by a basil leaf – fold in half or into quarters if large. Finish with a cherry tomato then place onto a serving platter. Repeat with remaining ingredients. Just before serving, sprinkle skewers with salt and pepper then drizzle with cooled balsamic reduction. Serve immediately.

Stylistically, this wine is bright, fresh style with aromas of white peach, hints of green melon and subtle spices. “Our Anonymity is a white wine produced entirely from the Torrontes grape variety, a native of Argentina. So little of this varietal is grown in the US that it is yet to receive official status by the federal government. This wine does not see any oak and would be ideal for spicy foods as well as richer, creamy white sauces. Its appeal is further enhanced by its ability to maintain fruit when it is well chilled, perfect for summer.” – Chris Cameron, Winemaker

July Wine Club Pairing Recipe

INGREDIENTS:

  • 8 cups mixed berries
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • ½ teaspoon pure vanilla extract

Biscuit Topping

  • 1 and ½ cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 and ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cubed
  • ½ cup buttermilk, cold
  • for topping before baking: 1 tablespoon buttermilk and coarse sugar

DIRECTIONS:

  1. Preheat the oven to 350°F and grease a 9×13-inch pan.
  2. Make the filling: In a large bowl, gently fold the berries, sugar, cornstarch, lemon juice, and vanilla extract together until thoroughly combined. Spread filling evenly into prepared pan.
  3. Make the topping: Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick. You could also use a food processor. While slowly stirring, slowly drizzle in ½ cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this—just flatten the dough in sections and cover most of the berries.
  4. Brush the top of the biscuit dough with 1 tablespoon of buttermilk and then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
  5. Bake for 45-55 minutes, or until golden brown and biscuit topping is cooked through. Stick a toothpick into the biscuit topping, if it comes out clean, it is cooked through and the cobbler is done. Set the pan on a wire rack, then cool for 5 minutes before serving. Serve warm with vanilla ice cream or whipped cream.
  6. Cover and store leftovers in the refrigerator for up to 5 days.

Tempranillo:
This grape is a native Spaniard, where it reigns supreme in the famous Rioja region. You might also find it in Portugal under the name Tinta Roriz, where it is a key player in Port production. The name itself is a clue to its personality – “tempranillo” is a derivative of Spanish for “early,” hinting at its characteristic fast ripening.

Winemaker’s Notes:
“Broken Earth had some of the very early plantings of this variety in Paso and, although it was a tiny block, it encouraged us to plant much more in 2016. Block 5J is 15.09 acres of Clone 770 planted on 10’ x 5’ spacings and utilizing simple vertical shoot position (VSP) for canopy management.

It is an active growing variety, as mentioned has the benefit of ripening earlier and provides a plush, ‘fleshy’ palate but with ample tannins to balance the fruit. The wine is quite aromatic and warrants a more obvious oak regime which utilizes mostly new and some used barrels, with a mixture of French and Hybrid (French oak heads and American oak staves). Harvested at 24.5 Brix, and following a cool ferment, it spent 15 months in oak.” – Chris Cameron, Winemaker

This crop was a much anticipated one. It is a very robust style that retains elegance and finesse. It is quite firm on the palate but the masses of spicy fruit and balancing oak compliment the grip nicely. The color is deep and intense reflecting the wine’s brooding nature. Bright natural acidity will ensure this wine ages for many years.

Celebrating 50 Years: In 1973, Wayne Rodgers (Mash), James Caan (Godfather), Peter Faulk (Columbo), Jack Webb (Dragnet) and local visionary Herman Schwartz established the first large scale vineyard on the Central Coast, planting 520 acres. They anticipated the growth of Paso Robles to be another 2,000 acres with 10-15 wineries over the long-term. Paso Robles now stands around 70,000 acres under vine and over 300 wineries. 

Continental Vineyard was a grower for many Napa wineries in the early 70’s and 80’s. Winemakers from all over the world would travel to this vineyard to see what Paso Robles was capable of growing.  They continue this tradition today, establishing many new varieties that have never been planted in the US, and have 34 of the 72 varieties grown in the region.

A new adventure with an old friend. La Belle emphasizes all things lovely about the Muscatel (or more commonly known as Muscat) varietal that the Broken Earth team has adored, yet unfortunately forgotten about over the years. This Muscatel offers insight into a whole new world of what can be achieved when this grape is produced in a new style. It’s a wine that can fly solo, but with its acidity and off dry approachability can stand up to many cuisines. The best attribute being, this wine can stand up to spice and sour dishes, such as Korean barbecue or various curries. Pairs well with any farmer’s market fresh summer dish.

