Ridge Vineyards, California

The history of Ridge Vineyards begins in 1885, when Osea Perrone, a doctor who became a prominent member of San Francisco’s Italian community, bought 180 acres near the top of Monte Bello Ridge. He terraced the slopes and planted vineyards; using native limestone, he constructed the Monte Bello Winery, producing the first vintage under that name in 1892. This unique cellar, built into the mountainside on three levels, is Ridge’s production facility. At 2600′, it is surrounded by the “upper vineyard.”

“We decided to farm organically because we believe it leads to better grapes and higher quality wines. This approach in the vineyard, plus our traditional approach to winemaking, will provide the finest possible wines for our customers.” –  Paul Draper, CEO/winemaker.

13zls-bottle-shotRidge-Vineyards-LogoLytton Springs, in Sonoma County, became part of the Ridge estate in 1991. A quarter century’s experience with this vineyard had convinced us that it was an exceptional piece of ground. Forty consecutive vintages of Geyserville attest to yet another stunning combination of location and varietals. Though born in the early sixties to the post-Prohibition world of modern California winemaking, Ridge relies on nature and tradition rather than technology. Our approach is straightforward: find intense, flavorful grapes; intrude upon the process only when necessary; draw the fruit’s distinctive character and richness into the wine.  While Ridge is by no means a large grower,  they are the largest grower of organically farmed grapes in Sonoma County, and in the Santa Cruz Mountains appellation.

Silverado Vineyards
Napa, California

Silverado_Tasting_Wine

The winery’s name, Silverado, comes from an abandoned mining town at the top of Napa Valley.  A century later, the widow, daughter and son-in-law of Walt Disney began carefully laying the foundation of what would be come Silverado Vineyards in 1976. A few years later, they also acquired a vineyard in the Stags Leap District – known for the quality of it’s Cabernet Sauvignon. Silverado Vineyards now farms six distinctive, family owned vineyards in the Napa Valley and Carneros, three of which are historic sites from these proprietor owned vineyards. Please join us for a Winery Spotlight tasting, featuring Silverado wines.

The winegrowers . . . are perhaps the most fascinating aspect of terroir . . . Starting with a vision, they activate the links that connect Earth with vine and fruit, guide the transformation of fruit into wine, oversee its maturation, and only then present the liquid that completes the circle, connecting us with the Earth from which the wine arose.” –  Jonathan Swinchatt and David G. Howell,  The Winemaker’s Dance.

Good wine is about people, from every hand that helps create Silverado’s Cabernet to every current and future friend who lifts a glass of  wine around the dinner table.   100% of the estate is sustainability farmed: 15% is farmed organically; 70% is Certified Napa Green; 50% is preserved in the Land Trust exclusively for open space and agriculture use. 50% of the winery is powered by solar panels. Proud of their accomplishments, Silverado is just getting started.  They also donate time, money and wine to over 70 organizations annually that need our help to keep their communities safe, healthy, learning and enjoying the pleasures of artistic endeavor.

For Silverado, sustainable is not simply a farming method. It is an approach to all of their activities. It is the driving force behind everything they do to ensure that this winery and estate are here for generation of customers and neighbors to enjoy.  Please join us for a special tasting event with Silverado.

Central Coast Sauvignon Blanc pairing recipe

Sauvignon Blanc
Central Coast, CA

With so much terroir diversity in California, there’s a perfect place to grow nearly every kind of grape. In fact, you’ll find more than 100 varieties, giving  winemakers the latitude to create complex varietals and unique, expressive blends. Since the 1700’s, immigrants from all over the world have settled in California, bringing their vines and their skills with them. Hard-earned secrets of soil, climate and vine have been passed from generation to generation, providing California wine with its unique legacy and spectacular range. Always crisp and refreshing, California vintners like to put their own spin on this classic varietal, with flavors that range from vibrant lemongrass and herb, to tart green apple, round melon and fig. Enjoy this wine with oysters, gnocchi with Gorgonzola sauce, or a dessert pastry.

DougFrost“Sauvignon Blanc doesn’t have to be grassy like so many New Zealand versions of the grape; California has been growing the grape for longer and offers a more elegant style. Instead of green beans or asparagus (as the Kiwis love it), this shows melons, citrus, white pepper, limes and a bit of lemongrass.”  – Doug Frost, Master Sommelier and Master of Wine.

Varietal Blend:  100% Sauvgnon Blanc

mahiWood Fired Mahi

MAHI INGREDIENTS:
• Two, 8 oz pieces mahi
• Salt and pepper
• 2 tbsp olive oil

DIRECTIONS: Heat a medium sauté pan with 2 tbsp olive oil in a wood fire (an oven will work just fine). The smokiness adds a wonderful flavor. Meanwhile season mahi lightly with salt and pepper.  Place mahi gently in preheated pan and place back into oven for about 2 minutes. Check sear and flip once golden brown. Finish cooking in oven for about another 5-8 minutes. Remove and set aside.

