Made from grapes grown on the BSEW Estate in the Gaspare Vineyard blocks. The vineyard is located in the Oak Knoll District of Napa Valley, which is known for it’s moderate growing climate which encourages consistent ripening throughout the growing season. The 2021 vintage exhibits aromas of blackberry, brown sugar and cedar. It has a dark fruit flavor finished by powerful but elegant tannins.

The Heritage Cabernet is made using grapes grown in vineyards throughout Napa Valley. A significant portion of the grapes are from the Oak Knoll District of Napa Valley, their home AVA, which is known to give Cabernet richness and depth of flavor without overwhelming tannins. Significant percentages of the Cabernet grapes also come from vineyards located in Pope Valley and Rutherford which help to give the blend roundness and softness.

VINTAGE:
The 2022 growing season in Napa Valley and Sonoma County was nearly ideal. There were some continuing effects of the ongoing drought, but most viticulturists were able to deftly manage their irrigation regimes to adapt. At the beginning of September there was a record-breaking heat wave, some Napa Valley locations experienced temperatures over 115ºF for nearly a week. This extreme heat sped up ripening in most varieties and led to an early and compact harvest.

WINEMAKING:
The grapes for this wine are harvested at night or in the early morning hours to ensure optimum quality when received at the winery. The grapes are destemmed prior to transferring to the fermentation tank, where the grapes ferment over the course of 2 – 3 weeks. The wine is routinely pumped over during fermentation to fully extract all the wonderful color, flavor and tannin from the grapes. When fermentation is finished, the resulting wine is drained from the tank, the skins are gently pressed to capture all the wine, and the young wine is pumped to barrels to start maturing. Malolactic fermentation finishes within a few months of the wine going to barrel, and the wine continues to age for the planned 18 months of maturation time. The barrels are racked twice during this aging time, which helps to clarify the wine. The wine lots are finally blended a few weeks before bottling.

ABOUT THE WINERY:
From the late 1800s to the early 1900s, the Silverado Trail was home to cattle and horse ranching. In the 1950s, Richard Tam and Ben Hardister built the Silverado Horseman’s Center covering 32 acres along the southern end of Silverado Trail. The original facility featured an equestrian center with an indoor riding track, 36 horse stalls, and a grandstand for indoor riding events. The property also included an outdoor arena with a grandstand that sat 3,000 people, a half mile race track, recreation buildings, private paddock, riding trails and a stallion breeding center. The center thrived until the 1990s. The original riding area now houses prized wines, instead of prize-winning horses. However Black Stallion Estate Winery carries its heritage forward. The estate’s legacy honors the world-class terroir of Napa Valley, the pioneering spirit of the Silverado Trail, and the Indelicato family’s warm hospitality and generations of wine expertise. The wine is beautifully supple with a broadly fanned aromatic spectrum and an effortless depth of fruit. From a center point on the palate, the 2019 vintage undulates outward in all directions. Gentle, velvety swells pause and fold in on themselves, their liquid whorls of refined tannin and gratifying acidity gliding across the surface of smooth curves before retreating gradually to reveal, on the finish, the burnished dimensions beneath.

The Mascot is a Napa Valley Cabernet Sauvignon made from distinct hillside vineyards: specifically, the younger vines of Harlan Estate, BOND, and Promontory.

Analysis: 14.5% alcohol / volume
Varietal: Cabernet Sauvignon – depending on the vintage, The Mascot is composed of 85-95% Cabernet Sauvignon, along with small quantities of Cabernet Franc, Merlot, and Petit Verdot

About The Mascot:
Founded by Will Harlan, The Mascot began as a small, informal project shared among the family, the winemaking team and a handful of close friends. Drawing fruity from recently replanted blocks within the vineyards, The Mascot reveals its distinguished pedigree while offering insight into the evolution of its parent properties: a youthful promise of their future. With the 2008 vintage the family had enough wine – 500 cases – to introduce the endeavor to the outside world; releasing the first bottles in 2013. Vintage Notes:
Winter leading into the 2019 growing season delivered impressive rainfall (nearly 30 inches in the first four months) that lasted into May. The cool, wet spring delayed budbreak; yet this respite in a sequence of mostly arid years imbued the young vines with renewed energy. This potential for vigor required thor- ough and thoughtful pruning, early in the season, to ensure that energy would be most nobly directed: to maturing the fruit. Early autumn was met with even and steady warmth, and picking commenced in mid-September and stretched across five and a half weeks. This “leisurely” approach allowed for collection of the fruit in precise, well-delineated passes, and the wine extracted from these berries confirmed their decision to, in places, wait a little longer.

Winemaker:
Each of the three “parent” properties contributes components to The Mascot, and the winemaking teams – led by Cory Empting, Director of Winegrowing for the family domain – work collaboratively to weave together the final blend.

