Food Pairing Ideas for Goldschmidt Wines

Goldschmidt-Vineyards-Logo

If you’re joining us for the Virtual Wine Tasting event with Nick Goldschmidt on August 12th on Zoom, here are some great food pairing ideas to enhance your tasting experience with Goldschmidt wines.

TIP: Pull white wines out of the refrigerator 30 minutes hour prior to serving so it is closer to wine cellar temperature of 50-58 degrees. Sparkling wines should be served even colder at 40-50 degrees.

Singing Tree ChardonnaySinging Tree Chardonnay
Russian River, California

This Chardonnay is lightly oaked and so fresh, the fruit really shines.  It pairs beautifully with crab or artichoke dip or hummus on soft pita or crispy bruschetta.   Greens with apples, jicama or pears, nuts and vinaigrette made with the wine.  Fish and chicken with less bold/overly spicy sauces to allow the wine to be tasted and not covered up.   Baked brie en croute.  Whole wheat linguine with browned butter panko crumbs, toasted pine nuts, shaved Parmesan & parsley (can add splash of lemon juice garlic, and protein of your choice.)

Boulder Bank Sauvignon BlancBoulder Bank Sauvignon Blanc,
Marlborough, Australia

From a dried up river bed vineyard in the Rapaura region, this wine pulls some salinity into the minerality and has a hint of sweetness on the finish.  Tart, slightly sweet and salty combos pair well.  Try with grilled 1/2 fresh apricots with goat cheese, thyme, honey and candied walnuts or baked or grilled prosciutto wrapped shrimp or scallop on dill aioli.  Or try pan seared Walleye with sweet pea risotto and crispy Pancetta.  Spinach pie with Tahini sauce pairs nicely too. Or try a flatbread with roasted/grilled vegetables with feta cheese & lemon miso sauce.

Forefathers Sauvignon BlancForefathers Sauvignon Blanc,
Marlborough, Australia

This wine super aromatic, concentrated and viscous, so it likes a little fat/richness in food to meet it head to head.  Sweetness falls on the mid-palate (like the proteins) and the long finish & racy acidity complements the tartness from cheese and lemon is the perfect finish to pull the wine and the foods together.  Pair with creamy smoked trout (or crab) and corn chowder or a fattier fish such as grilled salmon or sea bass with lemon zest.  Ahi tuna and avocado tartare with salted pita chips.  Chilled Mediterranean grain bowl with chickpeas, kalamata olives, sundried tomato, a bit of red onion, chopped fresh parsley, and feta cheese, with lemon, olive oil and splash of the wine.

TIP: Serve reds lightly chilled (especially for the warm night on the patio)…chill them down for about 30 minutes in the fridge. Average house temp of 70 degrees or higher does not do justice to your red wines. They are at their best when consumed between 55 and 65 degrees.

Chelsea Merlot Goldschmidt wine bottleChelsea Merlot,
Alexander Valley, California

Pair with grilled or smoked cherry marinated chicken breast or pork loin. Also yummy with classic Cassoulet, sweet Italian sausage and mozzarella.  Yummy with stuffed grilled Portobella mushroom caps…and always great with a traditional ground sirloin burger or lentil mushroom burger.  Will also pair with lasagna or chili, just be easy on the heat/spice.

Katherine Cabernet SauvignonKatherine Cabernet Sauvignon,
Alexander Valley, California

With moderate tannins and excellent food acidity, this wine pairs best with sauces that have earthy and herbal characteristics that are typical of Alexander Valley wines. Crispy pork belly, with black cherry Au jus,  Ribeye tips with Gorgonzola sauce, variety of aged cheeses,  wild mushroom gratin, or beef wellington. Or try with short ribs with wine reduction with touch of dark molasses or wild Game Sausage.

Hilary Goldschmidt wine bottleHilary Cabernet Sauvignon,
Oakville, California

This wine’s focused and lush tannins on the mid-palate pull it all together…which is why Oakville Cabernet is often considered to be the BEST Cabernet Sauvignon from California by mainstream wine critics and high end consumers.

Pair with traditional seared filet of beef, Osso Bucco, or lamb lollipops with rosemary demi-glaze. Beef Bourguignon. Leaner, rich and tender cuts and most importantly the sauce should not overpower to allow the wine to shine when combined with the food.

Forefathers Cabernet wine bottleForefathers Cabernet Sauvignon,
Alexander Valley, California

Alexander Valley vineyard is very steep so it is dry farmed, resulting in tiny berries. Small grapes = higher skin-to-pulp ratio and all the flavor in wine comes from the skins.  This wine is just pure, decadent, highly extracted and exotic Alexander Valley Cabernet.  On opening it may seem wound up…it is best to allow it to breathe for a couple hours or give it some air in your glass.  The nose is stunning.  Dubbed  “Your Ribeye Wine” but it is also stunning with a nice little chunk of aged Gouda or 10-year Cheddar.

