Heron Hill Winery Reserve Riesling
Halibut with Mango Salsa
INGREDIENTS:
For the Salsa:
- 1 large ripe mango diced
- ½ small red onion diced
- ¼ cup fresh cilantro chopped
- 1 medium red bell pepper diced
- 2 tbsp lime juice about 2 small limes
- ¼ tsp salt
For the Fish:
- 1 lb halibut filet
- 1 tbsp olive oil
- ½ tsp black pepper
To Garnish:
- lime wedges for squeezing
DIRECTIONS:

In a medium mixing bowl, add in all of the salsa ingredients and mix well. Optional to let it marinate for 10+ minutes to really let the flavors out. Set aside.

Pat the fish dry and season both sides with salt and pepper.

Heat a grill or pan over medium heat and add oil. Cook the fish 4 to 6 minutes per side until it has turned opaque throughout. You should be able to easily flake the meat with a fork when it’s done.

Let the fish rest for a minute or two before garnishing with the salsa. Store the extra salsa in an air tight container for future use.

An elegant and vibrant Riesling with medium to high aromatic intensity of lime, green apple, anise and wet rock. The palate has tremendous excitement from the electric acidity and dry nature of the wine with citrus and saline notes, combined with some floral undertones and great length. It’s a refreshing joy to drink now, but will also age well over the next 8-10 years.

FOOD PAIRING:
A great wine with simple grilled summer vegetables. Also delicious with halibut or freshly caught Seneca Lake rainbow trout, served and topped with a tropical mango and jalapeño salsa. It is also great with a triple cream brie.
VINEYARD INFORMATION:
Keuka Estate – the winery’s onsite vineyard comprising of 10 acres of Riesling, 1 acre of Vidal Blanc, and 2.5 acres of Cabernet Franc. Most of the vineyard is a relatively gentle east facing slope toward Keuka Lake; at one of the coolest points along the lake due to the gap in the hills behind the winery, which allows cool air to flow through their site, draining down toward the lake. The soils comprise of shale and loam, allowing for a very well drained and mineral driven site; these, combined with the cooler temperatures of the site, lead to fruit with wonderful purity, mineral expression and fresh acidity.
VINTAGE INFORMATION:
Grapes thrive in growing seasons with less precipitation, and luckily for the Heron Hill team, it only rained twice – once from April 1st until July 15th and again from August 10th until November 1st. With that said, it was certainly a wet year from start to finish, but in 20 vintages, the Heron Hill team has learned that some of the top wines still come from challenging years, as it forces it to be a grower and winemaker’s year. It’s all about attention to detail at each step.
It was a year that you could not miss a pass or downy mildew could come and wreak havoc. Luckily, most of their vineyard lots were on top of it and were able to get through to the harvest season with clean fruit and canopies. Another big change for the Finger Lakes this year was the warmth. It was one of the hottest years on record, and that was largely due to less diurnal temperature swings, thus leading to warmer nights as well. While this brings some challenges, it also helped push the ripeness of the fruit.
In the end, the fruit came through mostly with ripe flavors from the warmth and waiting for longer hang time. The warm nights created fruit with a bit less acidity, offering softer textures. Overall, the vintage will yield wines with lower alcohol, softer acids, but ripe fruit flavors and silky tannins. They really are a pleasure to drink.
WINEMAKING:
The Reserve Riesling was immediately pressed coming from the vineyard at cool October temperatures. The juice was settled over the course of 3 days before having the clean juice racked, allowing it to naturally start to ferment, peaking at 61 degrees, lasting 78 days. Post fermentation, the wine rested on its lees three months before being filtered and readied for bottle. No fining necessary.

This wine is dark bronze-gold in color with hints of amber. It has intense, fresh and fruity aromatics with characters of honey, butterscotch, crème brûlée, creamy caramel, dried oranges, orange blossom, dried pears, tea-cake, malt and green tea. These characters are also evident on the palate which is luscious with a hint of jasmine and fresh layers of flavor which linger in the mouth. This wine has a luscious texture with the gentle warmth of clean spirit and well-balanced sweetness complementing the finish.

THE VINEYARD:

Nik Weis is one of the few winemakers in his region to make wine from the Mosel and the Saar Valley. Half of his 111 acre property is located in the Saar Valley, a sub-appellation, where the microclimate is even cooler than in the Mosel area. This means that the difference between warm days and cool nights is more extreme and causes even better conditions for the development of many flavors in the skins of the berries. In comparison to the Mosel Valley, with its rather soft and blue slate soils, the slate in the Saar Valley is either red or grey, causing a distinctive smoky and almost salty minerality.

