About the Winery:
Champagne Vollereaux was established in 1805 by Paul Emile Vollereaux.  For six generations, the Vollereaux family’s attention to detail has been reflected in each bottle, leaving a finished product that delivers a fresh, light, elegant and fruity profile. What was once enjoyed by a small group of friends and family is now available worldwide. With its casual-chic style, Champagne Vollereaux creates the occasion and elevates any moment. Vollereaux is one of the very few champagne wineries to use the traditional saigne method of maceration for its Rosé Champagne, which involves bleeding off a portion of pink juice during red wine production (as opposed to blending red and white wine together). This process occurs after a short contact with the grape skins and seeds.

Today, the winery is owned and operated by brother-sister team Franck and Hélène Vollereaux. Franck is the winemaker and director while Hélène handles the domestic business and winery hospitality. Together, they carry the spirit of continuously strengthening and improving on the success achieved by their forebears.

About the Winery:
Jean-Charles Boisset was born into the world of wine in the village of Vougeot, Burgundy, France. His lifelong passion for wine began as a child, as he grew up above the cellars and within view of the centuries-old vineyards of Château du Clos de Vougeot, the epicenter and birthplace of Pinot Noir and Chardonnay.

At the time of disgorgement, the neck is frozen and enclosed in ice, the sediment is ejected by natural pressure, after which the bottle is corked and wired.

WINEMAKING:
The grapes are manually harvested in small boxes, pressed and settled. The vinification follows the traditional method: first the juice is fermented at a low temperature to preserve the freshness of the bubbles. Then, when the wine is bottled, the second fermentation begins and lasts 9 months; this step transforms wine into sparkling wine.

ABOUT CRÉMANT DE BORDEAUX: Crémant de Bordeaux became an official appellation in 1990 (similar to the Champagne region).  Crémant is french for “creamy” and Crémant de Bordeaux is the name of all sparkling wines produced in the Bordeaux region using the methode traditionelle.  The appellation encompasses over 500 vineyards and all grapes must be hand picked and aged for a minimum of 12 months to be categorized as a Crémant de Bordeaux.

DAUTEL WINERY:
Since 1510, there has been a long tradition of winemaking in the region. Situated in the heart of Württemberg, Dautel produces wine in and around Bönnigheim and alot has changed in the course of 500 years.  After Ernest Dautel graduated from Geisenheim University, he left the local cooperative.  This was quite an affront as his father had been the founding member, but Ernst Dautel realized the enormous potential of his vineyards and wanted to produce great wines equal to those he had tasted during his travels in Italy and France.

In 1985 Ernest started maturing his best red wines in barrique barrels. He produced blended wines, as well as single-varietal wines and fought for the permission to plant Chardonnay vines. Admitted as a member of VDP, the Association of German Quality Wine Estates in 1999, Ernest Dautel’s accomplishments gained wide recognition and awards.  Today, the Dantel family continues their pursuit of excellence and focus on quality-oriented work in the vineyards and organic cultivation.  Greening soil between vine rows and using beneficial species increases the biodiversity of the vineyards and stabilizes the ecological system. All vineyards are harvested by hand, critically selecting the best grapes. This results in several rounds of harvesting in each vineyard, yielding top-quality wines. ABOUT THE WINERY:
The Orban family has been growing grapes in Troissy, a village on the left bank of the Marne, since 1770. Their vineyards cover 331 hectares and are planted with Pinot Meunier (86%), Pinot Noir (8%) and Chardonnay (6%) grapes. By the end of the 1950s, Charles Orban left the Troissy cooperative and decided to produce his own champagne, selling it under his own name. Over the years, he grew his company from just 800 bottles, to now over 200,000 bottles produced and sold.