LEMON BEURRE BLANC INGREDIENTS:
• 1 to 2 shallots, chopped fine
• 8 oz white wine
• 2 oz lemon juice
• 1 tbsp heavy cream
• 12 tbsp cold unsalted butter, cubed
• Salt and pepper, to taste

DIRECTIONS: Combine the shallots, white wine, and lemon juice in a non-reactive saucepan over high heat and reduce to 2 tbsp.  Add the cream to the reduction. Once the liquid bubbles, reduce the heat to low.  Add the butter, one cube at a time, whisking first on the heat and then off the heat. Continue whisking butter into the reduction until the mixture is fully emulsified and has reached a rich sauce consistency. Season with salt and pepper.

QUINOA: Cook about 1 ½ cups quinoa according to package instructions.

GRILL ASPARAGUS INGREDIENTS:
•  12 asparagus spears
• 2 tbsp olive oil
• Salt and pepper to taste

DIRECTIONS: Lightly rub asparagus with oil. Season to taste with salt and pepper. Place asparagus on preheated grill and allow to cook until slightly charred.  To serve, place quinoa on plate, top with mahi, beurre blanc and arrange asparagus nicely around circumference of dish. Garnish with lemon wedge if desired. Recipe compliments of Chef Brian Reigle of Terravant Winery Restaurant.

Alexander Valley Vineyards
Sonoma, California

AlexanderValley_VineyardSonoma County’s Alexander Valley was mostly prune orchards and pastures when, in 1962, Maggie and Harry Wetzel purchased a large portion of a homestead built by Cyrus Alexander, the valley’s nineteenth century namesake. Here, in a rural community of family farms and ranches, the Wetzel family settled. They raised livestock, cultivated bountiful gardens and restored Alexander’s original home, making it the center of family life.
With an eye to their neighbors in nearby Napa Valley, the Wetzels boldly planted premium grape varieties, among the first in the area. Then the family built a small winery and Hank Wetzel, oldest son of Maggie and Harry, produced Alexander Valley Vineyard’s first wine in 1975.  His wife Linda set up the books and managed the winery office.  AVV quickly established a reputation for estate grown wines with distinctive varietal character. Acclaimed for luscious Chardonnay and elegant Cabernet Sauvignon, Alexander Valley Vineyards brought recognition to the appellation and became a leading winery in Sonoma County.
AlexanderValley_Winery
Today the Alexander Valley is a prominent appellation known worldwide as the source of rich, age worthy wines. As the twenty-first century begins, the Wetzel Family Estate grows fourteen grape varieties, on diverse sites stretching from the banks of the Russian River up onto the hillsides. Each grape variety is matched to a specific soil type and exposure. Vineyard Manager Mark Houser and Winemaker Kevin Hall work as a team to maximize fruit flavor in the vineyard and to create balanced wines that capture the grapes’ varietal characteristics.

2015 marks the family’s 53rd year on the historic property and will be the winery’s 41st vintage.  The 3rd generation of the Wetzel Family produces award winning wines that are sold throughout the United States and was voted Sonoma’s Best Winery in 2011 by Bay Area wine lovers. Cabernet Sauvignon, Chardonnay, and Merlot constitute over one-half of total production.  Other varietals include Zinfandel, Pinot Noir, Sangiovese, Cabernet Franc and Syrah.  Proprietary wines include CYRUS, their limited production Bordeaux style blend, Gewurz, and trio of Zins: Temptation Zinfandel, Redemption Zinfandel and Sin Zin, their voluptuous Alexander Valley Zinfandel.

Bonny Doon Vineyard

BDV_logo_300dpi-900x900While Bonny Doon Vineyard began with the (in retrospect) foolish attempt to replicate Burgundy in California, Randall Grahm realized early on that he would have far more success creating more distinctive and original wines working with Rhône varieties in the Central Coast of California. Bonny-Doon-BlancThe key learning here (achieved somewhat accidentally but fortuitously) was that in a warm, Mediterranean climate, it is usually blended wines that are most successful. In 1986 Bonny Doon Vineyard released the inaugural vintage (1984) of Le Cigare Volant, an homage to Châteauneuf-du-Pape, and this continues as the winery’s flagship/starship brand.  Since then, Bonny Doon Vineyard has enjoyed a long history Shelftalker-NV-CigareBlanc.qxdof innovation – the first to truly popularize Rhône grapes in California, to successfully work with cryo-extraction for sundry “Vins de Glacière, the first to utilize microbullage in California, the first to popularize screwcaps for premium wines, and, quite significantly, the first to embrace true transparency in labeling with its ingredient labeling initiative. The upside of all of this activity has brought an extraordinary amount of creativity and research to the California wine scene; the doon-side, as it were, was perhaps an ever so slight inability to focus, to settle doon, if you will, into a single, coherent direction.

Bonny Doon Vineyard grew and grew with some incredibly popular brands (Big House, Cardinal Zin and Pacific Rim) until it became the 28th largest winery in the United Stated.  Since early 2004, Bonny Doon adopted Biodynamic viticulture and biodynamic practices in as many of their vineyards as practicable.

