Named after the port of Mahón on the Minorca (or Menorca) Island in Spain, this cow’s milk cheese is produced by various small farmers organized in a cooperative. This semi-hard artisan cheese is pale yellow in color and has a nutty and sweet aroma. It is buttery, fruity, sharp and salty in taste. During maturation, the cheese is hand rubbed with butter, paprika and olive oil to give it its traditional orange exterior. The Mahón cheese is sold at different ages ranging from 2 months to 10 months. This cheese was awarded with Bronze and Silver medals at the 2014 and 2011 World Cheese Awards. Named after the village of Idiazabal, this Smoked Cheese is a traditional farmhouse hard cheese made from raw sheep’s milk in the Basque and Navarra regions or Northern Spain. In the old days, the Basque shepherds lived in small mountain huts, and could only age their cheeses within their stone chimneys – giving the cheese its traditional smokey flavor. Today, the cheese is produced in more modern ways, however, the process is still all-natural to give the cheese it’s smokiness – usually slowly ripened and naturally smoked with beech or cherry wood. Its compact texture and smokey flavor are reminiscent of burnt caramel and bacon. VINIFICATION:
The vinification of rose wines is characterized by a short and cold maceration. The juice is then removed from the skins where it has picked up pale and delicate red hue without extracting too much tannin and retaining the natural freshness and aromatic complexity of the wine. Fermentation takes place at the controlled temperature of 64ºF. After a period of storage, a careful coupage follows to obtain the Moscato Rosé Frizzante cuvée. The base-wine is transferred to tanks where exact amounts of must and selected yeasts are added to obtain the desired levels of pressure, alcohol and residual sugar (Martinotti/Charmat method). This is followed by cold stabilization.

Bellafina comes from the union of two Italian words – “bella” meaning “beautiful” and “fina” meaning “fine” or “delicate”. Their wines are a perfect reflection of the Italian lifestyle; lightly sparkling and easy drinking, making for the perfect pairing to any cuisine. Bellafina has been bottled by Casa Vinicola Botter since 1928. Today, the Botter family is managed by the family’s third generation. They continue to produce wines under environmentally friendly policies and with innovative production techniques, specializing in wines from Veneto.

The Tuscan Pecorino DOP is a cheese that is protected by the Denomination of Origin, which means it is produced according to strict disciplinary rules according to tradition of that geographical location. This fresh cheese has undergone a short seasoning period, making it soft and delicate on the palate. The smell is fairly strong, with notes of buttermilk and fresh hay. On the palate, the consistency is tender and creamy; it is fairly mild, well-rounded and balanced with a hint of tang. Serve with a light salad or with a bit of bread for a delicious lunch. Since the 12th century, Fontina Val D’Aosta is a classic Italian cheese that is traditionally made with unpasteurized cow’s milk and usually aged 90 days. This Italian Fontina has a natural rind that turns tan to orange-brown as it ages. The interior is a pale cream color with holes known as “eyes”. Rich and creamy in flavor, with more notes of nuts as it ages. This is a great cheese for fondues, Italian dishes, dishes with wild cherries and truffles. The Late Bottle Vintage (LBV) Single Vineyard Port is a remarkable example of the Noval style. It is treated exactly like a Vintage Port, with the use of only noble grape varieties sourced exclusively from estate vineyards, trodden by food and unfiltered. Unlike other Vintage Ports, however, this LBV Port goes through extended aging of five years in casks (instead of the typical two years). It has fine structured tannins, great freshness, and purity of fruit. 

Analysis: 19.5% alcohol / volume
Varietal: Blend of six traditional Portuguese grapes – Touriga Nacional, Touriga Franca, Tinta Roriz, Tinta Barroca and Tinta Cão.
Fermentation: Grapes were trodden by foot to obtain the must, then during fermentation, they were macerated to obtain the best possible extraction in the “lagares”, the traditional stone vats from the Quinta.
Aging: Matures for 5 years in French Oak
Farming: The vineyard is farmed sustainably
Appellation: Douro Valley, Portugal

VINTAGE NOTE:
2014 is characterized by heavy rainfall that was well distributed throughout the year. With reasonable temperatures in winter and a fresh month of August, the vines were able to maintain a healthy appearance, with lots of leaves throughout the cycle, which protected the grapes from the peaks of heat during the summer, safeguarding the health of the bunches. At the end of August, the harvest was looking wonderful, with beautiful healthy grapes and an excellent sugar and acidity balance, ideal for making great Port.

ABOUT THE VINEYARD:
All grapes come from the Qinta do Noval vineyard in Pinhão – the heart of the Douro Valley. Due to the major re-planting project of the early 1990’s, these higher quality varietal blends are planted throughout the vineyard. At this age, the fruit at the estate is entering its prime quality.

WINEMAKER NOTES:
The Moscato grapes for this wine come from vineyards located in the Santo Stefano Belbo villages, at 200 to 300 ft. above sea level. Vinification is via autoclave, according to the Charmat Method, until it reaches 5.0% alcohol. Then, wine undergoes cold fermentation and ageing in stainless steel vats for one month, after which time it is blended with the cranberry pulp and bottled.

