Kung Fu Girl Riesling

Washington State

NECTAR WINE STYLE

“It takes an unconventional winemaker to make a totally unexpected dry Riesling. One night, Charles was eating Chinese takeout and watching a fight scene in a notorious martial arts film when he had an idea: a killer white wine made to be paired with Asian food.  Just like that, Kung Fu Girl was born. And it’s been kicking ass and taking names ever since.” – Charles Smith Wines

White peach, mandarin orange and apricot are delivered with a core of minerality that makes this dry Riesling shimmer with energy and freshness. Another epic vintage of Kung Fu Girl.

About the Winery:
Few winemakers have a story quite like Charles Smith. Although he was born and raised an hour from Napa Valley, California, Charles didn’t discover his love for wine until he moved to Europe. While living abroad, he managed a number of rock bands, including the famed Danish duo The Raveonettes. It was the wining and dining of a rock n’roll life on the road that sparked Charles’ passion for great wine. In 1999, while on a road trip to Walla Walla, Washington, Charles met a winemaker who convinced him to start making his own wine, true to his own story and vision. And in 2001, Charles released 330 cases of his first vintage. Eight years later, he would be named Winemaker of the Year by Food & Wine magazine and again in 2014, by Wine Enthusiast. About Willamette Valley Vineyards:
The “budwood” of Willamette Valley Vineyards began long before its founding in 1983 by vintner Jim Bernau. His Dad, a Roseburg attorney, was hired by California winemaker Richard Sommer to secure one of the first winery licenses in Oregon since Prohibition. Jim’s Dad allowed small tastes of Richard’s wine at the dinner table, lighting a path that led Jim from home winemaking to studies at UC Davis and eventually Beaune, France. In 1983, with the encouragement from winemakers making their move from California, Jim cleared an old pioneer plum orchard in the Salem Hills, hidden underneath scotch broom and blackberry vines to plant Pinot Noir. January Cheese Club: Iowa

Cheese ClubBelletoile-cheese-wheelBelletoile Triple Créme Brie Lorraine Valley, France

In 1960, Belletoile was the first triple créme Brie exported to the USA.  It sets itself apart from traditional Brie and Camembert by incorporating extra cream in the production process, resulting in a delightful, creamy, and mellow texture.  Its protective rind allows for prolonged enjoyment, as it softens and ages.  Evolving flavor profiles start out fresh and mild, then transforms into a creamier and more aromatic taste as the cheese matures.  This triple cream cheese is light, airy and mild with 70% fat. It’s more savory and buttery than a traditional brie. Enjoy with this recipe for a crostini topped with cherry jam. WINE & CRAFT BEER PAIRINGS: Pair with an unoaked Chardonnay or our January White Wine Selection. For beer, look for a crisp wheat beer, such as a Hefeweizen or an ale such as a saison.  WINESTYLES: Silky BEERSTYLES: Crisp & Clean, or Sour, Tart & Funky Information and photo © Belletoile – All Rights Reserved.

Dark Red Semi Sweet

Piedmont, Italy

NECTAR WINE STYLE

This deep red wine has an abundance of red fruit aromas, with wild berry notes lifted by its crisp acidity. Sweet aromas of ripe red fruits that demonstrate the hallmark of the Brachetto grape. Made with 100% natural fruit and gluten free.

WINE DETAILS:

  • Analysis: 5% alcohol / volume
  • Varietal: 95% Brachetto, 5% Blueberry & Raspberry fruit infused
  • Appellation: Piedmont, Italy
  • Serving Hints: Serve slightly chilled on its own or with antipastos, prosciutto, fish and white meats

WineStyles’ Wine and Cheese Pairing: Pair with a blue cheese such as a gorgonzola. Learn more about our wine and cheese pairings here.

Winemaker Notes:
Basic Brachetto is playfully fizzy with two atmospheres of pressure & is known for having low alcohol at 5.0%, a natural range of sweetness. After fermentation, the residual sugar remains relatively high, making the wines sweeter than dry wines. Because the extra sugar stops fermentation early, non-fortified sweet reds tend to be lower in alcohol than dry wines.

December Sweet Club: Iowa

Sweet Wine ClubQuinta-do-noval-late-bottle-vintage-bowQuinta do Noval
Late Bottled Vintage Unfiltered

Douro Valley, Portugal

NECTAR WINE STYLE

“This unfiltered LBV presents a deep ruby color and has an intense and elegant aroma. Great aromatic richness and a mouthful of ripe black fruits and spices. It has fine but solid tannins that gives it a structure of great amplitude and a long and flavorful finish. It is made to be enjoyed as soon as it is bottled.” – Carlos Agrellos, Technical Director

This wine is a remarkable example of the Noval style. Treated exactly like a Vintage Port with only noble grape varieties that are sourced exclusively from estate vineyards, trodden by foot and unfiltered. This expression differs in its extended aging, seeing five years in casks instead of the typical two years for Vintage Ports. Definitely an LBV with a difference, this wine has fine structured tannins, great freshness and purity of fruit. It is delicious to drink today, but will age beautifully in its bottle.

