Classic Vintage Brut is considered the flagship wine of the estate and epitomizes the family’s dedication to excellence. Its quality and finesse evoke memories of Champagne, yet its flavors distinctly represent Sonoma County’s Russian River, Green Valley, and especially Iron Horse. Delightful and complex aromas of rising dough, orange marmalade, and baked apple lead to a perfectly balanced palate, showcasing ripe red apple, mandarin orange, and hazelnut. The intricate flavors and textures are matched only by the pure pleasure of its enjoyment.

Fermentation: Gently pressed as whole clusters yielding base wines of great delicacy. A long, cool ferment at 62º to 65ºF retains vibrant fruit esters. Individual lots of Pinot Noir and Chardonnay with a shy nose and a touch of fruit are blended to create a sparkling wine that shows rich, nutty, and toasty aromas with a hint of fruit and wonderful complexity. The dosage for this wine is 8 mls of BdB LEX, 8 mls of Rued Chardonnay, 2 mls of 1986 LD Blanc de Blancs.

Vineyard:

  • Soils: The Iron Horse estate is in the heart of Green Valley’s cool and foggy climate, 13 miles from the Pacific Ocean. The predominant soil-type is called “Gold Ridge”, a sandy loam that has excellent drainage and is perfectly, inherently balanced, making it one of the most coveted soil types, especially for growing Pinot Noir.
  • Farming: The certified sustainable estate features 164 acres under vine, planted exclusively to Chardonnay and Pinot Noir across a patchwork of gentle, rolling hills. Each of the 39 blocks has been planted with site-specific rootstock and clonal selections, enabling Iron Horse to farm, harvest, and vinify each block separately.

Founded in 1976 by Audrey and Barry Sterling, Iron Horse has become a prominent name in American sparkling wine. Primarily composed of Chardonnay, with some Pinot Noir, this Brut is dry and fresh, with a long elegant finish, possessing crisp citrus flavors with hints of green apple, mandarin orange and brioche. Delicious on its own or the perfect foundation for memorable mimosas and other classic cocktails such as their signature Sonoma 75. This sparkling wine pairs perfectly with crab cakes, sautéed shrimp or sushi.

Piper Sonoma Brut has a pale gold color, petite bubbles and a rich, creamy texture. Sonoma’s warm summer days and cool nights prolong the growing season, producing flavorful grapes with fresh acidity. The fruit is harvested by hand in small containers and whole clusters are pressed to bring out pure aromas and flavors.

In the Vineyards:
With nearly forty years of experience in Sonoma County, the winemaking team source from more than 20 growers, some of whom, like the Greene, Young and Ledbetter families, have been supplying grapes for more than three decades. Many growers have adopted voluntary no-till farming practices, with a strict adherence to hillside ordinances. Sustainable agriculture and integrated pest management techniques have been integrated and organic or naturally derived fertilizers are utilized, while composted grape material is used as fertilizer to increase water efficiency and help build soil structure.
 
In the Cellar:
Chardonnay, Pinot Noir and Pinot Blanc fruit is hand picked and brought directly to the winery. Each parcel is pressed and fermented separately, creating an extensive selection of base wines to choose from. Winemaker Keith Hock then tastes each component and selects those base wines that show potential to produce exceptional wine. The cuvée is placed en tirage for secondary fermentation in the bottle prior to disgorgement. Finally, a small percentage of older reserve wine is included in the liqueur d’expedition adding further complexity and texture.

The Piper Sonoma house style is focused on precision and attention to detail. Each wine displays a balance between fruit expression, complexity and texture, to create wines that are immediately approachable and can further develop with bottle aging.

The balance and freshness of Crémant d’Alsace comes from the subtle match of four grape varieties: Pinot Blanc, Pinot Gris, Pinot Noir and Chardonnay.

Aging is done “sur lie” over 14 to 18 months with daily bottle rotation, going from a horizontal to vertical position, in order for the yeast deposit to accumulate in the neck of the bottle. At the time of disgorgement, the neck is frozen and enclosed in ice, the sediment is ejected by natural pressure, after which the bottle is corked and wired.

