Easy Shrimp Ceviche Recipe

INGREDIENTS:

  • 1 lb. cooked shrimp, peeled and deveined
  • ¼ cup fresh lemon juice, about two lemons
  • ¼ cup fresh lime juice, about 3 limes
  • ½ cup fresh squeezed, orange juice
  • 4 whole plum tomatoes, seeds removed and diced
  • 2 whole jalapeño peppers, seeds and vein removed, minced
  • 1 cup diced jicama or diced peeled apple
  • ½ cup chopped fresh cilantro
  • ¼ cup finely chopped red onion
  • 1 avocado pitted and diced
  • kosher salt and fresh ground pepper

DIRECTIONS:

  1. Chop the shrimp into ½ inch pieces and transfer to a bowl. Set aside.
  2. In a small bowl, whisk together the lemon, lime and orange juice to combine. Pour ½ cup of the citrus juice over the shrimp and toss to combine. Allow the shrimp to marinade in the juice for 15 minutes.
  3. Add the tomato, jalapeño, jicama (or apple), cilantro and red onion to the shrimp. Toss the ingredients to combine and allow to marinade for an additional 10 minutes. Stir in the avocado and remaining juices.
  4. Season the ceviche with salt and pepper, to taste. Serve immediately with tortilla chips, if desired.
  5. Shrimp Ceviche is best enjoyed the same day it’s made.

Caramelized Onion & Gruyère Burger

INGREDIENTS:

  • 1 pound lean ground beef
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon coarse ground pepper
  • 1 teaspoon dried minced onion
  • ½ teaspoon seasoned salt
  • 34 oz Gruyère(thinly sliced)
  • ¾ cup caramelized onions (prep before starting the burgers)
  • 34 brioche buns
  • ¼ cup olive oil mayonnaise
  • 1 teaspoon Worcestershire sauce

DIRECTIONS:

  1. Heat your grill. Preheat your grill to medium-high heat – about 400°F.
  2. Make the burger patties. Mix ground beef, Worcestershire, pepper, dried onion and salt in a small mixing bowl. Form into 3-4 burger patties.
  3. Cook the burgers. Place the burger patties on the preheated grill and cook for 3-5 minutes per side, depending on the desired doneness. The internal temperature should be 160° on an instant-read thermometer. 
  4. Make the sauce. While the burgers are cooking, mix the mayonnaise with the Worcestershire sauce. Refrigerate until ready to use.
  5. Finish the burgers. Turn grill to low-setting and top each burger with a slice of cheese. Place brioche bun halves sliced side down on the grill, away from the heat. Close the grill and let buns toast and cheese melt for 1-2 minutes.
  6. Assemble the burgers. Remove everything from the grill. To assemble the burgers, spread the bottom half of each roll with the mayo mixture. Top with a burger patty and then add the caramelized onions. Top with remaining roll half and serve immediately.

The cap is punched down three times per day at the height of fermentation to gently increase extraction of color and phenolic compounds. At dryness, the juice is racked clean for aging 12 months on a combination of American and French oak.” – Rocklin Ranch
 

HAMES VALLEY, MONTEREY:
The grapes of this Cabernet Sauvignon are grown at Rocklin Ranch’s estate vineyard located in Hames Valley, California – the southernmost tip of Monterey County, just north of the San Luis Obispo county line. The geographic location of the Hames Valley AVA allows for warmer climates when compared to other Monterey vineyards to the north. The vineyard sits at the foot of the Santa Lucia Range, and while it does experience cooling effects from the Pacific Ocean, the vines remain sheltered from the afternoon winds that come down the Salinas Valley corridor. During the day, the Hames Valley reaches highs similar to the Paso Robles growing region, but when the sun goes down, temperatures drop dramatically (up to a 50°F variation). The long, warm days make this region an ideal area for tannin-rich reds, while the temperature differential preserves the balance between ripe fruit and acidity.

