Caramelized Onion & Gruyère Burger

INGREDIENTS:

  • 1 pound lean ground beef
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon coarse ground pepper
  • 1 teaspoon dried minced onion
  • ½ teaspoon seasoned salt
  • 34 oz Gruyère(thinly sliced)
  • ¾ cup caramelized onions (prep before starting the burgers)
  • 34 brioche buns
  • ¼ cup olive oil mayonnaise
  • 1 teaspoon Worcestershire sauce

DIRECTIONS:

  1. Heat your grill. Preheat your grill to medium-high heat – about 400°F.
  2. Make the burger patties. Mix ground beef, Worcestershire, pepper, dried onion and salt in a small mixing bowl. Form into 3-4 burger patties.
  3. Cook the burgers. Place the burger patties on the preheated grill and cook for 3-5 minutes per side, depending on the desired doneness. The internal temperature should be 160° on an instant-read thermometer. 
  4. Make the sauce. While the burgers are cooking, mix the mayonnaise with the Worcestershire sauce. Refrigerate until ready to use.
  5. Finish the burgers. Turn grill to low-setting and top each burger with a slice of cheese. Place brioche bun halves sliced side down on the grill, away from the heat. Close the grill and let buns toast and cheese melt for 1-2 minutes.
  6. Assemble the burgers. Remove everything from the grill. To assemble the burgers, spread the bottom half of each roll with the mayo mixture. Top with a burger patty and then add the caramelized onions. Top with remaining roll half and serve immediately.

This full-bodied, bold and structured Cabernet Sauvignon is brimming with flavors of ripe plum, blackberry, and blueberry with hints of warm baking spices and toasted vanilla bean. It is rich with well-integrated tannins and an elegant, lingering finish. The Rocklin Ranch Cabernet is immediately enjoyable.

Food Pairings: This wine pairs well with foods high in fat and with umami flavors – such as braised short ribs, marinated ribeye steak, or a charred gruyere burger.
 
WINEMAKER NOTES:
“The grapes are picked at optimum ripeness in the cool early morning hours then transported to the winery. Upon arrival, they are destemmed and crushed into small lot, open-top fermenters. The cap is punched down three times per day at the height of fermentation to gently increase extraction of color and phenolic compounds. At dryness, the juice is racked clean for aging 12 months on a combination of American and French oak.” – Rocklin Ranch
 

HAMES VALLEY, MONTEREY:
The grapes of this Cabernet Sauvignon are grown at Rocklin Ranch’s estate vineyard located in Hames Valley, California – the southernmost tip of Monterey County, just north of the San Luis Obispo county line. The geographic location of the Hames Valley AVA allows for warmer climates when compared to other Monterey vineyards to the north. The vineyard sits at the foot of the Santa Lucia Range, and while it does experience cooling effects from the Pacific Ocean, the vines remain sheltered from the afternoon winds that come down the Salinas Valley corridor. During the day, the Hames Valley reaches highs similar to the Paso Robles growing region, but when the sun goes down, temperatures drop dramatically (up to a 50°F variation). The long, warm days make this region an ideal area for tannin-rich reds, while the temperature differential preserves the balance between ripe fruit and acidity.

BUBBLY WINE STYLE

The Pitars Prosecco Millesimato Extra Dry wine is effervescent with a fine and persistent perlage. It is pale, straw yellow in color with hints of green tones. On the nose, there is a rich range of fruit with aromas of wisteria, acacia flowers, unripe apples, lemons and grapefruits. The wine is full-bodied and has a pleasant acidity that is both fresh and dry. 

Soil: Gravely of alluvial foothill origin, typical of the land named “Grave del Friuli”

Harvest: First two weeks of September
Vinification: White vinification. First fermentation occurs in steel vats at controlled temperature, where selected yeasts are added. Bubbles are created inside low-temperature pressure tanks – Martinotti-Charmat method.

The Pitars Rosé has elegant and persistent bubbles. It is a very fresh and lightly aromatic wine. Brilliant pale pink in color; the nose is delicate, floral and fruity, with notes of strawberry, raspberry and rose.

Winemaking has been in the Pittaro family for many centuries – dating back to 1644. In 1880 Romano Pittaro, imported Merlot vines from France into Friuli, Italy. Martellotto ‘My Way’ Malbec

Lamb Sliders with Blue Cheese

INGREDIENTS:

  • 1 1/4 teaspoons olive oil
  • 1 2/3 cups thinly sliced onion (about 1 large)
  • 3/4 teaspoon brown sugar
  • dash of salt
  • 1/4 teaspoon freshly ground black pepper
  • 13 ounces lean ground lamb
  • cooking spray
  • 8 (1.3 ounce) mini-sandwich buns
  • 2 tablespoons crumbled blue cheese

DIRECTIONS:

  1. Heat oil in a large nonstick skillet over medium heat. Add onion and sugar to pan; cook 10 minutes, stirring frequently. Stir in 1/8 teaspoon salt. Reduce heat; cook 8 minutes or until tender and browned, stirring occasionally. Keep warm.
  2. Preheat broiler.
  3. Combine remaining 1/4 teaspoon salt, pepper, and lamb in a large bowl. Divide lamb mixture into 8 equal portions; shape each into a 1/2-inch-thick patty. Place patties on the rack of a broiler pan coated with cooking spray; place rack in pan. Broil 6 minutes, turning once after 3 minutes. Remove from oven; let stand 3 minutes.
  4. Broil buns, cut sides up, 2 minutes or until lightly toasted. Place patties on bottom halves of buns; top each patty with about 1 1/2 tablespoons caramelized onion and about 3/4 teaspoon blue cheese. Cover with top halves of buns.

