The Diver Brut is part of Days of Youth’s California sparkling wine series. It is a blend of Chardonnay, Sauvignon Blanc, and Gewürztraminer. The Chardonnay presents lemon custard, grapefruit, apple, and citrus flavors with a soft, creamy foundation. The Sauvignon Blanc adds a bright acidity that gives a lively note with a hint of peach/apricot. The Gewürztraminer adds a beautiful floral character of jasmine, especially in the nose, and a hint of chalky mineral on the palate. Made in the Charmat method, the wine has about two bars of pressure creating a soft, Prosecco-like texture, which makes it easier and more enjoyable to drink. In the 1940s, the Giovanni Piattelli Family immigrated to Mendoza, bringing a winemaking legacy from their native Maremma in Tuscany. Their tradition and passion continue to be the strong legacy behind this prestigious wine.
In the late 1990s an American businessman, Jon Malinski, met the Piattelli Family in his travels to Argentina on the hunt for lumber to import into the US. Instead of lumber, Jon found vineyards, incredible wine, amazing people, beautiful landscapes, and a country that he could not stomach the thought of leaving. Soon these two families came together and Piattelli Vineyards was born. The winery is still 100% family-owned and managed. ABOUT THE WINERY:
The Regin family has been rooted in Wolxheim for over a century, with its winemaking heritage beginning in the early 1900s. Joseph Regin, born in 1891, ran a mixed farm with a small vineyard. Later joined by his son Justin, who shifted the focus to viticulture and began bottling and marketing the family’s wine. Justin’s youngest son, André, initially trained in electrotechnics, returned to the estate in 1980 and, after his parents’ passing, took full charge of expanding and modernizing the vineyard with his wife, Catherine. WINEMAKING:
Made using the Charmat method in souther France, grapes are harvested at cool temperatures and pressed quickly after picking to preserve natural acidity, extract the bright fruit notes, and achieve the perfect Yes Way pink. After the initial fermentation, a secondary fermentation takes place in pressurized stainless steel tanks to create just the right amount of bubbles.

COCKTAIL RECIPE: Strawberry Spritz

INGREDIENTS:

  • Yes Way Rosé Bubbles
  • 2 ounces lemon juice
  • 5 ounces aperol
  • ½ cup strawberries, quartered

DIRECTIONS:

  1. In a cocktail shaker, muddle strawberries and lemon juice.
  2. Add aperol and ice, then shake for 15 seconds.
  3. Pour over ice in a glass then top it off with Yes Way Rosé Bubbles.

WINEMAKING:
Part of Gabbiano “Cavaliere d’ Oro” wine collection – a selection of wines from the very best winemaking regions across Italy.  This Prosecco DOC is produced from Glera grapes in the region of Veneto.  Vinification is white with soft pressing, addition of selected yeasts and fermentation at controlled temperature. The still wine is stored in stainless steel tanks at a temperature of 46.4°F until the mousse setting phase. Re-fermentation, resulting in the wine’s characteristic bubbles, takes place in autoclaves at a temperature of 64.4°F for about 30 days. The wine is made in Brut style.

Production & Winemaking:
Hand picking, careful handling and gentle pressing produce a wine of delicacy, aromatic purity and depth. Following the fall harvest and fermentation of the base wines, extensive tasting trails are carried out in the spring to create a polished blend reflective of the vintage. The finished blend undergoes a second fermentation in bottle before aging on its yeast lees for about two years, just enough to achieve refined effervescence and toastiness without diminishing its refreshing, vibrant appeal.
 
For 2019, winter brought an abundant amount of rainfall which helped restore the water reservoirs that had suffered from years of drought. With additional late rains in May, the vines had ample water for the growing season. The transition from veraison to full ripeness was very consistent due to the warm, but not hot, temperatures that were maintained during the summer. Harvest started slightly later than average, and in the end brought a bountiful crop with exceptional fruit structure, depth of flavor, and bright acidity.

Hugh Davies was born in 1965, the year his parents, Jack and Jamie Davies, revived the historic Schramsberg Vineyards property in Napa Valley. Forty years later, Hugh was named president and CEO of the then 40-year-old sparkling wine house. Prior to 2005, he held the dual responsibilities of winemaker and general manager for the winery. He serves on the board of directors for the Napa Valley Vintners (president 2006), and with his family, chaired the 2004 Auction Napa Valley. For prior hands-on experience in the wine industry before joining Schramsberg, Hugh worked with Möet et Chandon in Epernay; Petaluma Winery in South Australia, and Mumm in Napa Valley, among others.
 