WINE DETAILS:

  • Analysis: 19.5% alcohol / volume
  • Varietal: Blend of six traditional Portuguese grape varieties: Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca and Tinta Cão.
  • Appellation: Douro Valley, Portugal
  • Aging: Matures for 5 years in French Oak
  • Fermentation: Grapes were trodden by foot to obtain the must, then during fermentation macerate to obtain the best possible extraction in the “lagares”, the traditional stone vats from the Quinta
  • Farming: The vineyard is farmed sustainably
  • Critical Acclaim:
    • 90 points – Wine Advocate
    • 90 points – Wine Enthusiast

Vineyard:
All grapes come from the Quinta do Noval vineyard, in Pinhão – the heart of the Douro Valley. A blend of these higher quality varieties are planted throughout the vineyard due to the major replanting project of the early 1990s. At this age, the fruit at the estate is entering the prime of quality.

Vintage Note:
2014 is characterized by heavy rainfall that was well distributed throughout the year. With reasonable temperatures in winter and a fresh month of August, the vines were able to maintain a healthy appearance, with lots of leaves throughout the cycle; this protected the grapes from the peaks of heat during the summer, safeguarding the health of the bunches. At the end of August, the harvest was looking wonderful, with beautiful, healthy grapes and an excellent sugar and acidity balance, ideal for making great Port.

WineStyles’ Wine and Cheese Pairing: This LBV Port from our ‘Nectar’ section will pair well with a strong cheese, such as a blue cheese. Learn more about our wine and cheese pairings here.

About Quinta do Noval:
Open since 1715, Quinta do Noval is one of the oldest Port houses known around the world. Today, Quinta do Noval is part of the international viticultural group of AXA Millésimes. It is unique among Port houses in that most of the Ports are made from estate-grown fruit and all of the vintage Noval wines are from the single Quinta Do Noval vineyard on magnificent old terraces. Their team is devoted to looking after their great vineyard terroir, and strive to make wines worthy of the Quinta do Noval name every year.

December Cheese Club: Iowa

Cheese ClubAlpha-Tolman-Cheese-ImageJasper Hill Farm Alpha Tolman Greensboro, Vermont

Alpha Tolman has a buttery, fruit and nut flavor when young, developing bold meaty, caramelized onion flavors as it matures. The texture is dense and pliant, easily portioned and ideal for melting. Curds are cooked and pressed before being aged for 8-11 months to achieve a tight, elastic texture and robust, complex flavors. The texture, aesthetic, and flavor make Alpha an ideal choice for fondue or onion jam. For a satisfying and novel meal, follow the lead of Swiss/French raclette: melt it onto a plate of fingerling potatoes, cured meat, and natural sour pickles. HISTORY: Alpha Tolman is a Jasper Hill original, inspired by classic Alpine cheeses of Europe. Its name pays homage to Mr. Alpha Tolman, a philanthropic dairy farmer responsible for – among other notable works – building the town library in 1900. Alpha’s grandfather, Enoch Tolman, was an original settler of Greensboro, Vermont. WINE & CRAFT BEER PAIRINGS: Try pairing with a robust Ale or other bock beers, or plummy red wines, such as a Barbera or Cabernet Franc. It’s not a brie, it’s not a blue. This creamy, soft ripened cheese has a rind that is bloomy and white, while the paste is soft and creamy with flecks of blue. It’s a nice way to introduce someone to a blue style cheese as the flavor is mild and not overwhelming. Use this cheese when making our December Secondary Red wine pairing recipe. faultline-cheese-central-coast-creameryCentral Coast Creamery Faultline Paso Robles, California

Faultline is Central Coast Creamery’s newest addition. This cow’s milk cheese was the winner of “Best of California” at the 2023 California State Cheese Competition. The addition of Alpine cultures results in a cheese that has the sharp and mineral taste of a cheddar, but sweetness and nuttiness of an alpine style cheese. The paste has an initial sweet note up front, and a fermented fruit note near the rind. It has a creamy texture with distinct bits of crystallization. WINE & CRAFT BEER RECOMMENDATIONS: For wine, pair with a Pinot Noir. For beer, reach for an Amber Ale. WINESTYLES: Mellow BEERSTYLES: Malty ABOUT CENTRAL COAST CREAMERY: Located near California’s coast in Paso Robles, Central Coast Creamery is gaining momentum in the domestic artisan cheese category. At the helm is Reggie Jones, a veteran of the dairy industry, who has worked in various aspects of quality control, production management, whey refining and sales of cheese cultures and enzymes. After considering their next venture, Reggie’s family decided to make the move to California’s Central Coast, well-known for its support of artisan foods and wineries. Looking back into the region’s history, one will find that the area was once home to a number of dairies. However, during the 1970’s, most of the region’s independent dairy farms lost their steam, and were extinct by the end of the decade. The Jones family, looking to rejuvenate these roots, started Central Coast Creamery. In true California spirit, all of their cheeses are made in primarily handmade, small batches using locally-sourced milk free from artificial growth hormones, and aged on pine racks. NECTAR WINE STYLE

Pitulé Moscato d’Asti is a classic semi-sweet sparkling wine. It is yellow straw in color with gold reflections. It is deliciously sweet with bright, fruity grape flavors, a refreshing, yet delicate honey and peach finish, and a slight spritz.