TIP: Hey not to be Debbie-Downer….though many of us LOVE dark chocolate… this is NOT a true “pairing” for red wine unless it is nearly void of sugar.  The sugar in chocolate desserts completely coats the tongue and overpowers the fruit in the wine, only tasting alcohol in the wine.  Port wines makes a much better “pairing” for chocolate and aged, full flavor cheese is a better dessert offering for red wines. Yes, the chocolate tastes so good with the last wine of the tasting…BUT, please taste and enjoy your reds on their own.  First, get to know the wine and then maybe as you get closer to the bottom of the glass, then pop that chocolate if you must 😉 HAPPY SIPPING EITHER WAY!

Virtual Wine Tasting Cline Cellars

Built on a passion for winemaking and rooted in respect for the land, Cline Cellars is a family-owned and operated winery in Sonoma, California. In 1982, Fred Cline started making his first vintages from original plantings of Mourvedre, Zinfandel and Carignan, some of which dated back to the 1880’s. As one of the original Rhône Rangers, he began planting varietals that included vineyards dedicated to Syrah, Viognier and Marsanne and Roussanne.  Fred and his wife Nancy have continued to plant vineyards across Sonoma County.

Winemaker Charlie Tsegeletos

Charlie Tsegeletos, Winemaker

Charlie was born to be a winemaker. There was always wine in his Greek/Italian household in northern California, and his great-grandfather made wine in Guerneville in the 1930s. Charlie graduated from UC Davis in 1979 with a degree in Agricultural Science and Management/Plant Science, and honed his craft at Hacienda Wine Cellars, D’Agostini Winery, and Glen Ellen Winery. Since joining Cline Cellars in 2002, he has created legendary Zinfandels, distinctive Rhône-style wines, and Sonoma Coast Pinot Noir, Merlot and Chardonnay. Charlie loves making wines that express the unique qualities of California fruit, and their specific sense of place. His mission is the creation of wines that surprise and delight the senses. Antinori Family in wine cellar

Antinori Family

Since 1385, the Antinori family has been committed to the art of winemaking.  Over 600 hundred years ago, Giovanni di Piero Antinori became a member of the “Arte Fiorentina dei Vinattieri”, the Florentine Winemakers’ Guild.  For twenty-six generations, the Antinori family has managed the business directly making innovative and sometimes bold decisions while upholding the utmost respect for traditions and the environment.

ANTINORI WINERY, ITALY

Each vintage and each plot of land is a new pursuit for achieving higher quality standards for Antinori. As Marchese Piero loves to say: “Ancient family roots play an important part in our philosophy but they have never hindered our innovative spirit.

ANCIENT FAMILY ROOTS

The family’s historical heritage lies in their estates in Tuscany and Umbria, however over the years they have invested in many other areas, both in Italy and abroad.  They are well-known for producing high quality wine, opening up new opportunities to appreciate and develop unique new terroirs with great winemaking potential.

Research and development has been an ongoing process for the family, such as selecting new clones of local and international varieties, experimenting with new techniques in the vineyards and vineyard altitudes and new approaches to fermentation and temperature control. They also experiment with traditional and innovative winemaking philosophies, using new types of oak for barrels, barrel size and age, and varying length of aging in the bottle before commercial release.

Antinori family walking in vineyards

We have demonstrated, over the years, that in Tuscany and in Umbria there was the possibility of producing excellent wines, widely recognized at an international level, which showed both elegance and finesse while maintaining their original character.  One of our main strengths is the fact that we are Tuscan or, if you prefer, our fundamentally Tuscan character”, says Piero Antinori.

Best Chilean Winery 2017, Robert Parker Wine Advocate

Inaugurating the new category of “Extraordinary Winery Awards” by Robert Parker’s Wine Advocate, Viña Errázuriz had the honor of being the first Chilean winery to receive the award Best Chilean Vineyard 2017“.

Eduardo Chadwick, President of Viña Errázuriz, commented: “Being considered one of the best Chilean wineries by Robert Parker’s Wine Advocate is fantastic news. We are very honored with this nomination, and we believe that the nomination reflects the consistency in the high quality of our wines along with the commitment to elaborate the best wines of our terroirs, and to be recognized as a world-class producer. ”

ERRAZURIZ WINERY

Just north of Santiago, Chile’s capital, Errazuriz Winery is located in the Aconcagua Valley.  The valley’s beauty and its mild Mediterranean climate more than likely attracted Don Maximiano Errazuriz’s attention, inspiring him to establish his winery in 1870.  Easy access to water for irrigation and the volcanic soils, make Aconcagua Valley a viticultural paradise. From the mountains to the coast, it’s the origin of many renowned Chilean wines.

