Both of these elegant wines feature hints of red fruits, graphite, and spices. On the palate, they reveal freshness, intensity, and depth. with red fruits, graphite and spicy notes. Thanks to their acidity, they are versatile wines that can be combined with a wide variety of flavors and foods.

SOILS:
Both terroirs share similar characteristics: Alluvial soils, near riverbeds and Colluvial soils, caused by mountain rock falls.

CLIMATE:
In the growing time, the temperatures are lower, allowing the wines to achieve less degrees of alcohol, lower pH and high acidity.

HARVESTS AND VINIFICATION:
The grapes are tasted and selected carefully. An early harvest allows the wines to achieve freshness and acidity. The process is made by hand, using 12 kilo boxes. They use pure native yeasts. The Cabernet Sauvignon is fermented in stainless steel tanks, while the Syrah, Carignan and the Cabernet Franc are fermented in open tanks to facilitate “Pigeage” (grinding with feet). This process is an essential part of their wine mixture. They limit the pump-over process to the minimum and taste their wines daily until the desired results are achieved.

AGING AND STORAGE:
The wines are aged for 15 months in 3rd and 4th use oak barrels. Additionally, they use an untoasted french oak foundre of 3000 liters. Afterward, the wine is stored for 6 months before being released to the public.

ABOUT THE WINERY:
Andes Plateau is a family run winery with a drive to showcase wines from the Andes Mountains. Altitude determines the identity of their wines; not many producers are in the mountains due to a high risk of frost, yet the Andes Plateau winery believes the risk is worth the reward. They produce elegant and energetic expressions of each varietal, working with the complex geology of their vineyard locations.

WINEMAKER / FOUNDER: FELIPE URIBE
After studying agriculture and working two years in San Pedro Vineyards (Chile), Felipe Uribe studied at Polytechnic University in Madrid (Spain) where he got his Masters degree in Viticulture and Enology.  He returned to Chile and worked at Santa Helena Vineyard. Looking for new challenges, he went to California and worked for La Crema Winery in Sonoma Valley.  After returning to Chile, he worked as Chief Winemaker for Miravalle Vineyard, which is located on the upper part of Cachapoal Valley. While working as head Enologist at William Fevre Vineyard (Maipo Valley) his wine was recognized as “Chile’s Most Innovative Wine of 2012” by El Mercurio, the most important newspaper in Chile. His wine was also awarded the “Revelation Wine of 2012” by Descorchados, the famous wine guide in Chile.  Learn more about the winery here.

Dark ruby red, with aromas of dried cherry, raspberry, blueberry and cedar. A rich opulent wine, offering flavors of ripe plum, blackberry, cocoa, black licorice and dried herbs. This wine is bold and well-balanced with lively acidity and refined tannins.

VINEYARD NOTES:
The Eulenloch Vineyard is located in the Carneros region of Napa Valley and its predominantly comprised of clay soils which retain water but are remarkably shallow. When combined with the cool coastal breeze, these characteristics provide ripe fruit that is complex and nuanced. Eulenloch Pinot Noir offers structure, suppleness, length, and depth.

ABOUT THE WINERY:
Owner/winemaker, Joseph Wagner chose the name Belle Glos (pronounced “BELL GLOSS”) to honor his grandmother, Lorna Belle Glos Wagner. Lorna was a co-founder of Caymus Vineyards, an inspirational figure to Joseph and an avid lover of Pinot Noir. Belle Glos showcases distinctive Pinot Noirs produced from California’s most noteworthy coastal wine-growing regions. Blending five Bordeaux-heritage grape varieties grown within the Napa Valley, this blend came together seamlessly, offering nuance, complexity and balance. The Cabernet Sauvignon, exhibits a bounty of dark bramble berry fruits, with notes of blackberry, boysenberry, blueberry cobbler, wild black cherry and red currant, alongside notes of root spice, ginger, and musky perfume. The Merlot adds vibrancy and riper notes of black raspberry and dark plum, while also softening the tannins, contributing to a velvety-rich, supple mouthfeel. Malbec adds fresh raspberry notes, while the Cabernet Franc and Petit Verdot complete the blend with darker berry fruits and savory spices, alongside delicate floral and woodsy nuances of black pepper, cedar, forest floor and wild sage. Well integrated notes of mocha and caramel, having been aged in new French oak barrels, heighten the overall aromatic expression, and lengthen the spiced multi-layered finish. The firm, grippy tannins lead to a sense of depth, and will ensure the wine’s ability to age for many years to come. A classic example uniting old world techniques with new world winemaking, all while showcasing the true elegance, generosity and allure of Napa Valley.

