“The appearance of this exceptional beer is matched only by its taste! To make our Framboise, we add raspberry juice to our lambic. That gives it a delicate fruity aromas and a beautiful dark pink color, just like the dress I wore to our cousin Willy’s wedding (but that’s no interested to you since you undoubtedly don’t know Willy). Our raspberry lambic is served as an aperitif, but also use it in cooking. And when I don’t finish the bottle in my preparations, I finish it in my glass.” – Victorine de Gens

Golden blonde and slightly cloudy in appearance. As its name suggests, Pecheresse is a lambic beer enriched with peach juice. This is a fresh fruit beer that has a bright and full-bodied flavor as well as a nice balance between the sweet taste of the peach and the sourness of the lambic.

Red and slightly cloudy in color. This deliciously fruity lambic highlights notes of freshly picked cherries. Its sharp and full-bodied flavor gives way to a perfect balance between sweet and sour. Like other Lindemans beers, this filtered kriek is made from a lambic base. The difference, however, lies in the maceration of 25% juice of fresh sour cherries before the beer is filtered and pasteurized.

Brewery Notes:
“We’ve already told you that our family never does anything the way other people do. Lindemans Kriek is a good example of that. In order to obtain a beer like no other, we have been adding whole sour cherries to our lambic for generations. Our meeting with American importer Charles Finkel in the 1970s revolutionised the fruit beer segment. Charles convinced us to export our old kriek to the United States by boat. What we had not thought of is that the movement of the waves would reactivate the fermentation process and cause the corks to pop during the trip. It was like something out of The Adventures of Tintin. To prevent that from happening, we therefore developed an alternative production method for our kriek. We use fresh, not from concentrate, unsweetened cherry juice which we blend with lambic that is at least one year old before fermenting & macerating for up to 3 days and pasteurising the whole batch. So the corks don’t pop. Due to the use of juice and pasteurisation, this kriek is sweeter and fruitier than Oude Kriek Cuvée René, which undergoes a second fermentation process in the bottle. Thanks to its innovative flavour, it was a resounding success both here in Belgium as well as around the world. Nowadays, it is undoubtedly the reference kriek for consumers.” – Rene Lindemans

This apple lambic is the youngest of their range of lambic beers. A mixture of several selected varieties of apples, this young lambic is a fruit beer with a nice balance between the sweetness of red apples, the freshness of green apples and the sour-sweet character of lambic. The first taste is sharp and full-bodied, but then the sweet cider notes give way to a balance between a slightly sweet-sour taste..

Southwest of Brussels, in the quiet Belgian town of Vlezenbeek, the Lindemans family has crafted wild fermented lambics of exquisite taste and complexity for six generations. What began as a small home brewery to keep the farmers busy (and quench their thirst) during winter, continued to grow until commercial brewing started in 1822. Merchant du Vin introduced Lindemans lambics to the United States in 1979, making them the first lambics marketed in US history. To this day, they are the best-selling brand in the category. An exceptional quadruple amber. The particular rich and complex taste palette and the full head are also found in the Gulden Graak 9000 Quadruple. The sweet notes of caramel are, however, reserved for the Gulden Draak Classic.

The brewery’s new recipe, based on 4 different mat varieties, gives the Gulden Draak 9000 Quadruple a deep golden-amber color and a slightly fruity aroma. Together with the soft and slightly sweet taste, this provides a beautifully rounded bouquet with notes of dried fruit.

This beer is a high fermentation beer with secondary fermentation. For the secondary fermentation use is made of a wine yeast that not only contributes to the unparalleled taste, but also ensures a long-term shelf life with taste evolution.

The legend of the Gulden Draak (gilded dragon) is centuries old.  The odyssey of this mystic beast begins in northern Scandinavia on the prow of a Viking ship, and after a long and winding journey, ends at the top of the Ghent Belfry. Lucas says his biggest takeaway was that he needed a partner. Ottekelong which in local parlance means, “water from Cologne,” is the basic beer from Freigeist. Based on the local Cologne specialty, Kölsch, Ottekolong is an unfiltered Kölsch-style beer, but with more IBUs than is typical for German Kölsch. Also, because it is unfiltered it isn’t technically legal to call in Kölsch in Germany.

Some refer to the Dunkel style as the original beer of Munich and its surrounding villages (Dörfer). This everyday beer ranges in color and sweetness depending on the amount of Munich and roasted malts used. The sweetness of the malt is then balanced by the use of another Bavarian friend… the Hallertau hop… in this specific case, Hersbrucker, grown near Wolnzach, Hallertau. This beer is from Urban Chestnut Brewing Company’s Reverence series; it is deep amber in color and rich, smooth and tasty.

