Vinification:
The base wines for Cuvée Prestige are crafted from meticulously selected grapes, expertly vinified in strict adherence to the Metodo Ca’ del Bosco. Upon harvest, the grapes are picked, graded, and chilled, each bunch undergoing careful selection by trained professionals before being processed through an exclusive “berry spa.” This system involves a thorough bunch washing and jet spray process, incorporating three soaking vats and a drying tunnel. The grapes are then crushed in an oxygen-free environment, and the resulting musts are fermented in temperature-controlled steel tanks until the following March.

The wine undergoes an additional seven months of aging to clarify, mature, and reveal the distinct characteristics of its vineyard origin. Subsequently, the wines are meticulously blended with reserve wines from the best vintages, accounting for 20% to 30% of the final cuvée, in a process that imparts the Cuvée Prestige with its unique character. This special technique captures the essence of Franciacorta as envisioned by Ca’ del Bosco. Only after an average maturation period of 25 months does this Franciacorta reach its full expressive depth. The disgorgement process is performed in an oxygen-free environment, utilizing a patented system by Ca’ del Bosco that eliminates oxidative stress and the need for additional sulfites. This process results in a purer, more appealing, and longer-lived Franciacorta. Finally, each bottle is individually marked to ensure traceability.

Classic Vintage Brut is considered the flagship wine of the estate and epitomizes the family’s dedication to excellence. Its quality and finesse evoke memories of Champagne, yet its flavors distinctly represent Sonoma County’s Russian River, Green Valley, and especially Iron Horse. Delightful and complex aromas of rising dough, orange marmalade, and baked apple lead to a perfectly balanced palate, showcasing ripe red apple, mandarin orange, and hazelnut. The intricate flavors and textures are matched only by the pure pleasure of its enjoyment.

The dosage for this wine is 8 mls of BdB LEX, 8 mls of Rued Chardonnay, 2 mls of 1986 LD Blanc de Blancs.

Vineyard:

  • Soils: The Iron Horse estate is in the heart of Green Valley’s cool and foggy climate, 13 miles from the Pacific Ocean. The predominant soil-type is called “Gold Ridge”, a sandy loam that has excellent drainage and is perfectly, inherently balanced, making it one of the most coveted soil types, especially for growing Pinot Noir.
  • Farming: The certified sustainable estate features 164 acres under vine, planted exclusively to Chardonnay and Pinot Noir across a patchwork of gentle, rolling hills. Each of the 39 blocks has been planted with site-specific rootstock and clonal selections, enabling Iron Horse to farm, harvest, and vinify each block separately.

In the Vineyards:
With nearly forty years of experience in Sonoma County, the winemaking team source from more than 20 growers, some of whom, like the Greene, Young and Ledbetter families, have been supplying grapes for more than three decades. Many growers have adopted voluntary no-till farming practices, with a strict adherence to hillside ordinances. Sustainable agriculture and integrated pest management techniques have been integrated and organic or naturally derived fertilizers are utilized, while composted grape material is used as fertilizer to increase water efficiency and help build soil structure.
 
In the Cellar:
Chardonnay, Pinot Noir and Pinot Blanc fruit is hand picked and brought directly to the winery. Each parcel is pressed and fermented separately, creating an extensive selection of base wines to choose from. Winemaker Keith Hock then tastes each component and selects those base wines that show potential to produce exceptional wine. The cuvée is placed en tirage for secondary fermentation in the bottle prior to disgorgement. Finally, a small percentage of older reserve wine is included in the liqueur d’expedition adding further complexity and texture.

The Piper Sonoma house style is focused on precision and attention to detail. Each wine displays a balance between fruit expression, complexity and texture, to create wines that are immediately approachable and can further develop with bottle aging.

Production & Winemaking:
Hand picking, careful handling and gentle pressing produce a wine of delicacy, aromatic purity and depth. Following the fall harvest and fermentation of the base wines, extensive tasting trails are carried out in the spring to create a polished blend reflective of the vintage. The finished blend undergoes a second fermentation in bottle before aging on its yeast lees for about two years, just enough to achieve refined effervescence and toastiness without diminishing its refreshing, vibrant appeal.
 
For 2019, winter brought an abundant amount of rainfall which helped restore the water reservoirs that had suffered from years of drought. With additional late rains in May, the vines had ample water for the growing season. The transition from veraison to full ripeness was very consistent due to the warm, but not hot, temperatures that were maintained during the summer. Harvest started slightly later than average, and in the end brought a bountiful crop with exceptional fruit structure, depth of flavor, and bright acidity.

Hugh Davies was born in 1965, the year his parents, Jack and Jamie Davies, revived the historic Schramsberg Vineyards property in Napa Valley. Forty years later, Hugh was named president and CEO of the then 40-year-old sparkling wine house. Prior to 2005, he held the dual responsibilities of winemaker and general manager for the winery. He serves on the board of directors for the Napa Valley Vintners (president 2006), and with his family, chaired the 2004 Auction Napa Valley. For prior hands-on experience in the wine industry before joining Schramsberg, Hugh worked with Möet et Chandon in Epernay; Petaluma Winery in South Australia, and Mumm in Napa Valley, among others.
 