WINEMAKING:
The team at Beaulieu Vineyard tailored the winemaking for each varietal to best capture the personality of both the vintage and specific vineyard blocks. Optical sorting, cold soaking and gentle pumpovers along with in-barrel malolactic fermentation all contributed to this wine’s richly textured and complex flavors. Aging in roughly 60% new French oak barrels for 19 months complimented the wine’s impressive depth and freshness. Beaulieu Vineyard’s Winemaker, Trevor Durling, presides as only the fifth winemaker in the winery’s 119-year history. A native Californian, Trevor was raised in Sonoma County, the heart of Northern California’s wine country. With a love of agriculture, science and cuisine, Trevor pursued his studies at the University of California Davis in the Viticulture and Enology program. As winemaker at Beaulieu Vineyard, Trevor incorporates his passion for creating fine wines, while preserving the heritage and legacy of Beaulieu Vineyard.

VINEYARD:
Since its inception in 1990, their Tapestry Reserve has always been a tribute to their French heritage and a nod to the classic Bordeaux blends and Clarets that are world-renowned.  Varietals are always sourced from a selection of specific vineyard blocks of top-quality grapes that give Tapestry the combined attributes of terroir expression and a round, approachable tannin structure. Roughly half of the Cabernet Sauvignon was grown on the famous western benchland of the Rutherford American Viticultural Area (AVA) and the balance from the Calistoga, Oakville, and St Helena AVAs. The Merlot, Petit Verdot and Malbec are sourced exclusively from their estate vineyards in Rutherford. Two styles of Cabernet Franc lend complexity and intrigue: one from cooler Sonoma Valley providing fresh acidity and a slight herbal character; the other from warmer Calistoga adding ripe and expressive red fruit notes.

ABOUT THE WINERY:
One of the longest continually operating wineries in Napa Valley, Beaulieu Vineyard came to be in 1900, when Georges de Latour’s wife, Fernande, first laid eyes on that land that would later become the Rutherford vineyard. She said, “Quelle beau lieu!”, or “What a beautiful place!” Shortly thereafter, de Latour sold his thriving cream of tartar business, bought the four-acre ranch, and founded Beaulieu Vineyard with the vision of making Napa Valley wines that would rival those of his native France. WINEMAKER NOTES:
Lèonus vineyards are nested in the northeast part of Montalcino—an area where great Brunello di Montalcino crus are born. Like all great Super Tuscan wines, Lèonus captures the essence of Tuscany. This artisan Super Tuscan wine is a rigorous hand selection of the finest grapes of Sangiovese from Montalcino blended with Cabernet Sauvignon and Merlot. This hand-crafted blend gives birth to a Super Tuscan or as Cortonesi describes it as Super Montalcino Lèonus.

The vineyards are 20 to 25 years old—at the fullest of their qualitative potential. The harvest took place slightly earlier than the harvest of the Rosso di Montalcino and Brunello di Montalcino grapes. This slightly earlier harvest is to preserve the finesse and elegance of the wine and not to over extract body and structure. Lèonus is a soft tannin wine with silky smooth characteristics, capable of being versatile in its consumption, but always maintaining the amazing characteristics of Sangiovese di Montalcino.

VITICULTURE:
The grapes for this wine come from the heart of Montalcino, on 19 acres of family-owned vines situated both on a 984 foot hill on the north side of the city (near the Montosoli Zone) and on the southeast side (in the East Zone). One of the coolest growing areas in the appellation at moderate 382.8 yards (350 meters) above sea level. The soil on the north side is rocky clay, with excellent exposure to the sun and a large number of stones, while the soil on the south side is clay with sandy soil of good drainage.