Randall Grahm Biography

BonnyDoon-RandallGrahmRandall was born in Los Angeles in 1953 and attended Uncle Charlie’s Summer Camp, excuse me, the prestigious University of California at Santa Cruz where he was a permanent Liberal Arts major. Some time later he found himself working at the Wine Merchant in Beverly Hills sweeping floors. By dint of exceptionally good karma he was given the opportunity to taste an ungodly number of great French wines and this singular experience turned him into a complete and insufferable wine fanatic. He returned to the University of California at Davis to complete a degree in Plant Sciences in 1979, where owing to his single-minded obsession with Pinot Noir he was regarded as a bit of a holy terroir in the hallowed halls of the sober and sedate Department of Viticulture and Enology.

With his family’s assistance, Randall purchased property in the Santa Cruz Mountains in a magically quaint eponymous hamlet known as Bonny Doon, intent on producing the Great American Pinot Noir. The GAPN proved to be systematically elusive but he was greatly encouraged by experimental batches of Rhône varieties, and he has been a tireless champion of the grapes of the Rhône since the inaugural vintage of Le Cigare Volant. In 1989 Randall appeared on the cover of the Wine Spectator, clad in blue polyester, as “The Rhône Ranger,” a moniker that has mercilessly followed him ever since. (He has subsequently abandoned the habit of appearing en masque at public events.)

In 1991 Randall was indicted into the Who’s Who of Cooking in America by Cook’s and in the same year Ted Bowell of the Lowell Observatory in northern Arizona named the “Rhoneranger” asteroid in his honor. He was proclaimed Wine and Spirits Professional of the Year by the James Beard Foundation in 1994. Randall lectures frequently to wine societies and technical groups, and occasionally contributes quixotically sincere articles to wine journals. His idiosyncratic newsletters and articles were collected, carefully redacted, and with the inclusion of some very timely new material, published as the award-winning book, “Been Doon So Long: A Randall Grahm Vinthology” in 2009. In 2010 the Culinary Institute of America inducted him into the Vintner’s Hall of Fame. He lives in Santa Cruz with his muse Chinshu, their daughter, Amélie and his thesaurus.   Follow Randall’s wine blog.

Chalk Hill Estate
Vineyards & Winery

Chalk Hill Estate is one of the most spellbinding wineries in California.  Hidden in the rugged foothills of the Mayacama Mountain range that divides Napa and Sonoma County, the winery offers extraordinary scenery, a sense of serenity and seclusion, and one of the most providential climates for grapes in all of California.

ESTATE HISTORY: Founded in 1972, by Fred Furth, Chalk Hill Estate produced its first wine in 1980 from grapes grown on extraordinary vineyards set in the rolling hills of eastern Sonoma County.  Over the intervening years, the winery has helped pioneer and establish the Chalk Hill AVA as one of the top winegrowing regions in California. Today, this 1300+ acre property includes around 350 acres of vineyards, a winery, a hospitality center, culinary garden, residence, stables, equestrian pavilion, sports fields, fishing and swimming ponds and a wilderness area. The winery makes limited quantities of Chardonnay, Sauvignon Blanc, Estate Red, Pinot Noir, Pinot Gris and Semillon as well as several small lot wines.

VITICULTURE: From dramatic hillsides to vineyard gardens, from dry creek beds to forests of native oak, the most prominent feature of Chalk Hill Estate is diversity. Soils vary with elevations and range from ancient alluvial deposits of sand, gravel and clay to young volcanic soils strewn with rocks and boulders. A distinctive layer of volcanic ash lies under much of the top soil inspiring the name “Chalk Hill.” The viticultural team led by Mark Lingenfelder has spent 35 years studying and mapping the Estate’s complex terroir. Thanks to their efforts, each individual block (60 total) has been planted to the best possible variety, clone, rootstock, trellising system, row orientation and vine spacing.  More than two-thirds of Chalk Hill remains uncultivated. The winery’s vineyards are thoughtfully woven amongst the native oak woodlands, meadows and streams. The vines are maintained using low-input, sustainable viticultural practices to preserve the long-term viability of the ecosystem.

WINEMAKING: Making great wine starts by understanding the nuances within each vineyard site. Harvesting precisely when the grapes have the greatest flavor, balance and concentration is the only way the vineyard expresses its unique character. The winemaker then coaxes the best out of every grape with a minimalist approach and gentle handing. Each vineyard and winemaking step contributes to our world-class red and white wine programs. Recognized by press and consumers alike, Chalk Hill has received 125 scores of 90 or higher from Robert Parker, Wine Enthusiast and Wine Spectator combined.

“It is a privilege to be involved with such a significant and strikingly beautiful property. For nearly four decades, Chalk Hill has been one of the premier wine estates in California. Our Chardonnays, Sauvignon Blancs, and proprietary Estate Red are all considered benchmarks among their peers. Our commitment to sustainable farming ensures that our land will remain healthy for generations and our wines will accurately reflect their origins in the hills of eastern Sonoma County.” –  William P.