Another particularity of Nik Weis is the wide spectrum of the age of his vines that goes up to 130 years. Having many old vineyard parcels is another key for making authentic and long-lasting wines since old vines root much deeper into the ground and gather more nutrients and minerals than young vines do; they also have a better water uptake which prevents them from drought and water shortage in warm summers. In addition to that, the grape clusters also change within the years, and for that, old vines produce smaller berries with thicker skins. This results naturally into lower crop yields with a higher aromatic concentration and complexity.
PRODUCTION:
The Riesling Estate Bottled from Old Vines unites all particularities of Nik Weis. It is grown on different kinds of slate, comes from the old vineyards in the Saar valley, and was fermented with indigenous yeasts in stainless steel tanks in order to keep the fine and elegant body.

Inspired by the ‘urban lifestyle’ of many cities like New York, London, or Paris, winemaker and globetrotter, Nik Weis wanted to create a wine whose individual character would stand out against the average mass of wines – even in famous cities with genuine character and flair. But how could one combine an urban lifestyle with a rather rural region like the Mosel valley? Luckily, Mosel Riesling is one of the world’s most famous wines and has been consumed in the world’s best restaurants and hotels for more than a century. Nik soon knew that his wine would bring the Mosel ‘zest for life’ to the world’s biggest cities back again.
Today, Urban Riesling has become a well-known and regularly-awarded wine that never forgot about its roots: The soil on which the vines grow consists of blue, highly decomposed slate rocks that give the wines their great minerality- a somewhat salty finish. The temperatures vary from warm during the day to cold at night; this lets the grapes keep their elegant and fruity acidity and makes them produce a wide range of beautiful flavors. The vinification takes place in a minimalistic way in order to make the wines as authentic as possible.
ABOUT NIK WEIS – ST. URBANS-HOF:
Nikolaus (Nik) Weis is the third generation of his family to tend the vines since his Grandfather, Nicolaus Weis founded St. Urbans-Hof Estate in 1947. Nicolaus was awarded the prestigious title “Oekonomierat” (Chancellor of Agriculture) in 1969 for his dedication to the wine culture of the country; his name and title have since become a suffix to the estate’s name. Today, Nik oversees the estate’s 111 acres in the Mosel and Saar Valleys. Since 2000, the Riesling winery has been a member of Germany’s renowned VDP (Association of German Quality Wine Estates). Kilikanoon Killerman’s Run Riesling
Caesar Salad Supreme
INGREDIENTS:
- 6 cloves garlic, peeled, divided
- ¾ cup mayonnaise
- 6 tablespoons grated Parmesan cheese, divided
- 5 anchovies or anchovy fillets, minced
- 1 tablespoon lemon juice, or more to taste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- salt and ground black pepper to taste
- ¼ cup olive oil
- 4 cups day-old bread, cubed
- 1 head romaine lettuce, torn into bite-sized pieces.
DIRECTIONS:
- Mince 3 cloves of garlic and place in a small bowl. Add mayonnaise, 2 tablespoons grated Parmesan cheese, anchovies, lemon juice, Worcestershire sauce, and mustard; mix well to combine. Season to taste with salt and black pepper. Refrigerate until ready to use.
- Heat oil in a large skillet over medium heat. Slice remaining 3 cloves of garlic into quarters and add to hot oil. Cook and stir until brown, then remove garlic from pan. Cook bread cubes in hot flavored oil, turning frequently, until lightly browned; transfer onto a plate and season with salt and pepper.
- Place lettuce in a large bowl. Add dressing, remaining Parmesan cheese, and seasoned bread cubes; toss well to coat.

The nose of this Riesling is intensely aromatic with notes of lemon, lime, orange blossom, and the classic Riesling minerality. The palate is fresh and mouth watering with bright citrus, orange rind and crisp green apple. It has a tangy, dry finish making it a real pleasure to drink.

