WINEMAKING NOTES:
“The Bordeaux region of France is highly renowned for producing the best wines in the world. A much lesser known fact is that since 1990 the same region has been producing sparkling wines (Crémant de Bordeaux) “Méthode Traditionnelle” which are the equal, if not superior, to many champagnes and at a fraction of the cost. A huge advantage in this region is that along the banks of the rivers Garonne and Dordogne exist natural caves and grottos, which are high in humidity perfectly ideal for the stockage of sparkling wines. At harvest time the grapes are picked by hand and transported to the cellars to start the vinification process. Here the grapes are pressed and undergo a first fermentation. Once bottled a second fermentation occurs. The wine is then aged sur lie for at least 12 months in order to develop depth of flavors and complexity. While on laths the horizontal bottles are subjected daily to “riddling”, a process of turning each bottle a quarter of a turn. The bottles are then degorged of any residue to leave a perfectly clear and limpid wine ready forfinal preparation” – Stephanie Rivin, Winemaker

NECTAR WINE STYLE

This wine is dark bronze-gold in color with hints of amber. It has intense, fresh and fruity aromatics with characters of honey, butterscotch, crème brûlée, creamy caramel, dried oranges, orange blossom, dried pears, tea-cake, malt and green tea. These characters are also evident on the palate which is luscious with a hint of jasmine and fresh layers of flavor which linger in the mouth. This wine has a luscious texture with the gentle warmth of clean spirit and well-balanced sweetness complementing the finish.

“Making this wine gives me the chance to produce a true European type Rosé in a light, crisp and off dry style, similar to the wines we produced while working as an apprentice and going to winemaking school in Europe. I had a fun time putting this blend together. It is mainly Chardonnay and Riesling, with a little something mysterious thrown in to give it that mischievous character and flavor. NECTAR WINE STYLE

This Cuvée offers a unique taste and is a local symbol, allied to traditions and history of Limoux. Its straw yellow color with swirling bubbles and sparkling reflections is already a call to party. The palate is lively with the sensation of biting into apples and grapes. Honey, scents of acacia and very ripe pear notes bring softness and voluptuousness. Serve chilled at 41- 43 °F. 

Food Pairing Recommendations: Its lightness and freshness are ideal as an aperitif or to accompany desserts with apples, pancakes, fruit pies and French King cakes.

Vinification:
All grapes are handpicked, carried to the fermenting room in cases of at most 660 pounds, and then immediately pressed pneumatically. The juices selected are then fermented in temperature controlled stainless steel vats set at low temperatures. The juices are then fermented until they reach a degree of 5 percent alcohol content. Effervescence is produced by the Méthode Ancestrale using only the natural residual sugars in the juice after the first fermentation in their temperature controlled cellars (57°F) over a 14 week period. Effervescence occurs and the alcohol content rises to 6-7 percent.

ABOUT THE VINEYARD:
Hillsides and terraces have gently sloping clay-limestone soil with Mediterranean climate and an oceanic influence. The vine age is on average 20 to 40 years old and y
ields less than 50 hectares. To move further ahead in their quest for finesse and elegance, the Antech Winery conducts advanced experiments on the vines. In their family vineyard, they try out new methods on their old vine-stocks on the appellation’s highest land — stony, south-facing hillsides nearly 400m above sea level, opposite to the Pyrenees. ABOUT THE VINEYARD:
The Vineyard sits on about 22 hectares of land. The soil is on a panoramic plateau composed of fossilized oysters, located at 110 meters from the sea – called Clayey-calcareous soils. The average age of the vines is about 40 years old.

Located in the district of Sainte Croix Du Mont, the estate was created after the war by Mr. Labat. From 1990 to 2000, his daughter, Annie Lapouge committed to develop and modernize the estate. Annie’s daughter, Mme Virginie Barbe now runs the estate.

Produced from the Muscadelle grape, and previously called Tokay, this blend is comprised of varietals aged between six and ten years old. Amber to gold in color, it shows fresh honeycomb, orange peel and cold leaf-tea on the nose. The palate offers sweet toffee, citrus fruits and honey with a hint of spirit and aged oak spice on the back palate. Muscadelle carries itself with a feline grace as opposed to the powerhouse Muscat persona.

Produced from Muscat a Petit Grains, or Brown Muscat as it is more commonly known, this blend is comprised of varietals aged between six and ten years old. Amber gold in color with copper hues, the nose offers fresh raisins, sultanas, lifted spirit and cinnamon oak spices. The palate is rich and silky, its sweet dried fruits balanced by aged oak tannins and bright acidity, providing a clean, rather than cloying, finish.

WINEMAKING:
In the warm fall climate the grapes ripen and shrivel on the vines producing natural sugar levels in the range of 30-36 degrees Brix. The raisined grapes are then picked, crushed, and this intensely sweet grape juice is fortified with neutral grape spirit. A wood aging program then follows loosely resembling a solar system, lasting, in some cases, for over 100 years.