VINIFICATION:
After careful selection of the hand-picked grapes, fermentation takes place with maceration for 20 days in stainless steel vats at controlled temperatures between 78.8° F – 86° F. The wine then spends 36 months in 3000-liter Slavonian oak casks. The combination of great passion for winemaking of the Cortonesi family, the high altitude, diversity of soils, and traditional winemaking process gives to the La Mannella Brunello di Montalcino great finesse, elegance, and immense aging potential.

FAMILY:
Brunello di Montalcino of Tuscany has been called “The King of Wines” and this “king” is what Cortonesi specializes in. The Cortonesis established La Mannella in the 1970s, covering 138 acres in one of the most storied areas of the entire region of Montalcino, but only 19 of those acres are dedicated to producing a world-class Brunello. They started commercially selling their wine in 1985. Today, the wines are in the more-than-capable hands of Tommaso Cortonesi, a third-generation winemaker. The first vintage of Cortonesi’s Brunello arrived in 1990, which took advantage of the rocky, well-drained soils of the vineyard site, ensuring a long-aging wine. Likewise, modern technological advances go a long way in producing outstanding wine.

This Knights Valley Cabernet Sauvignon has beautiful scents of rose petal, cocoa, dark cherry, and mocha which float from the dark, inky, ruby-red body. The tannins are all-encompassing, and along with medium acidity, delivers great balance and finesse. The intense palate shows flavors of black cherries, raspberries, leather, tobacco, vanilla, and anise. The long finish is marked by a touch of dark chocolate and caramel which provide a perfect balance. This is a Cabernet built for a long haul, enjoyable now, but worthy of additional cellaring.

VINEYARD:
The Knights Valley Cabernet Sauvignon is sourced from a single vineyard in Knights Valley AVA (one of Sonoma County’s original five AVAs), an appellation characterized by its warmer climate, gorgeous higher elevation vines, and gently sloping hills. This rustic, unspoiled vineyard and its unique soil composition dominated by volcanic loam and clay soil create beautiful, full, rich wines. 

WINEMAKING:
The Cabernet Sauvignon was hand-picked September 18, 2017, at 25.5 degrees brix. The grapes were fermented 10 days to dryness and then macerated an additional twenty-one days to soften and develop the tannins. Following pressing, the wine was moved to 60 gallon French Oak barrels, where it received three gentle barrel to barrel rackings. This vintage was barrel aged for twenty-two months prior to bottling on August 21, 2018.

VINEYARD:
The fruit used to produce this vintage was grown on the western bench of Dry Creek Valley, 200 feet above the valley floor. The vineyard experiences cool, foggy mornings and warm days, creating a substantial difference between daytime and nighttime temperatures. This extended growing season allowed the grapes to mature slowly, resulting in a rich and intense flavor profile.

WINEMAKING:
Hand-harvested on September 3, 2021, at 25.9 degrees brix, the fruit was gently crushed, destemmed, and fermented 10 days to dryness. Following pressing, the wine was clarified naturally by settling and then moved to small oak cooperage where it aged for 16 months. We used a blend of sixty-gallon French oak barrels to both enhance and complement the wonderful berry aromas.

Heron Hill Winery Eclipse Red

Pot roast dish setting on tableTangy Tomato Pot Roast

INGREDIENTS:

  • 6 medium yellow-fleshed potatoes, peeled and halved
  • 6-8 carrots, peeled and halved if thick or left whole if thinner
  • 1 medium onion, peeled and thinly sliced
  • 1 tablespoon olive oil
  • salt and freshly ground pepper
  • 3 lb. boneless beef roast, inside or outside round, blade or cross-rib works well
  • 2 cups tomato sauce, or passata
  • ¼ cup light brown sugar, packed
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons cider vinegar
  • 2-3 fresh thyme sprigs, or 1 tsp dried thyme leaves
  • 1 teaspoon salt, plus more, to taste
  • freshly ground pepper

