BUBBLY WINE STYLE

This Brut Cava D.O. is pale lemon, clean and bright in color; it has a good release of small bubbles that end up forming a cheerful crown of mousse. On the nose, there is a high intensity aroma dominated by citrus fruit (lemon, grapefruit) and dairy. Autolytic and honey aromas of aging in bottle are distinguished. On the palate, this wine is fresh, fruity and pleasant with balanced acidity and very good aromatic persistence. 

Varietal: Xarel·lo, Macabeo, Parellada
Terroir: Grapes varieties are from vineyards located in the Penedès region. It’s the territory between the sea and mountains, halfway between Barcelona and Tarragona. It has a great diversity of microclimates, a consequence of its proximity to the coast and its altitude. The climate is typically Mediterranean, mild and warm.
Serving Suggestions: Risotto, shellfish, smoked foods or aperitif. 

Winemaking:
Made using the “méthode champenoise” or “traditional method” of the Cava DO. Blend or coupage of the traditional varieties of the appellation. Second fermentation in the bottle, as is traditional, with subsequent aging. Disgorgement and subsequent addition of the expedition liquor or dosage.
 
About Berceo:
In the XIII Century, a monk and poet named Gonzalo de Berceo lived in La Rioja, in the Monastery of Suso. At that time, the languages spoken in the area were Arabic and Basque. Back then, Latin was the only written idiom. Gonzalo de Berceo dared to write in Spanish, in a religious poem that also made mention to wine. Since then, Berceo was a very important link between history and wine culture.

The history of Manzanos Wines is the story of a family, their effort, their perseverance and their know-how. The Fernández de Manzanos have been cultivating vineyards and producing wines for more than a century. It was exactly in 1890 when the first generation of the Fernández de Manzanos family established a small winery in Azagra with a capacity of 50,000 liters of wine. The nose features notes of Meyer lemon blossom, baked brioche, pear and a hint of green apple with vibrant minerality. The palate is fresh but complex. Satsuma citrus with echoes of pear. Opens round and creamy, then turns zesty with bright natural acidity carrying through to the finish.

The Chenin and Chardonnay grapes bring texture and balance, with the Chardonnay also providing the fine bubbles. The Chenin adds vivacity and enhances the impressive longevity of the Cremant. This wine reveals a beautiful, golden yellow robe. It has a complex, aromatic nose with hints of white flower, honey, green apple and toast. It is crisp with elegant structure on the palate, where the fine texture of the bubbles complements the wine naturally.

VINIFICATION AND MATURING:
The grapes are harvested early by hand, in order to retain a good level of acidity. Upon arrival at the winery, the fruit is immediately pressed in a pneumatic pressing machine. The must is transferred to the vats for alcoholic fermentation, using the same process used for still wines. The wine is then transferred to sealed bottles for fermentation, in accordance with the champagne method. To finish, the winemakers will disgorge the bottles and perform the traditional dosage, which is very precise in order to keep a real freshness and wine balance.

SPECIAL NOTES:
Limoux is the area where sparkling wine originated. In 1531, the monks of Saint Hilaire discovered the first wine with bubbles. Situated in the foothills of the Pyrenees, these vineyards benefit from the cool conditions required to make sparkling wines of quality. This exceptional quality had even found an echo across the Atlantic at the White House. Indeed, Thomas Jefferson, was Limoux’ greatest admirer, and he discretely cultivated his love for France and for Limoux sparkling wine. This wine is beautiful, salmon-pink in color with glimmering reflections. The nose has a complex bouquet with long-lasting aromas of red fruit (such as strawberry and raspberry), backed with hints of toasted bread. The bubbles are delicate with an extraordinary vivacity on the palate, with a rich, indulgent texture.

VINIFICATION AND MATURING:
The grapes are harvested when their acid-sugar balance reach their best. The fruit is transferred to the winery and immediately pressed in a pneumatic pressing machine. In addition to the reinforcement of the perception of freshness and balance, the dosage is very precise. The Pinot Noir grapes are not macerated, in order to preserve their color. The must is transferred to the vats for an alcoholic fermentation, using the same process used for still wine. After the malolactic fermentation in the vats, the wine is blended and then transferred to the barrels to mature for 8 months.

