Every Youngsters Gouda is aged 4 to 6 weeks for a perfectly creamy texture. In addition, this exceptional cow’s milk Gouda is smoked to infuse a velvety, toasty smokiness that is also creamy and buttery. It is great for melting over burgers, or snacking with salami.
WINE & CRAFT BEER PAIRINGS:
For wine, try this cheese with a Spanish red, such as a Tempranillo. The bold, fruity notes of Tempranillo can handle the richness of the smoked gouda, while the wine’s acidity can cut through the creaminess. For beer, look for an Amber Ale; the malty sweetness of an ale complements the smoky flavor of the cheese, creating a balanced and satisfying combination.

We’re bringing back a fan favorite! This pasteurized cow’s milk cheese combines the creamy texture and rounded taste of a quintessential British Double Gloucester with the tang of added chives and onions.
Cooper’s Hill celebrates a famous cheese rolling tradition enshrined in English folklore. Every year, a wheel of Double Gloucester cheese is sent down the hill and the first person chasing it to cross the finish line receives the wheel of the cheese and all the accolades. For wine, pair with a Syrah; the bold, peppery notes of the red wine can handle the richness of the cheese. August Cheese Club: Iowa

Jean Perrin
Morbier AOP
Franche-Comte, France
Morbier was behind Jean Perrin’s creation of their cheese dairy in January 1965. Produced in strict keeping with tradition, it is the only Morbier available in the United States. It’s made from raw cow’s milk and cellar-refined for between 45 and 130 days to create a creamy, ivory-colored texture, and a range of flavors from soft and creamy to those with more character for bolder cheese lovers.
It is known for its distinct appearance, with a layer of ash running through the center. The ash used in Morbier cheese is vegetable ash, and it is primarily a traditional and aesthetic feature. The smell is legit; funky, washed and briny. The paste has a silkiness to it while still being firm. The flavor is multi-layered with a tannic finish.
PAIRING SUGGESTIONS:
Pair the Morbier AOP cheese with this month’s Maison Biotteau AOP Anjou Rouge. The delicate tannins and bright acidity of this red wine complement the creamy and slightly tangy flavor of Morbier. For beer, reach for a Belgian Dubbel. The caramel and dark fruit notes in the beer balance well with the creamy texture and earthy flavors of the Morbier.

Ossau-Iraty AOC
Pyrenees, France
A genuine AOC treasure, this cheese boasts a rich, fruity, and nutty flavor from the milk of Manech and Basco-Béarnaise sheep. Ideal for picnics, its semi-firm and smooth texture offers delightful notes of hazelnut, butter, and herbs. It pairs wonderfully with a variety of fruits, vegetables, and salty meats like Prosciutto di Parma.
PAIRING SUGGESTIONS:
Pair the Ossau-Iraty AOC with this month’s Maison Biotteau Anjou Blanc. The Chenin Blanc’s fresh acidity will enhance the nutty, buttery flavors of the cheese. The farmhouse ale’s herbal and spicy characteristics complement the rich, nutty, and herbaceous profile of Ossau-Iraty.

A traditional cheese of Cyprus, Greece, the Kynthos Halloumi will have you feeling like you’re surrounded by the turquoise waters and white sandy beaches of Greece. Made of cow’s milk, sheep’s milk and goat’s milk, this cheese has a very low acid content, making it the perfect grilling or frying cheese. Halloumi often resembles a much firmer and saltier block of clean, light mozzarella.
FOOD PAIRING: This is cheese is a great blank slate to all sorts of dishes. Try grilled, fried, baked, sautéed, or simply on its own. Kefaloytre is a classic cheese of Greece. It is a hard, aged cheese made up of pasteurized sheep and goat’s milk. The Kourellas family keep things traditional by salting the cheese by hand as it matures. Dating back to the Byzantine era, Kefalotyri is believed to be the ancestor of most hard Greek cheeses.
FOOD PAIRING: This cheese is an essential ingredient in classic Greek dishes, such as moussaka, pastitsio, or spanakopita. Grate over pasta, serve shavings with pears and grapes, or fry a couple slices with your eggs.
WINE & CRAFT BEER PAIRING: Similar to the Halloumi pairings, search for something crisp and fruity, such as a Rosé. Even better, look for a Greek wine to accompany your cheese! For craft beer, stick with a crisp and clean brew.

The Rocchetta is a blend of three different milks, pasteurized cow’s milk, pasteurized sheep’s milk and pasteurized goat’s milk. It is a slightly ripened soft cheese, without holes, and an edible white/straw yellow rind. Short and careful aging create a creamy balance, allowing the sweetness and acidity to melt together. The palate highlights flavors of butter and crème fraiche.
FOOD PAIRING: This cheese eats well on its own, or served alongside cured meats and jams, or in a salad.

This Utah Cheddar is rubbed with espresso and lavender, and is a winner of 20 major awards. Barely Buzzed is the perfect party cheese. It’s easy to pair, stunning to look at, and always the center of attention on the cheese board. The espresso and lavender rub imparts notes of butterscotch and caramel, which are prevalent near the rind, but find their way to the center of the cheese. This is a full-bodied cheese with a nutty flavor and smooth texture. Hours after it’s made, the special grind is rubbed on the rind. The 20-pound wheel ages for 6-8 months. Hook’s Cheese Company, Inc.
10 Year Cheddar

This 10 year cheddar won 1st place at the 2006 American Cheese Society Show, the only 10 year cheddar to get a 1st place in this, or any competition. It has more calcium crystals than Hook’s 7 year cheddar. It has a full, rich cheddar flavor with a smooth finish.
The 10 year cheddar has calcium lactate crystals. These have the texture of salt but have no flavor. More crystals develop as the cheddars get older. The 10 year has a rich, kind of creamy, slightly acidic but more of a fruity note to it.
FOOD PAIRING: Make a yummy cheese and charcuterie board with dried fruits, quince paste, olives, pate, cornichon pickles, grained mustard, peppadew peppers, marinated artichoke hearts, assorted salami and prosciutto.
WINE & CRAFT BEER PAIRING: When pairing wine with this cheese, reach for a big, bold Cabernet Sauvignon, Cabernet Franc, or Merlot; for beer, look for something a Cider or something malty and sweet, such as a Scotch Ale or an Oatmeal Stout.

A fantastic blend of three types of milk – cow, sheep, and goat. Flavor notes that come through – Baby Swiss, Havarti and Gouda. Aged over a year. At this point the Gouda flavor has become more prevalent and crystals have started to form.
FOOD PAIRING:
Dried apricots, dried cherries, sliced apples and pears; as well as flatbread, sesame breadsticks, olive tapenade, and shelled pistachios.
WINE & CRAFT BEER PAIRING: When pairing wine with this cheese, reach for a Zinfandel; for beer, look for something Hoppy and Bitter such as an IPA.

Sagesse Comté is selected in line with the Essex flavor profile, but is bigger and broader in taste with a darker paste and immense tyrosine crystallization. This is an unpasteurized cows’ milk cheese with a powerful depth of flavor, similar to a great piece of dark chocolate. Sagesse Comté is available only once a year.