To thicken:

  • 1 tbsp cornstarch
  • 1 tbsp water

To serve:

  • Fresh parsley, chopped

DIRECTIONS:

  • For Oven Method: Sear meat in an oven safe pot with lid or Dutch oven. Lift out briefly and place vegetables underneath the roast. Add sauce, cover and place into a 325°F oven for 3-4 hours or until the beef is fall-apart tender.
  • For Slow Cooker: Scatter the prepared potatoes, carrots, and onions in the bottom of a slow cooker.
  • On the stove top, heat oil in a large skillet over medium-high heat. Sear beef roast on both sides until well browned, about 3 minutes per side. Place beef on top of vegetables in slow cooker.
  • In a medium bowl, stir together the tomato sauce, brown sugar, Worcestershire sauce, cider vinegar, salt and pepper. Pour over the roast. Scatter the fresh thyme sprigs over-top.
  • Place cover on slow cooker and cook on low for about 6-8 hours, or until beef is fall-apart tender.
  • Remove roast to a cutting board and cut in to slices. Meanwhile, combine cornstarch with water and stir in to gravy with vegetables and let cook for a few minutes until gravy thickens a bit. Taste gravy and season with additional salt and pepper, as needed. Return meat to slow cooker. Gently stir to coat with gravy. Allow to cook a few minutes to re-warm the meat, then remove all to a large platter or bowl to serve. Garnish with some chopped fresh parsley.

This medium ruby colored wine shows the beauty of what the Bordeaux varieties can do around New York State in warm vintages. Medium to full intensity on the nose shows a great combination of black and red fruit with blackberry, cassis and raspberry all made more complex with some herbal mint tones and slight cedar notes. The palate is medium-bodied with refreshing acidity and refined, silky tannins with great length.

The linear finish leaves a rejuvenated palate that is not overwhelmed by over structured tannin, showing that a bigger wine is not always better.

“The term CV refers to the original vineyard holdings on our estate, Continental Vineyards, and this very limited wine is only produced in exceptional vintage years. In 2018, we achieved perfect fruit ripeness, resulting in a wine of outstanding depth. There are many special dishes and occasions that can pair with this wine, but in our humble opinion, only one reigns supreme: seared lamb. Take three inch lamb cutlets, brush with olive oil, black pepper, and garlic, then sear from the bottom and quickly flip to finish. Only new oak is used and the average aging is 23 months.” – Winemaker, Chris Cameron

This crop was a much anticipated one. It is a very robust style that retains elegance and finesse. It is quite firm on the palate but the masses of spicy fruit and balancing oak compliment the grip nicely. The color is deep and intense reflecting the wine’s brooding nature. Bright natural acidity will ensure this wine ages for many years.

“Cabernet Franc is a significant Bordeaux variety that figures prominently in the “right bank” styles of Pomerol and Sanitt-Émilion although it is rarely released there on its own. Paso Robles’ climate has the ability to get it ripe on its own and we are confident, and excited to release this 100% varietal. Celebrating 50 Years: In 1973, Wayne Rodgers (Mash), James Caan (Godfather), Peter Faulk (Columbo), Jack Webb (Dragnet) and local visionary Herman Schwartz established the first large scale vineyard on the Central Coast, planting 520 acres. They anticipated the growth of Paso Robles to be another 2,000 acres with 10-15 wineries over the long-term. Paso Robles now stands around 70,000 acres under vine and over 300 wineries. 

Continental Vineyard was a grower for many Napa wineries in the early 70’s and 80’s. Winemakers from all over the world would travel to this vineyard to see what Paso Robles was capable of growing.  They continue this tradition today, establishing many new varieties that have never been planted in the US, and have 34 of the 72 varieties grown in the region. 