BACKGROUND:
Named after a legendary Clare Valley squatter, Killerman, who planted and tended vines on a paddock adjoining the Kilikanoon property. As legend has it, Killerman made his own wines in a galvanized iron lean-to.
WINEMAKING:
The Killerman’s Run Riesling is fermented at cool temperatures for 3 weeks with an aromatic yeast strain. The ferment was stopped prior to complete dryness to give the wine a hint of additional texture and roundness while still being nicely balanced by naturally retained, crisp acidity. This Riesling was made in a classic Clare Valley regional style primarily from carefully selected vineyards in the Watervale sub region.
ABOUT KILIKANOON:
Kilikanoon is a boutique Clare Valley winery founded in 1997 by Kevin Mitchell; it is known for producing regionally expressive, terroir-driven wines. The Kilikanoon property, featuring a circa 1860s stone cottage housing Kilikanoon’s tasting room, was orginally settled by early English migrants who named it after a historic old mansion in Cornwall. When purchasing the historic property in 1997, the mature vineyards of Shiraz, Cabernet, Grenache and Riesling that had been planted by Kevin’s father, Mort in the 1960s, became a part of Kilikanoon, and now form the heart of the estate vineyards. Peter Warr joined the winery in late 2018 after traveling the world honing his craft. He is now responsible for carrying on Mort and Kevin’s legacy at this treasured and award winning estate. The lush aromatics of the Gelber Muskateller (Muscat Blanc à Petits Grains) grapes are supported by the acidic backbone of the Riesling grapes and the vivacious fizz, making for a highly drinkable final product.
Varietal: 50% Gelber Muskateller, 50% Riesling
Vineyard: Loess. Estate-owned, bio-dynamically grown vines
Production: Grapes are hand-harvested and macerated on skins for 5 hours, then pressed and spontaneously fermented in tanks. While the fermentation is still going, the wine is bottled under crown caps to finish as pet-nat. It is released after 5 months on its fine lees, without fining or filtration. There is no sulfur added.
ABOUT ZEIT WINES:
Zeit (meaning “Time” in German) was inspired by the slowly passing of time in the unusual year of 2020 and the Bauhaus-inspired label was designed by Toni Silver, an Austrian artist. Zeit is an Austrian winery owned and operated by Karl Fritsch and Weingut Fritsch made exclusively under the Jenny & Francois label. Located in the Wagram area, about 40 miles west of Vienna, Karl turned the historical family estate bio-dynamic in 2006 to preserve and respect the terroir. The winery is a founding member of Respekt Biodyn, an association of leading Austrian and German growers who share the biodynamic cultivation philosophy. Karl believes his role as a winemaker is to create a positive influence on the vines so that he can continue to showcase the beautiful and natural gifts these old sites provide. This Sparkling Rosé is light salmon in color with reddish-gold play of light. It has a fine, persistent mousseux, with a delicate, fresh and very animated nose. On the palate, there are notes of fruit and spice with hints of fresh cherries, forest berries and a sophisticated note of citrus. It is dry, fruit-driven, yet creamy on the palate. The wine is finely woven with elegant acidity and mineral extract, making for a very harmonious structure.

Formally called the Dr. Deinhard Estate, (now Von Winning) was founded in 1849, producing unique wines reflecting their vineyards in Ruppetsberg, Deidesheim and Forst. In 1907, Leopold von Winning, son-in-law of Dr. Andreas Deinhard, dedicated his life to creating the highest quality of wines with respect to the vineyards passed down to him. Honeysuckle and crushed minerals give a modest introduction to this light-footed Auslese (select harvest) wine. The palate is bursting with ripe flavors of yellow-peach and pineapple. The wine’s sharp, zippy acidity lends balanced to a long finish.

NECTAR WINE STYLE
Bright clear yellow in appearance, the Vouvray Passeport has a fruit driven nose with subtle aromas of white flowers mixed with peach, pear, pineapple and carambola. On the palate, it is well balanced between fruit and flint, with a nice, refreshing finish.

Region: Loire Valley, France – near the town of Tours
Classification: Appellation Vouvray Contrôlée
Soil: Clay and limestone base with sandy patches, where Chenin grows its best
Climate: Oceanic, mild and humid
Vinification: Pressing of the grapes with overnight settling – controlled alcoholic fermentation to preserve residual sugar
Viticulture: Low yields, hand tending, careful selection and minimal interference in the natural ripening of the grapes
Pairing: This wine is very versatile. It can be paired well with anything from cheese to appetizers, salads, fish, barbecue, or even spicy food or curry dishes. Best served between 46ºF and 50ºF.

The BEX Riesling is brilliant straw color. On the nose, there are aromas of orange blossom, lime and white grapefruit, while on the palate there are mouthwatering flavors of lime and mandarin orange. The wine finishes with notes of minerals and citrus zest.

WINEMAKER NOTES – 2014 VINTAGE:
“The 2014 growing season was early and fast! Riesling shoots appeared on April 12, three weeks before the norm. Flowering was ahead of schedule and the vines ripened nicely through August when a period of strong rains occurred. Luckily Mother Nature delivered a nice dry September helping the grapes to reach full maturity. The hallmark of 2014 Riesling are sassy wines – crisp and lively with well-integrated acidity.” – BEX Winery
