Sparkling Moscato Sangria:
Ingredients:

  • 4 ½ oz Bartenura Sparkling Moscato
  • ½ oz vodka (optional)
  • ½ oz dill infused simple syrup
  • ½ oz orange juice
  • fresh strawberries
  • green seedless grapes
  • lemon wheel

DIRECTIONS:

  1. Combine the vodka, dill simple syrup, and orange juice, add the fruit and let it rest for at least 2 hours in refrigerator.
  2. Just before serving, add well chilled Bartenura Sparkling Moscato.
  3. Serve in a chilled wine glass.

Production Technique:
Grapes are picked early (21-22.5 Brix), fermented at cold temperatures for 30 days, and then aged in stainless steel tanks. Fermentation is stopped at 2% residual sugar to retain as much freshness and fruitiness as possible. A slight lift of natural carbon dioxide in the wine creates a lively aroma.

First released by Randall Grahm of Bonny Doon Vineyard in 1992, Pacific Rim Dry Riesling quickly gained a loyal following among Riesling lovers. Known for its fresh and bright characteristics, the wine was a welcome alternative to over-oaked, one-dimensional white wines. As the American palate evolved in recent years toward wines with greater complexity and crisper acidity, the popularity of Pacific Rim Dry Riesling grew. Demand and enthusiasm for Pacific Rim Dry Riesling continued to gain momentum — and the excitement around the wine inspired a radical idea… creating a winery exclusively dedicated to Riesling. In August of 2006, a small band of Bonny Doon expats moved to the Northwest from California with a common desire to craft the best Riesling in America… thus, Pacific Rim became its own winery. White Summer Sangria
Ingredients:

  • 1 green apple, cored and chopped
  • 1 orange, sliced, then cut into quarters
  • 1 lime, sliced
  • 1 peach, sliced
  • ½ cup raspberries or cut strawberries
  • ½ cup orange juice
  • ½ cup triple sec or brand,
  • 1 (750 ml) bottle of Pacific Rim Riesling wine
  • Mint for garnish (optional)

Directions:

  1. Place all fruit in a large pitcher. Add wine, orange juice, and triple sec and stir
  2. Chill in the fridge for 2 hours
  3. Serve in glasses with ice and some of the fruit.

While this wine can be enjoyed by itself as an apéritif, it is also perfect with fresh oysters and other shellfish, crab cakes, ceviche and grilled sea bass. It is also delicious with fried chicken, tempura and a variety of fried dishes. Serve with aged Gruyère or Comté, and as a counterpoint to semi-soft aged cheese.

Mirabelle is Schramsberg’s multi-vintage brut sparkling wine. Twenty-five years into building an outstanding range of vintage dated sparkling wines, the Davies family set out to master the non-vintage or “multi-vintage” traditional method technique. A few years of experimentation would ultimately lead to the successful launch of Mirabelle Brut and Mirabelle Brut Rose in 1992. Starting in 2023, the Davies family, proprietors of Schramsberg Vineyards and Davies Vineyards, presents this exceptional bottling of the Mirabelle Blanc de Blancs.

Mirabelle Blanc de Blancs (white from whites) is made from Chardonnay, one of the classic three grape varietals used in champagne. This flavorful, bright bubbly exhibits the crisp acidity and vibrant apple/citrus fruit that is characteristic of cool climate Chardonnay. The grapes are grown in the unique pockets of California’s North Coast, including the Napa-Carneros, Sonoma Coast, Mendocino County, and Marin County. The fruit is hand-picked in the early morning hours at optimal maturity. Individual lot fermentations allow the winemakers to carefully select the components that make up the finished blend. After bottle fermentation and two years of aging en tirage, subsequent trials determine the ideal dosage to finish this lively, fruitful style.

Bottlerocket is a fruit, botanical and sativa terpene infused rosé spritz. Its full flavored yet delicately balanced between high tone red fruit, ripe blood orange, a touch of botanical bitter and just a kiss of sweetness. The sativa terpenes carry an herbal note but more importantly adds a gentle yet euphoric lift to the experience making it unlike other wines on the market. Bottlerocket Spritz is a one-of-a-kind ultra-premium wine cocktail that combines sparkling Rosé, Aperol spritz-like notes and a mood boost from the terpenes.

Crafted with Rosé that is sourced from dedicated, cool climate Rosé vineyards in Columbia Valley, Washington. The vineyards are at 1,100 feet elevation, which ensures gentle ripening and allows complex flavor development and natural acidity without much alcohol. The dynamic fruit and natural acidity helps with the long-term integrity of the wine.