Broken Earth, as a brand, was born from the heritage of the vineyard property originally named “Rancho Tierra Rejada”, meaning “land of worked or farmed earth”. For generations, farmers have cultivated and ‘broken’ the soil in the region with care and respect. Their goal is to respect the land and its treasures. Broken Earth winery encompasses a philosophy to provide wine that reflects the personality of where it is sustainably grown and the personality of its talented craftsmen, the winemaker and crew. BOLD WINE STYLE

Complex and stylish, with aromas of blackcurrant leaf and coffee bean which progresses into a palate that’s structured and racy with hints of leather, dark chocolate and sweet blackberry. The firm tannins yield and gripping mouthfeel from the first sip through to the long lingering finish.

  • Varietal: Cabernet Sauvignon

  • Food Pairing: A butterflied leg of lamb or lamb steak with rosemary and potato dauphinoise on the side

VITICULTURAL PRACTICES:

  • Varietal: Cabernet Sauvignon – clone 46C, 169A and 338C
  • Root stock: 101-14, R110 & R99
  • Soil type: Hutton – decomposed granite
  • Age of vines: Planted 2002, 2003 & 2008
  • Plant density: 2000-2300 vines per hectare
  • Trellising: Vertical hedge
  • Pruning: 2-bud spurs every 15cm
  • Yield: 10.4 tons per hectare
  • Irrigation: Supplementary drip
  • Vintage: Cool weather conditions constituted smaller more concentrated berries, leading to wines with great natural acidity and flavor
  • Picking date: 19 February – 28 February, 2029
  • Grape sugar: 24.7-25.2ºB
  • Acidity: 5.74 – 6.84 g/l
  • pH at harvest: 3.53-3.7

WINEMAKING PRACTICES: 

  • Yeasts: Alchemy 3 / X-Pure
  • Method: The grapes were gently de-stemmed, retaining as many whole berries as possible, before passing over an additional vibrating table to remove all MOG (matter other than grapes), after which a displacement pump takes the fruit to its fermentation tank. The tanks are then inoculated with a specific commercial yeast strain, this way insuring the development of the perfect flavor profile. Fermentation is done in stainless steel fermenters, and a combination of aerated pump overs and punch down techniques are used to ensure optimal color, tannin and flavor extraction. Once fermentation is complete, the wine is drained off the skins and moved to a holding tank to be barreled down. Malolactic fermentation takes place in the barrels. The wines are aged gracefully in place for 18 months, with 25% new French oak barrels and received only one racking during this period. After tasting through all the individual lots, the winemaking team decides on the final blend, the barrels are emptied into the tank farm and the wines are prepared for bottling.
  • Mood Maturation: 18 months in barrel, 30% new French oak, balance in older barrels

The name Thelema comes from a tale written by 16th Century French writer Francois Rabelais, who writes about beautiful Abbey, Thélème, where there is but one rule – ‘do what thou wilt’. This blend of Shiraz, Grenache and Petit Verdot pays homage to the spirit of the Abbey and to the author who gave them their name.

  • Age of vines: Planted 2003 to 2006

  • Yield: 8.5 tons per hectare (Shiraz), 11 tons/ha (Grenache), 13 tons/ha (PV)
  • Irrigation: Supplementary drip
  • Vintage: Cool weather conditions constituted smaller more concentrated berries, leading to wines with great natural acidity and flavor
  • Picking date: 15 March 2019 (Shiraz), 20 February 2019 (Grenache), 20 March 2019 (PV)
  • Grape sugar: 25.2ºB (Shiraz), 25.0ºB (Grenache), 24.8ºB (PV)
  • Acidity: 5.12 g/L (Shiraz), 6.19 (Grenache), 5.73 g/L (PV)

WINEMAKING PRACTICES: 

  • Yeasts: Alchemy4
  • Fermentation temp: 80.6ºF
  • Method: De-stalked, hand sorted, crushed, pumped into stainless steel fermentation tanks, cold soak for two days, and pumped over once a day for 5 days. After fermentation, the wine is left on the skins for 2 days before pressing, once pressed, wine is racked to barrel for malolactic fermentation.
  • Mood Maturation: 18 months in 2nd & 3rd fill 225 L French oak barrels