Also known as Black Betty, the Brabander Reserve is produced by world-renowned affineur, Betty Koster of Amsterdam’s L’Amuse Cheese Shop. Betty hand-selects a very limited number of wheels of Brabander (which are normally aged for 6-9 months) and ages them an additional 6 months, creating this ‘black-label’ version of her goat milk gouda that is only available from November to January. This Brabander Reserve has brown-buttery notes and a creamy bite with additional rich flavors of licorice, caramel, and pineapple. Each shop is only allowed a certain number of wheels each year… so, when it’s gone, it’s gone until next year! Vinification:
Each variety is harvested and vinified separately, allowing the grapes to reach perfect ripeness. Following de-stemming, the must is macerated with the skins allowing it to retain maximum fragrance. The must is kept at a low temperature until fermentation, at which point the varieties are blended together. When the wine has reached an alcohol content of 8%, fermentation is interrupted by lowering temperature to approximately 32°F leaving a high level of natural residual sugar.
Notable: Vegan, gluten free
Serving Suggestions: Highly versatile, the Bianco Dolce is a great aperitif and equally great with white meats, classic Italian dishes, and spicy foods. Enjoy well-chilled.

The name, Pitchfork, references the old Cheddar-making tools used to toss the curd while mixing in the salt. This practice is something that Neal’s Yard Dairy continues today. Historically, most West Country cheesemakers produced Cheddar before embarking on a cheese more commonly associated with their friends across the Welsh border: Caerphilly. Cheddar takes over a year to mature, while Caerphilly can be turned around in a month of less, so in leaner times, particularly between the first and second world wars, Caerphilly sales provided a steady flow of income while the Cheddar took its time to age. The Trethowans, however, have gone about this the other way around. While based in their home country of Wales, they made their name producing their signature Gorwydd Caerphilly, but when they moved across the border to a dairy farm just up the road from the Somerset market town of Cheddar, they felt compelled to begin producing a clothbound Cheddar alongside it. The milk comes from their herd of Holstein and Jersey cows, which graze on the farm’s organic pastures. The Cheddar is handmade in small batches to a traditional farmhouse recipe. – Neal’s Yard Dairy

Although the loamy or clay soils of Lincolnshire are usually ill-suited to dairy farming, the lush pastures of Simon Jones’s Ulceby Grange farm sit on chalky land – and it is this, combined with the mild climate, that has made Lincolnshire Poacher one of very few cheeses to be produced on the east coast of the country. Though the farm has been in the family since 1917, the Jones family didn’t start making cheese until the 1990s, when a young Simon returned from agricultural college. Eager to turn his hand toward cheesemaking, he enlisted the help of renowned Welsh cheesemaker Dougal Campbell to develop a recipe, and the result – which incorporates the hallmarks of a hard mountain cheese into a traditional West Country Cheddar – proved so popular that customers at the local cheese shop initially had to be rationed to quarter of a pound each. Simon’s brother Tim has since joined him on the farm, and in 1995 Simon employed a full-time cheesemaker, Richard Tagg. Today, it is Jon Collins whose job it is to transform milk from their 230-strong herd of Holstein Friesians into cheese on an almost daily basis. Once the curds have been moulded, salted and pressed for 36 hours, the resulting cheese truckles are matured on wooden boards and turned regularly to ensure even maturation. The brothers recently invested in a robot for turning the truckles, improving consistency still further. Though some Lincolnshire Poacher will be aged for up to 36 months, we believe the finest tasting truckles are between a year and 24 months old. – Neal’s Yard Dairy ABOUT NEAL’S YARD DAIRY: Founded in 1979 by Randolph Hodgson, Neal’s Yard Dairy started as a small shop tucked away in corner of London’s Covent Garden, selling and making Greek-style yogurt, crème fraîche and a couple other cheeses. This Moscato is bright lemon-gold in color with a light pearliness in its appearance. The nose is clean and youthful with heavy floral and fruity notes of mandarin peel, honeysuckle and sweet orange blossom. The palate has a sweetness that coats the mouth, then refreshes itself with the airy bubbles. It is luscious and harmoniously balanced.

Delightfully fizzy and slightly sweet, an irresistible combination.

The third generation Tintero family continues the traditions of winemaking in Gramella. “Sori” in Piedmontese indicates the south-facing slope of a hill, that pampers the grapes with 20% more sunshine. Cantine Elvio Tintero are the only producers to sustainable farm and commercially bottle from this striking single-vineyard, limestone amphitheater. Vines were planted in the late 1980’s. Grapes are harvested and pressed, then kept at low temperatures in stainless steel tanks to provide the freshest wine possible.

ABOUT THE WINERY:
The winery’s legacy began in 1900 when a Frenchman named Pierre Tintero set out to Piedmont in search of work. Here, he found a job helping a widow, Rosina Cortese with her small estate, and just a few years later the couple fell in love, married and continued to grow their estate. Passed down from generation to generation, the family eventually took over the adjacent vineyard plots and began growing a small production of Moscato. It wasn’t until 1980, when grandson, Elvio, began experimenting with frizzante wine production, allowing the family to take advantage of the grape’s special affinity to the local terroir.