About Schramsberg Vineyards:

Method:
The Cuvée M grapes are harvested during the crisp morning hours to ensure they arrive at the winery in pristine condition. A few selected lots are aged in French oak barrels to add depth, complexity and spiciness to the final blend. After initial fermentation, the art of the blending begins. The winemakers find the perfect blend of wines to create their taste and style. Then the finished blend is bottled for the second fermentation. An average of 16 months yeast aging adds complexity, contributing subtle bread dough flavors and layers of creaminess. Disgorged as a Sec style (3.00% RS), Cuvée M’s final dosage is designed to highlight the beautiful, ripe stone fruit characters of the blend.

Just as Champagne is synonymous with the sparkling wine region of Champagne, France, Italy’s famous sparkling wine region is the Prosecco DOC zone located in Veneto, Italy.  At the center of it all is a lovely grape called Glera, previously known as Prosecco (renamed in 2009) and an equally lovely village called Prosecco. Prosecco sparkling wines are made in the Charmat method, a lighter style with more delicate bubbles than its French counterpart in Champagne.

Avissi is clean and bright, a crisp sparkler with soft, elegant bubbles that flutter in the glass, giving a lovely effervescence to each sip. A beautiful balance of heady floral notes and luscious fruit makes it imminently approachable. That’s why we love it with take-out after work, all dressed up on a Saturday night, or brunch on Sunday.

Aging: Cold storage of the must in stainless steel tanks.

WINEMAKING:
Whole white clusters are soft-pressed in a bladder press. After an initial racking, the resulting must is transferred to temperature-controlled tanks where it remains until it is used for the production of the sparkling wine. After pressing, the red grapes are transferred into tanks and undergo gentle maceration for color and tannin extraction. Fermentation is carried out at 71.6ºF-73.4ºF to preserve the wine’s aromas.

SECOND FERMENTATION:
The white must and a small amount of the red must are blended together. Next, selected yeast is added to the resulting cuvée in vats where fermentation takes place at 59ºF-60.8ºF to enhance the fruits natural aromas. When the desired alcohol level and amount of residual sugar is obtained, fermentation is arrested by means of temperature control. After being aged for at least two months on its lees, the sparkling wine is ready for bottling.

VINIFICATION:
The grapes are harvested and pressed before the must is transferred to a temperature-controlled tank and chilled to slightly above freezing. The must is racked to a temperature-controlled pressurized tank (autoclave) where the first fermentation is provoked. Wine is stabilized using temperature control and second fermentation is provoked as well.

SECOND FERMENTATION:
The must is put into vessels where the fermentation takes place at 59ºF-60.8ºF to enhance all the harvest fragrances. Upon reaching the required alcohol and sugar content, the fermentation is stopped by refrigeration.

WINEMAKING NOTES:
“The Bordeaux region of France is highly renowned for producing the best wines in the world. A much lesser known fact is that since 1990 the same region has been producing sparkling wines (Crémant de Bordeaux) “Méthode Traditionnelle” which are the equal, if not superior, to many champagnes and at a fraction of the cost. A huge advantage in this region is that along the banks of the rivers Garonne and Dordogne exist natural caves and grottos, which are high in humidity perfectly ideal for the stockage of sparkling wines. At harvest time the grapes are picked by hand and transported to the cellars to start the vinification process. Here the grapes are pressed and undergo a first fermentation. Once bottled a second fermentation occurs. The wine is then aged sur lie for at least 12 months in order to develop depth of flavors and complexity. While on laths the horizontal bottles are subjected daily to “riddling”, a process of turning each bottle a quarter of a turn. The bottles are then degorged of any residue to leave a perfectly clear and limpid wine ready forfinal preparation” – Stephanie Rivin, Winemaker

ABOUT CRÉMANT D’ALSACE APPELLATION D’ORIGINE CONTRÔLÉE:
Crémant d’Alsace Appellation d’Origine Contrôlée was created in 1976 to distinguish the wines obtained by the sparkling champagne method. The term “crémant” comes from Champagne, where it had fallen out of use. It was used in the recognition of the efforts made by several Alsatian winemakers, including the Maison Lucien Albrecht.

ABOUT THE WINERY:
The vineyards are mainly situated in Orschwihr, a wine-growing village in southern Alsace. From 728, Orschwihr was known under the name of Otalesvilare. From the 13th to 16th centuries, the village and its surroundings were controlled by nobility: the bishops of Strasbourg, Basel and Hapsburg in particular. Even in this era, there were strong ties to the vineyards and land as a precious asset to be cherished and glorified.

Eight generations later, the family continues to work in these same unique terroirs creating world renowned wines. Crisp and delicate effervescence. A light pale yellow color, delicate and complex bouquet nose with fruity notes of peach and green apple and secondary notes of acacia and lilac. It is fresh and light on the palate, with balanced acidity and body; harmonious with a long persistent pleasant aftertaste.

Serving Suggestions: Ideal as an aperitif, or serve with hors d’oeuvres and delicate first courses. Also wonderful with sushi, fish and shellfish. Serve at 46-50ºF.

VINIFICATION:
Grapes are hand-selected both for area of origin and overall quality. After gentle pressing of the grapes and clarification of the must, fermentation takes place in temperature controlled stainless steel vats. After fermentation is complete, a second fermentation occurs by small additions of yeasts and sugar, and takes place in glass lined tanks. This lasts for about 45 days and is known as the Martinotti-Charmat method. The resulting wine has small bubbles (less “fizzy” than champagne).