Terroir:
The Mascot is crafted from the younger vines of the three parent properties. Within the Napa Valley, hillside vineyards make up a miniscule percentage of planted acreage. The Harlan family has spent the past 40 years identifying the very finest and rarest of these sites.

Farming:
The vines contributing to The Mascot range from 5 to 12 years old. The parent properties are replanted about twice per century, with a continual supply of young vines. Replanting began over a decade ago at BOND, Harlan Estate and Promontory. The process involves replanting with cover crops to support the soil ecosystem without tilling, maintaining continuity between vine generations. By waiting three years for rootstocks to establish before grafting, the vines develop a strong root system, which results in fruit with better tannin and acidity balance. This focus on root development also allows for early dry farming, enhancing the wine’s purity and distinction. The vineyard teams manage the land through a “Vine Masters” program, where apprentices oversee specific vineyard blocks after a five to ten year training. This individualized care ensures each vine reaches its full potential in quality and longevity.

Winemaking:
The winemaking teams vinify the grapes from each property in accordance with the character of their land. For aging the wines, Harlan Estate and BOND use new and neutral French oak barrels, while Promontory employs larger casks made of Austrian oak. They evaluate the young-vine lots at the blending table between 6 and 14 months after fermentation, selecting the finest for inclusion in The Mascot. In total, The Mascot is aged in barrel for nearly three years prior to bottling and another 18 months in bottle prior to release.

Deep ruby in color, this Cabernet Sauvignon expresses complex aromas of ripe blackberries, red cherries, espresso and violets. The fresh acidity on the palate lends a lively touch to the overall smooth mouthfeel and fine tannins. Notes of black fruits, fennel, dark chocolate and raspberries mix on the palate to create a mouthwatering wine with a long-lasting finish.

Yeast: A33, three pump-overs per day, 8 hours apart.

Vintage:
The growing season in Napa Valley saw record-breaking weather events, with 80% of the total rainfall arriving before the new year. This filled vineyard ponds for the first time in two years but was followed by the driest three months on record, leading to an early bud break. The summer was generally average but slightly warmer. Harvest started 5 to 7 days earlier than the previous year and was 15% lighter but of exceptional quality. Overall, the harvest was the most condensed in recent memory.

Natural Winemaking:
Head of Winemaking Noel Basso has more than 20 years of experience with California vineyards and grapes. He is returning the brand to the purist philosophy of Founding Winemaker Tom Rinaldi, focusing on working in the vineyards and taking an unwavering grape-quality approach to each varietal. Minimal winemaker intervention allows the character and personality of the grapes to steal the show.

About the Winery:
Provenance Vineyards began in 1999 producing Rutherford Cabernets. Its founders had the vision to produce fine wines by discovering Napa Valley vineyards of unique “provenance” or origin. Over two decades, the brand was bought and sold twice and passed through the hands of two large corporations. Allen and Tiana Lombardi acquired Provenance Vineyards in November 2021 to infuse this iconic Napa Valley brand with the energy it deserves. Elegant, silky and layered; this Merlot has aromas of ripe plum, strawberry, raspberry jam and black cherry jump out of the glass and mingle with hints of cedar, clove, graphite and vanilla bean. An alluring, mid-palate is round and balanced by sweet red fruit, cocoa and a luscious savory finish. Soft, plush, juicy tannins create a textured palate, which will have you yearning for another sip. This is a definite “Cab lovers” Merlot that is approachable now and will lay down for 15 to 20 years.

This explosive Cabernet Sauvignon comes primarily from Kokomo’s 100-acre Cabernet Sauvignon Vineyard in Alexander Valley, Ruth’s Vineyard, with 20% coming from their home vineyard in Dry Creek Valley. 

WINEMAKER NOTES:
“The goal in making this Cabernet Sauvignon was to make it powerful yet graceful, food-friendly yet delicious on its own, and most importantly, balanced. After harvesting the grapes, we sorted them and gently de-stemmed them without crushing or bruising the fruit. We cold soak the grapes for 3-5 days and let fermentation begin naturally using the native yeast that comes in on the grapes from the vineyard. When we are satisfied with the fermentation and the quality of the juice, we gently press the wine so it can rest in 100% oak barrels for one year. We tend to use more neutral oak on this wine to showcase the fruit.” – Kokomo Winery Team

ABOUT THE WINERY:
Owner and Winemaker Erik Miller started the winery in 2004 naming it after his hometown of Kokomo, Indiana, and decided on a Coastal Cypress Tree as a logo to signify his move out west. Kokomo currently produces over a dozen different varietals and several single vineyard designates which are farmed by his partner in the winery, grower, Randy Peters. This juicy, well-integrated red blend is deep ruby-purple in color with aromas of blackcurrant, sweet cherry, licorice, clove and plum. The palate has spicy and floral notes of red and blackcurrants with hints of white chocolate. It’s a concentrated, yet medium-bodied wine with sweet tannins and a round mouthfeel.