Grilled Asian Garlic Steak Skewers

INGREDIENTS:

  • 1 1/2 pounds top sirloin steak
  • 1 red onion
  • 2/3 cup soy sauce
  • 6 garlic cloves minced
  • 1/4 cup sesame oil
  • ½ cup vegetable oil
  • ½ cup sugar
  • 1 Tablespoon grated ginger
  • 2 tbsp sesame seeds
  • sliced green onions for garnish
  • skewers

DIRECTIONS:

  1. Cut steak into one inch cubes. Cut the red onion into large chunks and set aside.
  2. In a large bowl whisk together soy sauce, garlic, sesame oil, vegetable oil, sugar, ginger and sesame seeds. Add the steak and toss to coat in marinade. Marinate for 3 hours or overnight.
  3. Preheat the grill to medium-high heat. Thread the meat and the red onion onto the skewers. Grill for 8-10 minutes until the meat is done to desired liking.

Peach Chicken Ricotta Pizza

Grilled Peach, Chicken and Ricotta Pizza

INGREDIENTS:

  • two 6-ounce boneless, skinless chicken breasts
  • 2 peaches, halved
  • 1 red onion, peeled
  • extra-virgin olive oil, as needed
  • kosher salt and freshly ground black pepper, to taste
  • one 8-ounce ball of store-bought pizza dough
  • 1 cup ricotta cheese
  • ½ cup Parmesan cheese
  • fresh basil leaves, for serving

DIRECTIONS:

  1. Brush the chicken breasts, peaches and onion with olive oil; season with salt and pepper. 
  2. Grill the peaches and onion until they are charred and tender, 7 to 9 minutes. Grill the chicken until it is cooked through, 9 to 11 minutes.
  3. Preheat the oven to 475°F. Thinly slice the peaches, onion and chicken; set aside.
  4. Using a rolling pin, roll out the pizza dough until it is ½-inch thick. Place the dough on a baking sheet and top with the ricotta, peaches, onion, chicken and Parmesan.
  5. Bake until the crust is golden and crisp, 15 to 17 minutes. Cool 10 minutes, then garnish with fresh basil leaves.

August Wine Club Pairing Recipe

Roast Beef & Smoked Gouda Grilled Cheese

Roast Beef Smoked Gouda Sandwich

INGREDIENTS:

  • 1 large red onion, sliced
  • 2 tablespoons butter, divided
  • 1 tablespoon fresh sage, coarsely chopped
  • 2 slices of bread
  • 1/4 pound sliced roast beef
  • 3-4 ounces smoked gouda, sliced

DIRECTIONS:

  1. Melt 1 tablespoon of the butter in a large skillet over medium heat.
  2. Once the butter is melted, add the onions and sage.
  3. Toss to coat all the onions in the butter, reduce the heat to medium-low and let the onions sauté slowly for 30 minutes, only stirring very occasionally. After 30 minutes they should be nice and caramelized.
  4. Use the remaining tablespoon of butter to spread on one side of each slice of bread.
  5. With the buttered side facing down, layer half the cheese slices on top of the bread.
  6. Next lay the roast beef on top of the cheese.
  7. Spoon some of the onions (you may have extra) on top of the roast beef.
  8. Top the onions with the remaining cheese and then the other slice of bread with the buttered side facing up.
  9. Transfer the sandwich to a skillet over medium heat.
  10. Press the sandwich down using a large spatula and hold pressure on it so that the cheese melts. After about 2 minutes, flip the sandwich over and repeat. The first side should be a nice golden brown. Alternatively, you could use a panini press for this if you have one.
  11. Once the other side is golden brown and the cheese is melted, remove from the skillet, cut in half and serve up with your bowl of soup!

FOOD PAIRING: This wine pairs beautifully with hors d’oeuvres, crab cakes, smoked salmon, fresh greens, salads, or grilled chicken and vegetables.

VINEYARDS:
The Brut Prestige is a blend comprised of the best selected grapes from different grower locations across the Napa appellation. Each harvest, the grapes are hand-picked in the mornings to ensure they arrive to the winery in perfect condition.