Sativa terpenes harvested from fruits and vegetables (not hemp or cannabis) that include Beta caryophyllene, linalool, D-limonene create a gentle euphoric lift and mood boost to the experience. Just as mezcal and high-quality agave spirits give a slight lift to your buzz due to naturally occurring terpenes in agave, Bottlerocket delivers a similar alert and happy feeling. These terpenes also have a citrusy herbal flavor bringing a complexity and savory note to the blend.

Bottlerocket is just 9% alcohol by volume and carbonated to a Prosecco level. They use real fruit and botanicals and aren’t filtering or using preservatives beyond (just minimal S02) to ensure the most distinct full flavors, please expect a hazy hue.

This Auslese (selected harvest) Riesling is produced from grapes that remain on the vine until extremely late in the year.  Individually selected overripe grapes result in a full-bodied, luscious wine with hints of apricot, nectarine and honey. It has intense flavors and a lingering finish.

Winemaking: Auslese is picked at ultimate ripeness, sometimes two months after harvest season has started. This allows the fruit flavors to develop and ripen.  During picking, the grapes are handled very carefully to avoid bruising, letting the natural sweetness shine through. Harvested in the cool early morning, the grapes are brought quickly to the winery, destemmed and placed in stainless steel tanks that help retain the Riesling’s crisp acidity. The wine is kept cool, between 50-65 ºF, during fermentation.

Vineyards:
Schmitt Söhne Auslese Riesling hails from select vineyards along the Mosel River in Germany. Mosel is regarded as the oldest wine-growing region in Germany, believed to have been established by the Romans around 50 AD. It is one of the most northernly wine regions in world. Mosel vineyards are famous for their steep south-facing slopes and blue slate soil, reflected in the balanced minerality of Schmitt Söhne’s Auslese Riesling.

PRODUCTION:
The winery picks their Riesling grapes early (20-21 Brix). About the Winery:
Few winemakers have a story quite like Charles Smith. Although he was born and raised an hour from Napa Valley, California, Charles didn’t discover his love for wine until he moved to Europe. While living abroad, he managed a number of rock bands, including the famed Danish duo The Raveonettes. It was the wining and dining of a rock n’roll life on the road that sparked Charles’ passion for great wine. In 1999, while on a road trip to Walla Walla, Washington, Charles met a winemaker who convinced him to start making his own wine, true to his own story and vision. The “budwood” of Willamette Valley Vineyards began long before its founding in 1983 by vintner Jim Bernau. His Dad, a Roseburg attorney, was hired by California winemaker Richard Sommer to secure one of the first winery licenses in Oregon since Prohibition. Jim’s Dad allowed small tastes of Richard’s wine at the dinner table, lighting a path that led Jim from home winemaking to studies at UC Davis and eventually Beaune, France. Two Mountain Tempranillo

BBQ pork with cheesy grits

BBQ Pork with Cheesy Grits

INGREDIENTS:

  • 3 cups of water
  • 1 cup stone ground yellow grits
  • 1 tsp of salt
  • ¼ tsp cayenne pepper
  • 2 tbsp butter
  • 1 cup shredded sharp cheddar cheese
  • fresh cracked black pepper
  • 2 cups rib meat from leftover pork ribs
  • ¾ cup BBQ sauce

DIRECTIONS:

  1. In a large pot bring the water to a boil. Next add the salt, cayenne pepper and butter.
  2. Gradually add the grits to the boiling water using a whisk to prevent any lumps.
  3. Lower the heat to simmer and cook for 20 minutes.
  4. While grits are simmering, pick meat from pork ribs and chop. Place in a small saucepan with BBQ sauce and cook on low for 10 minutes.
  5. Gradually whisk the cheese a little at a time into the grits until completely incorporated. Cook another 5 minutes.
  6. Plate with divided grits, topped with BBQ pork rib meat. Garnish with fresh cracked black pepper and chopped parsley (optional).

Two Mountain Winery Rosé

Homemade,Cheesy,Pull,Apart,Bread,With,Garlic,And,ParsleyCheese and Garlic Pull Apart Bread

INGREDIENTS:

  • 1 crusty loaf , preferably sourdough or Vienna
  • 1 cup shredded Mozzarella cheese (or other melting cheese)
  • 1 stick (8 tbsp) unsalted butter, softened
  • 2 large garlic cloves, minced
  • ¾ tsp salt
  • 1 tbsp fresh parsley, finely chopped

DIRECTIONS:

  1. Preheat the oven to 350ºF.
  2. Combine butter, garlic and salt in a heatproof bowl and melt in the microwave. Stir through parsley.
  3. Cut the bread on a diagonal into one inch diamonds but do not cut all the way through the bread.
  4. Use your fingers or a knife to pry open each crack and drizzle in a teaspoon of butter and stuff in a pinch of cheese. This might sound like a bit of an effort, but I promise you it is worth it! You don’t need to be super neat, it’s nice to have some of the butter drizzled over the crust.
  5. Brush surface with remaining butter. 
  6. Wrap with foil and bake for 20 minutes until the cheese has mostly melted, then unwrap and bake for 5 – 10 minutes more to make the bread nice and crusty.
  7. Serve immediately.