Hand-pruned, hand-picked and hand-sorted, with twenty-two months maturation in small French oak barrels, it displays the textbook qualities of Oakville’s finest red wines.”

Jonathan Pey and his wife, Susan, set out to find wines that married the refinement of their favorite French and Italian wines with the rich, powerhouse wines they often found in Napa Valley.  Through their connections, Susan and Jonathan were able to create their first vintage of Oakville Cabernet and claimed it was a “textbook Oakville Cab”; thus the birth of TEXTBOOK wines. BUBBLY WINE STYLE

Demi-Sec was the most popular style of Champagne in the 18th century. Laurent-Perrier continues to make this authentic style with the same pride and care as the rest of their Laurent-Perrier wines.

The Harmony Demi-Sec wine is rich, golden-yellow in color. The nose is robust and expressive, it opens with aromas of candied fruit, almonds and hazelnuts, followed by notes of fresh brioche. Rich on the palate, this Demi-Sec is full-bodied and generous with an elegant, clean finish.

Analysis: 12% alcohol / volume
Varietal: 45% Chardonnay, 40% Pinot Noir, 15% Pinot Meunier. More than 55 crus with an average ration of 94% are used in the Demi-Sec base wine blend. Between 10-20% of reserve wines are used to ensure perfect consistency.
Vinification and Aging: Following a minimum of three years of cellar aging, Demi-Sec receives a dosage of 45 grams of sugar per liter dissolved in wine from the same cuvée. The dosage level results in a Demi-Sec that is pleasantly sweet without being cloying.
Serving Temperature: Serve between 43ºF and 46ºF
Food Pairing: Rich desserts, especially cakes and tarts

BUBBLY WINE STYLE

Launched in 1959 by Bernard de Nonancourt, Grand Siècle is Laurent-Perrier’s prestige cuvée and the epitome of the art of blending. Grand Siècle’s elegant bottle was inspired by the work of early 18th century master glassmakers. This cuvée namesake means “Great Century” from the illustrious period of French history during the reign of King Louis XIV, called the Sun King. At that time, art de vivre reached its pinnacle and French gastronomy was born, ushering in the concept of vins de terroir and the first effervescent wines from Champagne.

The Grand Siècle is bright pale, gold in color with a very fine effervescence, persistent sparkle and stead stream of fine bubbles. The nose is fresh, intense and complex with notes of candied citrus developing into aromas of fresh pastry and toasted almonds, with subtle hints of honey and gingerbread. The palate is complex, marrying structure to finesse, resulting in a perfect balance between power and delicacy. This textured wine continues to develop on the palate and in the glass, showing notes of honey, hazelnut, and toasted brioche.

Varietal: 55% Chardonnay, 45% Pinot Noir:

  • Grand Siècle Iteration Nº24 is made exclusively with 100% grand cru grapes from eleven of the most outstanding villages. These grapes are from exclusively hand-picked plots, selected from exceptional years and chosen for their complementary traits to provide structure, freshness and finesse in perfect harmony; Chardonnay always being the majority, with the balance being Pinot Noir:
    • Chardonnay Grands Crus: Avize, Cramant, Chouilly, Oger and Le Mesnil-sur-Oger.
    • Pinot Noir Grands Crus: Ambonnay, Bouzy, Verzy, Verzenay, Tours-sur-Marne and Mailly
  • Grand Siècle Iteration Nº24 is always a blend of three complementary years, which have been declared vintages by Laurent-Perrier: 2007 (60%), 2006 (20%), and 2004 (20%) vintages:
    • 2007: noted for its freshness, the Chardonnays are complex with aromas of white fruits and citrus and the Pinots Noirs open and fruity with a dominance of yellow fruit
    • 2006: noted for its finesse with rich, complex Chardonnays and Pinots Noirs with red fruit aromas
    • 2004: noted for its freshness and structure with fine, balanced Chardonnays and high quality Pinots Noirs

Vinification and Aging: The best Chardonnay and Pinot Noir wines are kept in reserve tanks in the dedicated Grand Siècle cuverie at Laurent-Perrier. After the base blend is crafted, it is put into bottles that will mature for up to 11 years on the lees in the cellar before disgorging.
Serving Temperature: Serve between 50ºF – 53.6ºF
Food Pairing: The creaminess and complexity of Grand Siècle perfectly complements refined dishes such as noble fish and lobster, or any dish with truffles or mushrooms.