  • Varietal: 100% Moscato
  • Appellation: Moscato d’Asti DOCG, Piedmont, Italy
  • Vinification: Grapes are gently pressed and the juice is kept cold to prevent total fermentation. This retains a small amount of residual sugar in the wine.
  • Food Pairing: Classic wine for desserts and fruit. Served chilled.
  • Critical Acclaim: 90 pts. James Suckling – 2020

WineStyles’ Wine and Cheese Pairing: Sweet wines from our ‘Nectar’ section will pair well with any rich, soft cheeses such as a goat’s milk cheese. Learn more about our wine and cheese pairings here.

ABOUT THE WINERY:
Pitulé is produced by the Sperone family who have been making affordable premium wines for four generations. In 1911, Antonio Sperone opened a small wine shop in Torino where he sold bulk wine directly to consumers. Unsatisfied with the quality and price of the local wine, Antonio started his own winery in Puglia and built a bottling facility in Torino. He was soon able to offer his customers quality wines at prices everyone could afford. Sadly, it was destroyed when the city was bombed in WWII. The winery in Puglia survived the war and enabled Antonio’s grandson Giacomo to open a new facility in 1965 near Milan where he produced vermouth, sparkling wines, spirits and fine wines. In 1983, the family purchased 75 acres of prime vineyards in Piedmont and built the current winery in the small town of Mombaruzzo just outside Monferrato.

Bubbly Sparkling Rosé
Penedes, Spain

NECTAR WINE STYLE

With hues of Honeycrisp apple and scarlet, this wine has a strawberry mousse and a petillant style of bubbles that are slightly softer than traditional sparklers. There are notes of sweet red berries and a red cherry conserve on the nose. The palate highlights flavors of strawberry jam with the added depth of red cherries and currants. The fruit sweetness is balanced with the crisp refreshing tang of the bubbles.

  • Blend: Macabeo, Parellada, Xarel-lo, Carignan
  • Elaboration: Skin Contact Method. According to Methode Ancestrale – a traditional method of making sparkling wine that is, in fact, the world’s most ancient. The wine is bottled before the primary fermentation is finished, delivering a lower pressure, lightly sparkling wine in the petillant style. The wine is finished without the addition of secondary yeasts or sugars.

ABOUT THE WINERY:
“After a fateful trip to Australia in the late 90’s, Dan Phillips was hooked on Grenache. There to publish a story about Shiraz for Food & Wine, shortly after, Dan invested his life savings in a container of Shiraz and was off and running. Grenache soon took over his life. Dan purchased all the Australian Grenache he could from Northern Barossa. This was around the early 2000’s when Grenache was looked down upon, mainly because people associated Grenache with White Grenache, a grape used to make cheap, sweeter wines. Stuck with 1000’s of cases of Grenache-labeled wine that he could not sell, Dan had a problem. Not one to shrink from a challenge, he enlisted the help of world-famous font designer, Jeff Keedy to help produce a new brand for his beloved Grenache. After hours of brainstorming (and numerous bottles of wine) Jeff seized on an idea of Dan’s to call his new brand, Bitch. According to Dan, “Bitch is an ugly sounding, and looking, harsh word. His (Jeff’s) challenge was to make it beautiful. He decided to create a custom font for Bitch.” The Bitch font was created (left) as well as the dagger in the heart logo, which Dan believes is just as responsible for the success of the brand as the word. The word was left to exist on its own to allow consumers to bring their own experience to it. To sum it all up, Dan says, “Bitch is a verb, to bitch about life, which is our logo, the dagger in the heart, and the essence of wine drinking as it is the essence of blues music and life itself. It is WHY we drink wine. As I say, ‘life’s a bitch and then we drink.’” – Grape Expectations

fromager-d-affinois-le-fromagerFromager d’Affinois Le Fromager Rhône-Alpes, France

Similar in appearance to a brie cheese, both the white rind and the creamy interior of Le Fromager are milder in flavor. Made by ultra-filtration, a relatively modern process that claims a very high percentage of nutrients and butterfat from the milk during the making of the cheese. The ultra-filtration gives the cheese a silky-satin texture that many connoisseurs really enjoy. In addition, the cheese has a clean, rich and creamy taste.  It’s a crowd pleaser for sure! Best enjoyed when the rind starts to bulge, and the center is oozing with rich, buttery aromas. It matches beautifully with crispy, crunchy Lavosh crackers and a bit of quince paste, or fig, prune and walnut log. Its oozy, spreadable texture will make an awesome grilled cheese indulgence. PAIRING RECOMMENDATIONS: Bubbles are a must to pair with this cheese. It can be as simple as sparkling water or wine, or go all out with Champagne! It will also pair beautifully with this month’s Riesling as well as any crisp and clean beer.