SPECIAL NOTES:
Gérard Bertrand reveals the history of the great terroirs of the South of France. The first written trace of the Abbey of Saint Hilaire date back to 825. The Prosecco DOC Rosé has a fine, bright perlage and is light rose in color. The nose has a delicate and complex bouquet with fruity notes and hints of peach, green apple and lemon. There are also hints of floral notes of acacia and rose on the nose. It is fresh and light on the palate, with balanced acidity and body. This wine has a round and full-bodied structure; it is intriguing on the palate, dry and soft, with a pleasantly long finish.

VINIFICATION:
After a team of oenologists select the best wines for the sparkling winemaking process, the wine is filtered in steel tanks, with the addition of must and selected yeasts, for the second fermentation (Martinotti-Charmat method) at a controlled temperature of 57.2ºF-59ºF. Once the wine has reached the required pressure levels, alcohol and sugar content, it is refrigerated, cold stabilized (28.4ºF-26.6ºF), filtered and controlled before bottling.

VENETO REGION:
This climate is temperate. Mitigated by the sea, the chain of the Alps protects the region from the northern winds. Winters are cold and humid, and summers are hot and muggy with medium temperature variations.

August Bubbly Club: Strandveld

The delicate Cap Classique is made in the traditional method from Pinot Noir grapes. It highlights notes of strawberry, cherry and oyster shell and has a fine, lingering mousse that delights the palate.

The wine is named after the very rare and beautiful Protea pudens, affectionately known as the Skaamgesiggie or in English the “Bashful Sugarbush”, because of its unique downward hanging flowers. This shy Protea is endemic to the Strandveld. It is endangered and is categorized as a ‘red data’ species.

VINTAGE:
Winter of 2017 was one of the driest in the Western Cape in the last century; fortunately, the winter rains were within average range. The winery received very late cold fronts with icy rain in mid-September. The storm did extreme damage to the young shoots, so while they received water for irrigation, the price paid was the loss of half of their potential crop almost overnight. In late November, they had a further blow with a hail storm that caused more vineyard damage – resulting in the final harvest crop being on average a very low 3.5 ton/ha. The conditions during the rest of the growing season were moderate with cool, dry weather and the small crop was handled with care to make the most of it. The result was a small, concentrated vintage, comparable to 2015.

VINIFICATION:
Specially selected Pinot Noir grapes were harvested at 65.3ºF, and were cooled to 35.6ºF before being loaded whole bunch into the press for 5 hours with skin contact. Only the first 550l of juice per ton obtained from gentle pressing was used. The clear juice was cold fermented with selected year strains. After fermentation, the base wine was matured in 500L French oak barrels for 7 months. The base wine was then reinoculated with yeast and a small amount of sugar, then bottled under crown cap for a second fermentation.

Recipe Recommendation:

Yogurt,With,BerriesBAKED YOGURT WITH FRESH BERRIES:

  • Makes 6-8 servings

INGREDIENTS:

  • 2 cups Fresh Cream
  • 2 cups Double Cream Greek Yogurt
  • 1 cup condensed milk
  • 3 granadillas (or fruit of your choice)
  • 1 cup fresh raspberries

DIRECTIONS:

  • Mix the cream, yogurt and condensed milk together and stir until smooth
  • Divide evenly among ramekins
  • Bake in a preheated over at 140ºC (284ºF for about 10 minutes)
  • Remove from the oven and leave to cool at room temperature (or refrigerate for later)
  • To serve, scoop out the pulp of half a granadilla onto each baked yogurt
  • Finish with a generous scoop of berries

The Chandon Brut Rosé is vivacious and juicy. It’s a bright, dry Rosé with a refreshing lightness – perfect for sipping all year. On the eye, it is vibrant pink with an energetic bead and mousse. The nose is extremely fruity with subtle floral, toasty, mineral and brioche notes. On the palate, there are flavors of strawberry, red cherry, raspberry tart, red currant, pomegranate and notes of pastries or scones.  The creaminess, acidity and finish are all perfectly balanced with very little sweetness.

Grapes for Brut Rosé were sourced from multiple cool-climate appellations, ensuring complexity and consistency in this vibrant, smooth style. Grapes were harvested at night to keep the fruit cool and preserve freshness. Harvest begins early August to retain acidity and capture Chardon’s signature vibrancy.  State-of-the-art presses lower pressing times, limiting the the juice’s contact with the grape skins to avoid bitterness.  Primary fermentation takes place in stainless steel tanks.  The second fermentation occurs in the bottle and the aging process begins. A minimum of 12 months aging imparts a creamy complexity balanced by juicy red fruit notes.