HISTORY

Founder, Don Maximiano Errázuriz Valdivieso

Founder, Don Maximiano Errázuriz Valdivieso

Don Maximiano Errázuriz founded Viña Errázuriz in 1870. With his innovative and pioneering spirit, he planted the first French grape varieties in the Aconcagua Valley. His initiative and creativity were handed down to his descendants, who consolidated the winery and positioned their wines among the world’s most noteworthy.  Errazuriz’s family winery has shaped history, currently one of the best examples of successful winemaking in Chile.

CELLAR DOOR 1870 WINERY

For over a century, Viña Errázuriz’s Historic Winery in Panquehue has remained a symbol of the forward thinking vision of its founder, Don Maximiano Errázuriz. Its construction began in 1870, under the guidance of a French winemaker, took over 14 years and incorporated the latest technology at the time.

Winery tasting room

Built in 1870, Viña Errazuriz’s historic tasting room, located in basement of the winery.

The winery was built as a two-story structure. The excavation and construction of its huge cellar rooms alone took five years. The thick underground walls, built with bricks and mortar, have stood the test of time and have allowed the wine to be kept in large casks made of raulí (a native Chilean tree) at a constant temperature of 53 to 57°F.

Still in use today, the winery houses a historic collection of wines. There are about 400 bottles of each of the vineyard’s iconic wines, which provides an opportunity to experience the vineyard’s evolution through the years.

DON MAXIMIANO ICONIC WINERY

In 2009 the need to project itself into the XXI century and to search for wines of an even higher quality, inspired Viña Errázuriz to start building a new winery devoted exclusively to its high-end wines.  The integration of cutting edge technologies has gone hand-in-hand with sustainability and environmental protection, thus paying homage to Don Maximiano’s vision and courageous spirit.

Don Maximiano Winery Chile

Don Maximiano Winery, Chile

With a capacity to produce over 91,000 gallons, the new Don Maximiano Icon Winery was designed by architect Samuel Claro and built completely with bleached concrete. Its main body is underground and its spiral shape allows for the movement of fruits and liquids by means of gravity and to capture the refreshing breezes from the valley. To maintain adequate levels of temperature and illumination the building harnesses geothermal and solar energy, which are completely environment friendly.

The winery was officially opened in October 2010 with more than 100 guests from around the world, including leaders of the wine industry and press.

NICK GOLDSCHMIDT, Winemaker and owner

Both originally from New Zealand, Nick Goldschmidt and his wife Yolyn are both owners/vintners and have followed their passion for wine to California.  Join us as we taste some of their incredible single vineyard wines from some of the best vineyards in Alexander Valley, Napa Valley and Russian River Valley.

In 1998 Nick and Yolyn, established their own line of wines with the release of Goldschmidt Vineyards. Having produced so many world class wines from around the globe, they knew exactly which vineyard sites they would choose to make Goldschmidt wines.

GOLDCHMIDIT VINEYARDS

For the Goldschmidt Vineyard brand they have created two distinct Cabernet Sauvignons, one from Alexander Valley in Sonoma and the other from Oakville in Napa Valley. The Cabernet Sauvignon is from two prestigious vineyards in Northern California, located on the northeastern slope in the Alexander Valley, and Game Ranch Vineyard, located on old river bottom on the eastern bench of the Silverado Trail. Both showcase the optimum silhouettes of Cabernet Sauvignon from Alexander Valley and Napa Valley.

Under the Forefathers brand Nick and Yolyn produce a New Zealand Sauvignon Blanc, an Australian Shiraz, and a California Cabernet Sauvignon. The wines Nick and Yolyn Goldschmidt produce are all single vineyard, 100% varietal, handcrafted, small production artisan wines.

Joined periodically in the field by their five children, the Goldschmidt expertise is being passed down to the next generation, as evidenced in the wines released under the labels Chelsea Goldschmidt, Hilary Goldschmidt and Katherine Goldschmidt. The winery offices are located in Healdsburg, California.

Peterson Vineyard

Peterson Winery has been producing wine in Dry Creek Valley for 30 years and, like most wineries in the Valley, produces Zinfandel as well as other wines. Yet a closer look shows that is where the similarities end.

Fred Peterson and familyOwner Fred Peterson is an iconoclast with an old world winemaking philosophy and a reverence for sustainable farming. The Peterson approach is to capture the essence of vintage and vineyard—a philosophy they call Zero Manipulation—with low tech, yet high touch, to produce wines of a place, wines with soul. The evolution of Peterson wines and winemaking accelerated when Fred’s son Jamie became assistant winemaker in the summer of 2002. In 2006, after moving from the tiny red barn on Lytton Springs to Timber Crest Farms, Jamie was given the overall responsibilities as winemaker.