Broken Earth Cabernet Sauvignon

French-Dip-Sandwich-House-of-Nash-EatsSlow Cooker French Dip Sandwiches

INGREDIENTS:

  • 2 tablespoons olive oil
  • 2 ½ to 3 pounds beef chuck roast
  • kosher salt
  • freshly ground pepper
  • 2 (1-ounce) packages dry onion soup mix
  • 2 cups water
  • 2 (14.5-ounce) cans beef broth
  • 6-8 slices Swiss or Provolone cheese
  • 6-8 crusty rolls like ciabatta

DIRECTIONS:

  • Heat olive oil in a large skillet over medium-high heat. While the oil is heating, generously season all sides of the chuck roast with kosher salt and freshly ground pepper.
  • When the oil starts to shimmer, carefully place the roast in the hot pan and sear it on all sides by letting it sit without moving for a minute or two on each side before flipping it. Searing won’t take very long – you just want to quickly brown the roast to add flavor and seal in the juices.
  • Transfer the roast and the pan juices to your slow cooker. Sprinkle onion soup mix over the roast and add water and beef broth. Cook on high for 4-6 hours or on low for 8-10 hours.
  • When the meat is so tender that it shreds easily with a fork, remove the roast from the slow cooker and shred. Serve by piling the shredded meat onto sliced, crusty rolls with a slice of Swiss cheese. Toast the cheese and top bun under the broiler until the cheese melts and the bun starts toasting. Serve with the juices from the slow cooker as au jus for dipping.

These blocks are normally designated for our Reserve Cabernets but were chosen for our Estate wine this vintage.

The fruit was harvested over a period of 16 days commencing in October 2019, with dates depending on clonal and site differences to ensure all components are at their peak. Broken Earth Limited Release Vermentino

Grilled-Romaine-Caesar-Family-Style-FoodGrilled Romaine Lettuce Caesar Salad

INGREDIENTS:

 Caesar salad dressing:
  • ¼ cup extra virgin olive oil
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 grated garlic clove
  • 23 oil-packed anchovies finely chopped
  • 2 teaspoons fresh lemon juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon freshly ground pepper

Romaine Salad:

  • 2 heads romaine lettuce hearts
  • extra virgin olive oil
  • salt and freshly ground black pepper
  • ¼ cup grated Parmesan cheese

DIRECTIONS:

  • For the Dressing: Combine all ingredients for the dressing in a bowl. Whisk together until smooth and combined. Alternatively, place the ingredients in a blender or food processor and blend, or place in a lidded jar and shake well. The dressing can be made up to 5 days ahead. Store refrigerated.
  • Make the Salad: Trim a slim piece off the stem end of each romaine head — be sure to keep the stem intact. Remove any outer leaves that are damaged or discolored.
  • Cut each romaine heart in half.
  • Drizzle olive oil over the cut sides of the lettuce, or use a pastry brush. Don’t be shy about the quantity of oil — it adds flavor, color and helps the lettuce to release from the hot pan. Sprinkle some salt and black pepper over the cut sides.
  • Place a large 12-inch skillet (non-stick or cast iron) over medium-heat heat. When a drop of water sizzles in the pan, add the romaine hearts, cut-side down. Cook until the lettuce is browned and smells pleasantly nutty, 3-5 minutes.
  • Using tongs, gently transfer the romaine halves to a serving platter. Drizzle some of the dressing generously over the lettuce and sprinkle with the cheese. Serve the salad with a knife and fork, with the remaining dressing on the side.

WINEMAKING NOTES:
California Certified Sustainable logo“It is considered that Vermentino found its origins in Italy, confirmed recently by DNA Typing. It is prevalent in the region of Liguria but has gained much prominence on the island of Sardinia and more recently Tuscany. Vermentino has started to emerge in new world producers from Australia and California. The variety’s ability to adapt to a range of climates has great appeal and it certainly has found a home in the Paso Robles region.

Our Estate Vermentino Block 3F was planted in 2012 and the 5.02 acres has 10’ x 5’ spacings and utilizes a simple vertical shoot positioning (VSP) canopy. The variety enjoys the warmth of the region and typically ripens early, usually producing wines around 13 – 13.5% alcohol. The 2020 Vermentino was harvested at 24.1 Brix and underwent an extended ferment at a controlled, quite low temperature of 60ºF.

The cooler ferment guarantees the retention of the more subtle aromas and flavors that are typically absent in warmer conditions in the cellar. This wine has exhibited the greatest depth and complexity so far and its amazing texture shows how versatile the variety can be. Starting with lifted citrus – like aromas, the prettier characters emerge as the wine opens up. Hints of orange peel, elderflower and green melons lead into an equally enticing palate. Great length of flavor, bright acidity and the tiniest hint of skins at the finish exemplify the ‘complete’ wine.

The wine is produced using reductive techniques, employing the only totally inert gas membrane press in the USA at the time. Oak is not used to ensure freshness is maintained and the fruit harmony is not disrupted.” – Winemaker, Chris Cameron