DAUTEL WINERY:
Since 1510, there has been a long tradition of winemaking in the region. Situated in the heart of Württemberg, Dautel produces wine in and around Bönnigheim and alot has changed in the course of 500 years.  After Ernest Dautel graduated from Geisenheim University, he left the local cooperative.  This was quite an affront as his father had been the founding member, but Ernst Dautel realized the enormous potential of his vineyards and wanted to produce great wines equal to those he had tasted during his travels in Italy and France.

In 1985 Ernest started maturing his best red wines in barrique barrels. He produced blended wines, as well as single-varietal wines and fought for the permission to plant Chardonnay vines. Admitted as a member of VDP, the Association of German Quality Wine Estates in 1999, Ernest Dautel’s accomplishments gained wide recognition and awards.  Today, the Dantel family continues their pursuit of excellence and focus on quality-oriented work in the vineyards and organic cultivation.  Greening soil between vine rows and using beneficial species increases the biodiversity of the vineyards and stabilizes the ecological system. All vineyards are harvested by hand, critically selecting the best grapes. This results in several rounds of harvesting in each vineyard, yielding top-quality wines. The Chandon Brut Rosé is vivacious and juicy. It’s a bright, dry Rosé with a refreshing lightness – perfect for sipping all year. On the eye, it is vibrant pink with an energetic bead and mousse. The nose is extremely fruity with subtle floral, toasty, mineral and brioche notes. On the palate, there are flavors of strawberry, red cherry, raspberry tart, red currant, pomegranate and notes of pastries or scones.  The creaminess, acidity and finish are all perfectly balanced with very little sweetness.

Grapes for Brut Rosé were sourced from multiple cool-climate appellations, ensuring complexity and consistency in this vibrant, smooth style. Grapes were harvested at night to keep the fruit cool and preserve freshness. Harvest begins early August to retain acidity and capture Chardon’s signature vibrancy.  State-of-the-art presses lower pressing times, limiting the the juice’s contact with the grape skins to avoid bitterness.  Primary fermentation takes place in stainless steel tanks.  The second fermentation occurs in the bottle and the aging process begins. A minimum of 12 months aging imparts a creamy complexity balanced by juicy red fruit notes.

VINEYARDS:
The Brut Prestige is a blend comprised of the best selected grapes from different grower locations across the Napa appellation. Each harvest, the grapes are hand-picked in the mornings to ensure they arrive to the winery in perfect condition.

WINEMAKING:
Fermentation is completed in stainless steel tanks at cool temperatures, this preserves the fruit’s intensity and freshness. A few select logs are aged in French oak barrels to add depth, complexity and spiciness. From there, the finished blend goes through a second fermentation with about 18 month’s yeast aging, adding complexity, and layers of yeast dough and creaminess. Next, the wine is disgorged in brut style and part of the dosage is added back after being aged for another 3 months to balance the acidity.

VINEYARDS:
Each harvest, the Brut Rosé blend is selected from the best grapes from up to 50 grower locations throughout the Napa appellation. Similar to Mumm Brut Prestige, the grapes are hand-harvested in the early mornings to ensure they arrive at the winery in perfect condition.

WINEMAKING:
Each individual vineyard lot is fermented separately at cool temperatures in small stainless steel tanks, this helps to preserve the individual flavors, freshness and intensity of each fruit. A few select lots are aged in French Oak barrels to create further depth and complexity to the wine. To create the coral-pink color of the wine, a small amount of red Pinot Noir is added to the blend before being bottled. From there, the wine is yeast aged for an average of 18 months to add further complexity and creaminess to the wine. Next, the wine is disgorged and a dosage is added back to balance out the wine’s acidity. The dosage includes a Pinot Noir fermented in traditional Burgundian fashion, creating an extra layer of depth, color and robust fruitiness to the wine.

French for “white of black”, Blanc de Noirs describes a sparkling wine made from Pinot Noir grapes that are gently pressed and its juice runs off the skins. Gruet’s Blanc de Noirs NV was first released in 1990. Following the success of their Brut release, Gruet Winery wanted to add a non-vintage wine using Pinot Noir, similar to the classic blends of NV Champagnes.