June Wine Club Pairing Recipe

Organic,Roasted,Grilled,Eggplant,With,Parsley,And,GarlicGarlic & Herb Grilled Eggplant

INGREDIENTS:

  • 2 eggplants
  • 2 tsp salt
  • ½ cup extra virgin olive oil
  • 3 cloves garlic crushed
  • 2 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh oregano
  • ½ tsp pepper
  • ¼ tsp salt

DIRECTIONS:

  1. Cut the eggplant into ¼ inch thick slices and generously salt each slice. Let them rest for about 15 minutes so that the salt can draw out the moisture and bitterness. Wipe each of the slices with a paper towel to remove the salt and moisture. 
  2. Preheat the barbecue to medium heat.
  3. In a large dish combine the olive oil, garlic, parsley, oregano, salt and pepper. Place each of the eggplant slices in the dish, flipping them over to ensure both sides are covered in oil. 
  4. Grill for approximately 6 minutes per side until golden in color with grill marks. If the eggplant slices become dry and stick to the grill, brush them with more oil. 
  5. Once the eggplant is tender and cooked. Remove from the grill and return back to oil, herb and garlic mixture in the pan. Flip once so that both sides are coated before transferring to a serving platter. Spoon any of the excess herbs & garlic overtop before serving. The eggplant can be enjoyed hot or at room temperature and will last for up to 4 days in the fridge.

These flavors are followed by a blackberry/bing cherry fruit melody, with a touch of cola, cedar leaf, and a savory herb mélange. This wine has a very pretty oak, great acid and supple tannins.

Matthew Rawn – Winemaker, Director of Sales and Marketing

Matthew Rawn has been winemaker for Two Mountain Winery since its inception. He helped plant the estate vineyard with his uncle Ron Schmidt in 2000 and has produced Two Mountain’s wines since the first vintage in 2002. While the vineyard was growing, Matt honed his winemaking skills by working alongside neighboring Yakima Valley wine producers and learning their craft. A passionate advocate for the Washington wine industry, Matt manages sales and marketing for the winery and enjoys talking with wine retailers and restaurateurs about the state’s world-class wines. Matt also shares vineyard duties with his brother, Patrick. Matt holds a bachelor’s degree in agricultural business from Montana State University in Bozeman, Mont. and completed enology and viticulture courses at Walla Walla Community College in Walla Walla, Wash.

Patrick Rawn manages finances and daily operations for Two Mountain Winery and estate vineyard and shares vineyard management duties with his brother, Matt. After college, Patrick traveled the globe and spent extensive time in Europe. Patrick returned to the U.S. with plans to enter law school, but a six-month stint working for the family wine business took his career path in a new direction. Patrick’s passion for wine blossomed at Two Mountain Winery, and quickly grew into a full-fledged love affair. Patrick lives and works in the Yakima Valley, where he is a Yakima County Planning Commissioner and serves on the Yakima County Wine Tourism Consortium. Patrick holds a bachelor’s degree in political science and a minor in economics/international finance from the University of Washington in Seattle. Learn more about Matt, Patrick, and their team here.

Two Mountain Winery is a family affair – owned and operated by brothers Matthew and Patrick Rawn, their family has been farming the rich soil of the Rattlesnake Hills area of Washington State for more than half a century. In 1951, Phil Schmidt established Schmidt Orchards with 40 acres of peaches, apricots, prunes, and apples. Today, the Rawn brothers continue that legacy through Two Mountain Winery and the estate farming operation. The small family winery produces a modest 10,000 cases annually, but is poised for growth under the leadership of the Rawn Brothers who believe great wine is the result of the perfect blend of elegance and fun. November Wine Club Pairing Recipe

Stuffed,Mushrooms,With,Italian,Sausage,,Breadcrumbs,,Fresh,Sage,,Thyme,,AndStuffing-Stuffed Mushrooms

INGREDIENTS:

    • 3 tablespoons olive oil, plus more for greasing pan
    • 24 large Cremini mushrooms (about 1¼ pounds), each about 2 inches wide
    • ½ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • kosher salt and black pepper
    • 3 tablespoons unsalted butter
    • 2 small stalks celery, finely chopped (about ⅔ cup), plus 1 tablespoon minced celery leaves
    • 2 sarge shallots, minced
    • 3 garlic cloves, minced
    • 2 teaspoons finely chopped fresh rosemary
    • 1 teaspoon poultry seasoning
    • 1 teaspoon celery seeds
    • 6 ounces cornbread, crumbled into small pieces (about 2 loose cups)
    • 1 to 1½ cups grated Gruyère or Emmental cheese
    • 4 tablespoons minced fresh parsley
    • 2 large eggs

DIRECTIONS:

    1. Heat the oven to 400°F and lightly brush a large rimmed sheet pan with olive oil.
    2. Using barely moist paper towels, wipe the mushroom stems and caps clean. Carefully tear off the mushroom stems, setting them aside in a medium bowl. Set each mushroom cap on its side and slice off the excess mushroom cap that curls over the gills. The goal here is to create a flatter surface area so the mushrooms caramelize instead of steam, and so you can pile more stuffing on top. Transfer the mushroom scraps to the bowl with the mushroom stems, then transfer the trimmed mushroom caps to the sheet pan, cut-side up.
    3. Brush the tops of the trimmed mushrooms with 3 tablespoons oil. In a small bowl, stir together the garlic powder, onion powder, ½ teaspoon salt and ½ teaspoon pepper; sprinkle the mixture over the tops of the mushrooms. Flip the mushrooms so they are cut-side down, and roast until they have released their liquid and are starting to caramelize, about 15 minutes. Remove sheet pan from heat, and set aside.
    4. While the mushrooms roast, prepare the filling: Finely chop the mushroom stems and scraps or transfer them to a food processor and pulse until finely chopped (about 2 cups).
    5. In a large skillet, melt the butter over medium-high heat. Add the chopped celery, shallots, garlic, rosemary, poultry seasoning and celery seeds. Season generously with salt and pepper, and cook, stirring, about 5 minutes. Add the chopped mushrooms, season with salt and pepper and cook over medium-high, stirring occasionally, until caramelized and tender, 4 to 5 minutes. Transfer vegetable mixture to a large bowl to cool, at least 15 minutes.
    6. Once the vegetable mixture has cooled, stir in the cornbread, cheese, celery leaves and 3 tablespoons chopped parsley. Season generously with salt and pepper. Whisk the eggs together in a small bowl, then stir into the cornbread filling until combined (makes about 4 cups).
    7. Wipe the sheet pan clean, then brush again with olive oil to coat. Mound about 1 to 2 tablespoons filling into each mushroom cap, patting them gently without packing them tightly, then transfer to the sheet pan, spacing them evenly apart. Bake until mixture on top is warmed through, 10 to 15 minutes. Broil until browned in spots, 2 to 4 minutes. Let cool a few minutes, then transfer to a serving platter and sprinkle with remaining 1 tablespoon minced parsley to serve.

Sonder Field Blend

Creamy Leftover Turkey SoupCreamy Leftover Turkey Soup

INGREDIENTS:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • ½ cup chopped celery
  • 4 ounces sliced cremini mushrooms
  • 1 clove garlic crushed
  • 1 teaspoon Italian seasoning
  • 3 tablespoons flour
  • 6 cups turkey broth OR chicken, OR vegetable
  • 3 medium carrots peeled and sliced
  • ½ pound baby potatoes halved or quartered
  • ½ cup wild rice blend
  • 1 cup half & half
  • 4 cups cooked Turkey meat shredded
  • ½ cup corn
  • salt & pepper, to taste

DIRECTIONS:

  1. Cook aromatics: Heat butter and oil in large pot over medium heat. Add onion and celery and cook until softened, 4-5 minutes.
  2. Cook mushrooms: Stir in mushrooms and sauté for 3-4 minutes, until mushrooms have softened. Stir through garlic and cook for one more minute.
  3. Season: Reduce heat to medium-low. Sprinkle Italian seasoning and flour evenly over mushroom mixture, stir well for 1 minute.
  4. Add broth: Gradually pour in broth, stirring constantly, to keep any lumps from forming.
  5. Simmer: Stir in carrots, potatoes and rice. Bring soup to a boil, then reduce heat to a simmer and cook, covered, until rice is nearly done (about 20-25 minutes for parboiled rice, about 35 minutes for regular).
  6. Finish soup: Once rice is nearly ready, open lid and stir soup well. Add half and half, cooked turkey meat and corn. Stir well, then simmer over medium heat, uncovered, for 10 minutes or until heated through.
  7. Serve: Season with salt and pepper to taste, then serve immediately.