WINEMAKING:
Fermentation is completed in stainless steel tanks at cool temperatures, this preserves the fruit’s intensity and freshness. A few select logs are aged in French oak barrels to add depth, complexity and spiciness. From there, the finished blend goes through a second fermentation with about 18 month’s yeast aging, adding complexity, and layers of yeast dough and creaminess. Next, the wine is disgorged in brut style and part of the dosage is added back after being aged for another 3 months to balance the acidity.

Mumm Napa’s signature Rosé is coral-pink in color. It features fresh aromas of black cherries, red berries, and citrus. On the palate, this Brut Rosé has mouth-filling flavors of rich, robust red fruit flavors, rounding out to a very elegant finish. The Pinot Noir is responsible for the soft texture and forward fruitiness, while the Chardonnay plays a roll in the wine’s structure and elegance.

FOOD PAIRING: Pairs beautifully with creamy cheeses, grilled salmon, roast duck, or spicy Italian or Asian dishes.

VINEYARDS:
Each harvest, the Brut Rosé blend is selected from the best grapes from up to 50 grower locations throughout the Napa appellation. Similar to Mumm Brut Prestige, the grapes are hand-harvested in the early mornings to ensure they arrive at the winery in perfect condition.

WINEMAKING:
Each individual vineyard lot is fermented separately at cool temperatures in small stainless steel tanks, this helps to preserve the individual flavors, freshness and intensity of each fruit. A few select lots are aged in French Oak barrels to create further depth and complexity to the wine. To create the coral-pink color of the wine, a small amount of red Pinot Noir is added to the blend before being bottled. From there, the wine is yeast aged for an average of 18 months to add further complexity and creaminess to the wine. Next, the wine is disgorged and a dosage is added back to balance out the wine’s acidity. The dosage includes a Pinot Noir fermented in traditional Burgundian fashion, creating an extra layer of depth, color and robust fruitiness to the wine.

Established in California in the late 1970’s, Mumm Napa follows traditions from their French heritage. Their roots can be traced back to a leading International Champagne in France, GH Mumm. Marietta Cellars is a family owned winery in Sonoma County. Chris Bilbro (pictured left) with winemaking roots dating back three generations, founded Marietta Cellars in 1978. Scot Bilbro (pictured right) is now the second generation Winemaker and Owner of Marietta Cellars. Applying his Viticulture and Enology training from UC Davis, Scot keeps yeast happy, manages oxygen’s interaction with the wine, and dials in the temperature range of a fermentation…but the real magic happens in the quiet moments. Scot Bilbro grew up admiring his father’s ability to create magic – whether it was with wine, food, or a simple game to entertain Scot and his brothers. Scot learned the ins and the outs of the family’s wine business, and after graduating from UC Davis, decided to return to the family winery to create magic of his own. Scot was uncertain and tentative, but his father gave him the confidence to create beautiful wines of his own. This aged goat milk cheese is made exclusively for Cypress Grove® in Holland. Aged for at least six-months, Midnight Moon® is an ivory-colored goat cheese with forward nutty and brown-buttery flavors, finish with long caramel notes. Similar to classic goudas, Midnight Moon® forms protein crystals as it ages, and lends to a slight crunch to the otherwise dense and smooth cheese. This goat cheese is known to convert even the pickiest of goat cheese critics!

ABOUT CYPRESS GROVE®, ARCATA, CALIFORNIA:
In the 1970’s, when pre-packed TV dinners and processed, rubber cheese were popular, a self-proclaimed “serious hippie” named Mary Keehn was on the hunt for something different. A mother a four, she wanted to find healthier milk for her children. Mary noticed her neighbor owned goats for brush control and asked if she could purchase two, at which the neighbor replied, “if you can catch ’em, you can have ’em”. Each day, Mary went out with grain until eventually she lured in her first two goats: Esmeralda and Hazel. These goats turned into four, and many more from there.