PETERSON ROOTS

Fred camePeterson winery team to Dry Creek Valley in 1983, working to find and develop world-class vineyard properties. It was an exciting time for Fred, being able to select ideal vineyard locations and then plant the appropriate grape variety and clone for each site. The vineyards Fred developed in Dry Creek Valley (Sonoma County), including on Bradford Mountain, began producing amazing fruit. The next step was a natural one; Fred wanted to make wine from the fruits of his labor (sorry about the pun, it was too good to pass up).

In 1987, all the pieces fell into place for Fred, and he launched Peterson Winery. For nearly twenty years, the winery was located in an old, red barn tucked away in the vineyards off of Lytton Springs Road. It was beautiful place to make wine, but the antique structure began to show its age. In late 2005, Fred seized an opportunity to move into a newer facility on Dry Creek Road, at Timber Crest Farms. This new, more convenient location offers more offices and space, plus a room for visitors to taste the wines.

Peterson wine labelsOver the years, Fred has befriended grape growers who share his goals and values; to grow grapes that reflect a sense of place. The Dry Creek Valley encompasses one of the greatest ranges of microclimates for such a small area in the world, making it possible to grow many grape varieties, with world-class quality. Peterson Winery now makes an average of 8000 cases annually, all in many small lots from the like-minded growers he now calls his friends.

The Barossa Valley is Australia’s most famous wine region. Comprising of the Barossa Valley and Eden Valley, it is home to some of the oldest Shiraz vineyards in the world, acclaimed Rieslings and iconic wine brands.

Elderton is one of those Barossa Valley Wineries, whose philosophy has not changed significantly since its inception. From the high quality, low yielding fruit that is grown on the three vineyard sites, Elderton’s aim is to make balanced wines that will stand the test of time with the overall arching vision of excellence in mind.

ELDERTON WINERY

The overall vision of Elderton is excellence from distinguished vineyard sites. Today Elderton runs three vineyards that highlight the individual terriors of the region. Its original vineyard in Nuriootpa on the Barossa Valley floor that provides most of flagship wines; Greenock that is in the north western quadrant provides the power and has vines dating back to 1915 and finally its vineyard in Eden Valley ranges in Craneford that provides elegance. $1 donated for each glass or bottle of Purple Heart Wines to Purple Heart Foundation

Veteran’s Day Tasting Event
Saturday, November 11 at 6:00pm

WineStyles Tasting Station is proud to host a national fundraising collaboration with Purple Heart Wines (www.purpleheartwines.com) benefiting the Purple Heart Foundation (www.purpleheartfoundation.org), an organization which supports veterans in need.

We’re honored to help raise awareness and funds benefiting American heroes and their families”, says Bryan McGinness, CEO of WineStyles Tasting Station. “For every glass of Purple Heart Wine served or bottle purchased across the country, we are donating $1.00 to the Purple Heart Foundation. Our fundraising efforts will culminate with a nationwide tasting event on Veterans Day, November 11th at 6:00pm – 8:00pm.

For 50 years, the Purple Heart Foundation has been supporting and honoring the sacrifice military veterans have made for our country. Last year alone, they have helped over 19,000 veterans and secured over $300 million dollars in VA benefits.

We hope our local communities will join us in supporting this important cause. It’s a great opportunity to enjoy a wonderful wine, while supporting our military heroes at the same time,” commented Andrea McGinness, COO of WineStyles Tasting Station.

Mondavi & Family wines of Napa Valley, producer of Purple Heart Wines, makes an annual contribution of up to $50,000 to the Purple Heart Foundation, which has been used to support U.S. military servicemen and women and their families with services like job-training, counseling and more.

The head winemaker for Purple Heart Wines is John Moynier, who served in the military during the Vietnam war from 1968-1972. “Working with a brand that combines my passions for winemaking and military service is the perfect finale to a long career in winemaking in Napa” commented Moynier.

Purple Heart Wines logo

Purple Heart Wines launched its proprietary label, Purple Heart, in 2016 – created to honor the determination, bravery and commitment of America’s military heroes. Moved by its namesake, it is this noble medal that led to the creation of the Purple Heart wine – a worthy tribute to the nation’s servicemen and women. Produced in the United States’ greatest wine region – California, it is an uncompromising wine crafted under the close stewardship of C. Mondavi & Family, whose patriarch, the late Peter Mondavi Sr., was a proud veteran of World War II. Purple Heart serves as a testament to the integrity and virtue of the Purple Heart Foundation, and aims to help further the organization’s cause through both awareness and fundraising. To support these efforts, an annual donation will be given to the Purple Heart Foundation. Learn more about Purple Heart Wines at purpleheartwines.com.

Purple Heart Foundation logoThe Purple Heart is a congressional military decoration, awarded to members of the armed forces of the U.S. who are wounded by an instrument of war in the hands of the enemy. Founded in 1958, the Military Order of the Purple Heart is a congressional chartered veteran’s organization, dedicated to assisting the needs of U.S. military servicemen and –women and their families.