About Schramsberg Vineyards:
SB-Script-LogoIn 1965, Jack and Jamie Davies established Schramsberg as a sparkling wine estate on the property originally founded in 1862 by German immigrant Jacob Schram. At a time when there were only 22 bonded wineries in Napa Valley and fewer than 100 acres of California vineyards planted to Chardonnay and Pinot Noir, they set out to make world-class sparkling wine in the true méthode champenoise style. Theirs was the first California winery to provide a Blanc de Blancs in 1965 followed by a Blanc de Noirs in 1967. The balance and freshness of Crémant d’Alsace comes from the subtle match of four grape varieties: Pinot Blanc, Pinot Gris, Pinot Noir and Chardonnay.

VINIFICATION:
The grapes are carefully selected and vinified according to the “Methode Champenoise”. After traditional fermentation “vin de base” in tanks, a second fermentation “prise de mousse” takes place in the cool cellars. It does not undergo malolactic fermentation. Aging is done “sur lie” over 14 to 18 months with daily bottle rotation, going from a horizontal to vertical position, in order for the yeast deposit to accumulate in the neck of the bottle. At the time of disgorgement, the neck is frozen and enclosed in ice, the sediment is ejected by natural pressure, after which the bottle is corked and wired.

One of the outstanding wines is the Crémant d’Alsace Brut Rosé, made of 100% Pinot Noir. Having been aged for nearly four years and made in the traditional method, its pleasing aroma and lively acidity demonstrate all that is great about Gustave Lorentz.

VINIFICATION:
The grapes are carefully selected and vinified according to “Methode Champenoise”. After traditional fermentation “vin de base” in tanks, a second fermentation, (“prise de mousse”) takes place in the cool cellars. It does not undergo malolactic fermentation. Aging is done “sur lie” between 14 and 18 months, with daily bottle rotation, going from a horizontal to vertical position, in order for the yeast deposit to accumulate in the neck of the bottle. At the time of disgorgement, the neck is frozen and enclosed in ice, the sediment is ejected by natural pressure, after which the bottle is corked and wired.

Gustave Lorentz vineyards are nestled in the hills of Altenberg de Bergheim in the Vosges Mountains on 85 acres, with four acres on the hills of Grand Cru Kanzlerberg and 30 in the Altenberg de Bergheim. Riesling, Pinot Gris, Gewurztraminer and Pinot Blanc varieties, all vinified separately, make up the majority of plantings of these exceptional vineyards, along with smatterings of other varieties. Beautiful golden yellow in color with very fine and persistent bubbles, this sparkling wine has an expressive nose of yellow fruit and brioche with a fresh and balanced palate.

The grapes are manually harvested in small boxes, pressed and settled. The vinification follows the traditional method: first the juice is fermented at a low temperature to preserve the freshness of the bubbles. Then, when the wine is bottled, the second fermentation begins and lasts 9 months; this step transforms wine into sparkling wine.

ABOUT CRÉMANT DE BORDEAUX: Crémant de Bordeaux became an official appellation in 1990 (similar to the Champagne region).  Crémant is french for “creamy” and Crémant de Bordeaux is the name of all sparkling wines produced in the Bordeaux region using the methode traditionelle.  The appellation encompasses over 500 vineyards and all grapes must be hand picked and aged for a minimum of 12 months to be categorized as a Crémant de Bordeaux.

Method:
The Cuvée M grapes are harvested during the crisp morning hours to ensure they arrive at the winery in pristine condition. Fermentation is conducted at cool temperatures, mainly in stainless steel tanks to preserve freshness and fruit intensity. A few selected lots are aged in French oak barrels to add depth, complexity and spiciness to the final blend. After initial fermentation, the art of the blending begins. The winemakers find the perfect blend of wines to create their taste and style. Then the finished blend is bottled for the second fermentation. An average of 16 months yeast aging adds complexity, contributing subtle bread dough flavors and layers of creaminess. Disgorged as a Sec style (3.00% RS), Cuvée M’s final dosage is designed to highlight the beautiful, ripe stone fruit characters of the blend.

ABOUT CRÉMANT D’ALSACE APPELLATION D’ORIGINE CONTRÔLÉE:
Crémant d’Alsace Appellation d’Origine Contrôlée was created in 1976 to distinguish the wines obtained by the sparkling champagne method. The term “crémant” comes from Champagne, where it had fallen out of use. It was used in the recognition of the efforts made by several Alsatian winemakers, including the Maison Lucien Albrecht.

ABOUT THE WINERY:
The vineyards are mainly situated in Orschwihr, a wine-growing village in southern Alsace. From 728, Orschwihr was known under the name of Otalesvilare. From the 13th to 16th centuries, the village and its surroundings were controlled by nobility: the bishops of Strasbourg, Basel and Hapsburg in particular. Even in this era, there were strong ties to the vineyards and land as a precious asset to be cherished and glorified.

Eight generations later, the family continues to work in these same unique terroirs creating world renowned wines.