Serving Recommendation: Serve at 39.2ºF-50ºF in a room temperature glass. When pouring your beer, tilt your glass to a 45º angle and pour in 2/3 of the beer. With the glass upright, pour in the rest to get a wonderfully thick and creamy head. Enjoy!

ABOUT BRASSERIE D’ACHOUFEE BREWERY:
Initially considered a hobby, the Achouffe Brewery developed when brother-in-laws decided to purchase the farm in which they had been brewing for 4 years. CHOUFFE-STYLE CAULIFLOWER:
Preparation Time: 30 minutes
Serves 4

Ingredients:

  • ½ cup water
  • ½ cup flour
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 pinch chili powder
  • 2 tablespoons butter (or margarine)
  • 1 drop of chili sauce
  • 1 cauliflower
  • salt
  • 4 tablespoons ketchup
  • 2 tablespoons chili sauce
  • 1 tablespoon honey
  • black sesame seeds
  • 2 tablespoons sour cream
  • 2 oz. of gorgonzola
  • 2 tablespoons mayonnaise
  • 1 tablespoon finely chopped tarragon

Directions:

  1. Preheat the oven to 425ºF degrees.
  2. Combine the water, flour, paprika, cumin, cilantro and chili into a smooth paste.
  3. Melt the butter with the drop of chili sauce and a little salt. Add to the paste.
  4. Cut the cauliflower into florets. Dip them into paste and place them on a sheet of baking paper on a baking tray.
  5. Roast the cauliflower in the oven for 10 minutes.
  6. Meanwhile, mix the ketchup, the honey, and the hot sauce. Brush the florets with the spicy sauce and return them to the oven for 3 more minutes.
  7. Mix the mayonnaise with the sour cream, the tarragon, and the gorgonzola.
  8. Before serving, top the cauliflower with the cheese sauce.
  9. Finish by sprinkling the whole thing with sesame seeds.

Reuss was the name of the first beer brewed at Kerkom in 1878. It is produced for the Bink festival. It’s a Belgium style Blonde Ale blended with Lambic. Marc Limet blends the lambic with a less bitter version of Bink Blonde (which has 38 IBUs versus 52 IBUs).

In this bière de coupage, the brewery used a blend composed of 75% fresh saison and 25% foudre aged mature sour beer. This allows the acidity, funkiness, and tropical flavors found in the aged portion to cut through the dry, bitter, young saison. The result is a bitter, dry, sour, and funky beer that is an instant classic.

This beer is a marriage between dry saison and the Chasselas grapes found in the heart of Romandy (French-speaking area in Switzerland). For this hybrid beer, we used grapes from their friends, the 4th generation winemakers of Domaine de Boulaz in Bonvillars on the southwestern shore of Lake Neuchâtel. This beer is an invitation to gather with friends and family to share a good bottle. Naturally bottle conditioned, unfiltered, and unpasteurized.

Founded in 2003, by Raphël Mettler, the brewery is named after three ladies at home, his wife and two daughters, thus the name “Trois Dames”. Raphaël and his team crafted beers made to surprise their consumers – both in terms of their audacity in taste and their appearance. This is a limited item beer club, as Brasserie Trois Dames decided to close their doors in September 2020. The brand is still linked to the family and will not be sold, so it can continue to be at the disposal of the three ladies for future collaborations or other projects that may come to life. Malus Danica perfectly balances the wonderful aroma, sweetness and acidity of apples. The aroma of honey, sweet applesauce and fresh apple peel pours out of the glass, and the taste is fresh and rich.

ABV: 8.7-9% alcohol / volume
Style: Cider / Apple Ice-Wine

Recommended Pairings: Enjoy with cheeses, desserts, or as a treat in itself. It is also very good for fatty dishes such as foie gras and rillette. 

PRODUCTION:
Malus Danica is produced using the cryo-concentration method. It contains Danish apple varieties: Ingrid Marie, Filippa, Elstar, Jonagold and Belle de Boskoop. Each apple variety was picked at optimum ripeness, is immediately pressed into must after harvest and frozen immediately afterwards. The must is then dried outside at sub-zero temperatures, where the frost binds the water in the must, while sugar, acid, aroma and color drip off like thick raw syrup. After thawing, the concentrated “apple syrup” is slowly cold-fermented for 18 months into an intense wine, and finally aged for 3 months in barrique. This is the winery’s flagship that started their “Cold Hand Fruit” wine adventure.

“Cryo-concentrating gives us cold hands to that extent, but the technique is nevertheless the basic substance in all our apple, pear and quince wines. With this technique, we can extract the aroma, the towering sugar content and preserve the intense acidity from the fruit in our wines.” – Cold Hand Winery