Founded in 1973, by Robert-Jean de Vogüé and John Wright, Chandon is one of the first French-owned sparkling wine ventures in United States. The two carefully selected their vineyards, and are now considered to be amongst some of the best quality sparkling wines in California. This Bubbly blend of Mauzac, Chenin Blanc and Chardonnay is crystalline yellow in color with golden hues as it pours. The nose is intense with delicate scents of hawthorn and crisp green apple offsetting the nutty, pastry-like richness imparted by the extended tirage. A freshness sweeps over the palate with waves of citrus fruits, tart apple, Mirabelle plum, and golden flowers all lingering into a harmonious finish.

Clara Vie is a custom cuvée between JP Bourgeois and Françoise Antech, the sixth-generation member of Maison Antech-Limoux, a family-owned winery in France for over five centuries. Since the late 19th century, the family has been invested in the winemaking traditions of their region, taming their magical terroir to make fine sparkling wines. In 1996, Françoise stepped in to carry on the family traditions, while raising Antech to the ranks of the greatest sparkling wine makers. The secret of their character comes from a combination of Limoux’s three terroirs (the backbone of their cuvées): freshness from the Pyrenees, minerality from the ocean and roundness from the Mediterranean. About Steve Anderson – General Manager and Head Winemaker:

Eola-Hills-Steve-Anderson-winemaker-1-600x900Steve Anderson started his wine making career at the age of thirteen with is neighbor’s grapes and a 5-gallon bucket. His project was greatly encouraged by his parents, who gladly partook in the results of his experiments. Steve continued his career by studying Horticulture at Oregon State University. Two years into his degree, he ran out of funds and joined the U.S. Army to receive the Army College Fund. After three years as an Explosive Ordnance Disposal technician, Steve graduated from OSU with plans to become a nurseryman. In 1993, joined the Eola Hills Wine Cellars team as a “harvest season cellar rat”. He was quickly promoted to Assistant Winemaker, and eventually became Eola’s head winemaker, producing beautiful wines for them ever since. Learn more about his story here.

VINEYARDS:
The Brut Prestige is a blend comprised of the best selected grapes from different grower locations across the Napa appellation. Each harvest, the grapes are hand-picked in the mornings to ensure they arrive to the winery in perfect condition.

WINEMAKING:
Fermentation is completed in stainless steel tanks at cool temperatures, this preserves the fruit’s intensity and freshness. A few select logs are aged in French oak barrels to add depth, complexity and spiciness. From there, the finished blend goes through a second fermentation with about 18 month’s yeast aging, adding complexity, and layers of yeast dough and creaminess. Next, the wine is disgorged in brut style and part of the dosage is added back after being aged for another 3 months to balance the acidity.

Mumm Napa’s signature Rosé is coral-pink in color. It features fresh aromas of black cherries, red berries, and citrus. The Pinot Noir is responsible for the soft texture and forward fruitiness, while the Chardonnay plays a roll in the wine’s structure and elegance.

VINEYARDS:
Each harvest, the Brut Rosé blend is selected from the best grapes from up to 50 grower locations throughout the Napa appellation. Similar to Mumm Brut Prestige, the grapes are hand-harvested in the early mornings to ensure they arrive at the winery in perfect condition.

WINEMAKING:
Each individual vineyard lot is fermented separately at cool temperatures in small stainless steel tanks, this helps to preserve the individual flavors, freshness and intensity of each fruit. A few select lots are aged in French Oak barrels to create further depth and complexity to the wine. To create the coral-pink color of the wine, a small amount of red Pinot Noir is added to the blend before being bottled. From there, the wine is yeast aged for an average of 18 months to add further complexity and creaminess to the wine. Next, the wine is disgorged and a dosage is added back to balance out the wine’s acidity. The dosage includes a Pinot Noir fermented in traditional Burgundian fashion, creating an extra layer of depth, color and robust fruitiness to the wine.

This Sparkling Brut Rosé has gentle floral notes of rose petals, strawberries and cream, and loads of freshly crushed red berries.