Slow-Cooker Pork Shoulder

  • 1 boneless, skinless pork shoulder, Boston butt about 6 lbs.
  • 20 cloves garlic 
  • 1/2 cup olive oil, divided 
  • 2 tsp. cumin
  • 2 tbsp. salt 
  • 1 tbsp. black pepper 
  • 3 tbsp. oregano leaves 
  • 1/2 cup fresh squeezed orange juice 
  • 1/4 cup fresh squeezed lime juice 
  • 1 Serrano pepper, seeded, and diced
  • 1/4 cup freshly chopped fresh cilantro  
  • White rice, for serving, optional 

DIRECTIONS:

  1. Dry pork shoulder with a paper towel and make 1” incisions with a knife all over.
  2. Pulse garlic, ¼ cup oil, cumin, salt, pepper, and oregano in a food processor until a paste is formed. Remove 2 tablespoons of the paste and set aside.
  3. Rub pork shoulder all over with remaining paste, pushing some of it into the incisions.
  4. Place pork in slow cooker, cover, and cook on low until meat is fork-tender but not yet completely falling apart, 7 1/2 to 8 hours.
  5. To make the sauce, heat remaining ¼ cup oil in a small saucepan over medium heat until shimmering. Add reserved 2 tablespoons garlic paste and let sizzle, stirring continuously until fragrant, just about 1 minute. Remove from heat and let cool before whisking in orange juice, lime juice, serrano pepper, and cilantro.
  6. Serve sliced pork over rice with sauce drizzled on top.

PRODUCTION:
Whole-bunch pressed to limited pressure, and to give a low yield of 62% volume to weight. A natural cold settling takes places without the use of enzymes. Fermentation at a moderate temperature of 60.8-64.4°F in stainless steel using natural yeast. Malolactic fermentation is carried out.

Their research pointed towards traditional method sparkling wine made from the three classic varieties: Chardonnay, Pinot Noir and Pinot Meunier. At the time, sparkling wine production in England was largely unexplored and unproven, so the dream to create world class sparkling wine in Sussex was a certainly a risk.

Nestled at the base of the beautiful South Downs with their chalky soils, the perfect site was found – the ridge with an unforgettable view. It was here the journey began. Whilst the vines were gently nurtured towards their first harvest, we were busy creating one of England’s only underground cellars and building a state-of-the-art winery. Ridgeview’s first grapes were harvested and pressed; the wines were bottled, then hidden away in the cellar to age.

Over 20 years later, production has increased to more than a quarter of a million bottles and Ridgeview is sold across the world. Their winery continue to invest in the most modern, specialist machinery and proudly crafts every element of their production methods on site- from hand picking all of their grapes, gently pressing them to extract maximum flavor, bottling, riddling, disgorging and labelling. Learn more about Ridgeview Winery here.

Founder, Mike Roberts MBE, was originally at the winemaking helm ably assisted by his son Simon, to whom he passed his considerable knowledge and experience. Simon Roberts is now Ridgeview’s Head Winemaker, supported by a highly experienced and talented winery team.

A natural winemaker with a skilled palate, Simon likes minimal intervention as a Winemaker and would rather let the grapes speak for themselves. Simon trained at Plumpton Wine College and gained experience in Australia. Now responsible for the day-to-day Winemaking at Ridgeview, Simon has the support of a fantastic team. Lifetime tractor driver, UC Davis grad, 5th generation Lodi grape grower, brother, husband, father, grandfather, jet-setter, un-traditionalist. Raised in Lodi, Mike worked harvests from a young age. After college, he wanted to show the wine world what Lodi was capable of and started planting unexpected varietals. In 1984, he opened a small tasting room at his parents’ farmstand. Built on a passion for winemaking and rooted in respect for the land, Cline Cellars is a family-owned and operated winery in Sonoma, California. In 1982, Fred Cline started making his first vintages from original plantings of Mourvedre, Zinfandel and Carignan, some of which dated back to the 1880’s. As one of the original Rhône Rangers, he began planting varietals that included vineyards dedicated to Syrah, Viognier and Marsanne and Roussanne.  Fred and his wife Nancy have continued to plant vineyards across Sonoma County.

Charlie was born to be a winemaker. There was always wine in his Greek/Italian household in northern California, and his great-grandfather made wine in Guerneville in the 1930s. Charlie graduated from UC Davis in 1979 with a degree in Agricultural Science and Management/Plant Science, and honed his craft at Hacienda Wine Cellars, D’Agostini Winery, and Glen Ellen Winery. Since joining Cline Cellars in 2002, he has created legendary Zinfandels, distinctive Rhône-style wines, and Sonoma Coast Pinot Noir, Merlot and Chardonnay. Charlie loves making wines that express the unique qualities of California fruit, and their specific sense of place. His mission is the creation of wines that surprise and delight the senses. Daughter of wine industry pioneer Jerry Lohr, Cynthia Lohr spent much of her youth in the vineyards and at the wineries.  As an adult, she chose her own path working with a who’s who of leading internet and technology companies.  In 2002, Cynthia joined the family business. Today, she’s co-owner and the winery’s Chief Brand Officer.

Winemaker Kirsten Barnshisel, brings 20 years of viticulture and enology experience spanning three continents to her role as winemaker for J. Lohr’s white wines.  Kristen followed her family’s deep winemaking roots and is known for her gifted palate and technical skills. She presides over J. Lohr’s winery in Monterey County.