ABOUT THELEMA MOUNTAIN VINEYARDS:
After leaving his accounting career to become a winemaker Gyles Webb and the McLeans, his in-laws, purchased Thelema in 1983. The manor house was restored and the first wines under the Thelema label were released in 1988. By the mid 1990’s, their wines sold out within a month of release, making it one of the most sought-after wine estates in South Africa. The Webb family describe Thelema as “one of the most beautiful places on earth”. Situated on the southeastern side of the Simonsberg Mountain, with elevations 1739 feet above sea level and mainly south-facing slopes, Thelema Mountain Vineyards possesses some of the highest elevations in Stellenbosch, South Africa. These high altitudes and the rich red soils are ideal for premium quality wine grape production. The Webb family believes grape quality is the single most important factor in serious winemaking; their policy is one of minimum interference, allowing the wines to be a true expression of each vineyard. WINEMAKER’S NOTES:
“This wine is 100% Cabernet Sauvignon made entirely from Estate Grown grapes. It was handpicked from the hillside portion of the vineyard with limestone shale rock soils. Yields were limited to produce an intensely dark-hued wine. As is typical from this vineyard, the wines maintain complexity while remaining a soft mouthfeel. As always, the Reserve Cabernet Sauvignon features our favorite barrels from the cellar. The ripening for previous vintages carried well into the late fall, typical of this vineyard which experiences the afternoon breezes and climate effects of the Templeton Gap Barrel Select Cabernet Sauvignon.” – Jim Shumate, Winemaker

VINEYARDS:
Made entirely from hand-picked, estate-grown grapes, this Cabernet Sauvignon comes from the hillsides of their vineyard with limestone shale rock soils. It takes patience to grown this varietal on their ranch as it often is not picked until late October, nearly a month later than a typical Eastside Paso Robles vineyard. The cooling Templeton Gap breezes moderate the summer temperatures and combine with their Linne Calado soils for idea Cabernet growing conditions.

ABOUT THE WINEMAKER:
A Southern California native, Jim Shumate now lives in Paso Robles with his wife and children. He graduated from Cal Poly with a degree in Enology, and eventually developed and managed the Cal Poly pilot winery that opened in 2008. In the early stages of his career, he was greatly influenced by legendary winemaker, Chuck Ortman. Jim became Senior Lab & Barrel Technician, Cellar Master and Consulting Winemaker at a few different wineries before accepted the position of Winemaker at Pomar Junction in July of 2011.  Read more >

Winemaker Joel Tilbrook maintains that with these wines it’s more about what they DON’T do. Devil’s Corner vineyards produce expressive fruit with bright cool-climate acidity – Joel’s winemaking is all about showcasing these natural qualities.  His wines are fruit-driven wines, occasionally adding complexity through whole bunches in the ferment, aging on the lees with occasional stirring, using open fermenters, natural yeasts, cold soaks, basket pressing and minimal fining and filtration before bottling. When oak is used it is 100% French from 10 different coopers and a range of toast levels. 
Joel has also held roles of Winemaker, Senior Winemaker, Winery Manager, Chief Winemaker and most recently General Manager of Winemaking and Supply Chain at Brown Family Wine Group (family-owned), the parent company of Brown Brothers, Innocent Bystander, Devil’s Corner, Tamar Ridge and Pirie.  Joel is passionate about growing the best quality grapes and crafting wines that over deliver in terms of value and quality.  Learn more about Joel and Devil’s Corner here.

Jason Robideaux is Clos LaChance’s VP of Winery and Vineyard Operations, overseeing all activities that take place on the production floor, the crush pit, tank cellar and/or the barrel cellar. He joined the Clos LaChance team just prior to the 2007 crush, after recently returning from the Hunter Valley in Australia’s beautiful wine country, where he worked the 2007 Harvest Season as a Vintage Winemaker for Rosemount Estate. Jason attended Cal Poly, San Luis Obispo where he received his degree in Wine and Viticulture emphasizing in Enology. When Jason is not running in between barrels and climbing in and out of tanks, he enjoys playing and watching sports like Football, Baseball and Golf.
